1 lb bacon, cooked, drained, and diced
1 tomato, diced
1 cup broccoli floret, finely chopped
2 cups potato hash brown
2 cups shredded cheddar cheese
1 cup pancake mix
4 eggs
2 cups milk, of choice
½ teaspoon pepper
¼ teaspoon salt
scallion, thinly sliced, for serving

Steps:

  • Preheat oven to 400°F (200°C).
  • Place the bacon, tomato, and broccoli in greased casserole dish.
  • Sprinkle hash browns and cheese on top.
  • In a large bowl, whisk together pancake mix, eggs, milk, salt, and pepper.
  • Pour pancake mixture over ingredients in the casserole dish.
  • Bake for 45 minutes.
  • Let cool for 5 minutes before serving.
  • Top with scallions, and serve.

1 ½ tablespoons all purpose flour
32 oz half & half
¾ teaspoon kosher salt

½ cup shredded mozzarella cheese
1 ¾ cups shredded cheddar cheese, divided
2 cups Kroger® Brand Frozen Broccoli Florets, frozen, thawed, divided

1 box Kroger® Brand 100% Whole Grain Salad Rotini Pasta, cooked according to package instructions

Steps:

  • Preheat the broiler to high.
  • Melt the butter in a medium pot over medium-high heat. Whisk in the flour until fully incorporated, then toast for about 30 seconds, or until slightly darkened in color.
  • Add the half-and-half and whisk until the flour mixture has completely dissolved. Reduce the heat to medium-low and simmer for 3-4 minutes, or until the liquid has thickened lightly.
  • Stir in the kosher salt, onion powder, black pepper, nutmeg, and celery salt. Add the shredded mozzarella and 1 cup of the shredded cheddar, and whisk until completely melted and smooth, 2-3 minutes.
  • Remove the pot from the heat and fold in 1½ cups Kroger® Brand Frozen Broccoli Florets, 1¼ cups Kroger® Brand Grilled Chicken Breast Dices, and the cooked Kroger® Brand 100% Whole Grain Salad Rotini Pasta.

1 small onion, diced

Steps:

  • Preheat oven to 350˚F (180˚C).
  • In a bowl, add broccoli, potatoes, 1 cup (100 g) cheddar, ½ teaspoon salt salt, and ¼ teaspoon pepper. Stir to combine.

Steps:

2 ½ cups shredded cheddar cheese, divided
1 cup unsalted butter, 2 sticks, room temperature
2 cups all-purpose flour, plus more for dusting
1 tablespoon paprika
1 tablespoon garlic powder
2 ½ teaspoons salt, divided
5 tablespoons ice water
4 strips bacon
2 cups small broccoli floret
6 large eggs
1 cup milk
½ teaspoon pepper
pie weight, coffee beans, or dried beans

Steps:

  • Preheat the oven to 350˚F (180˚C).
  • Add 2 cups (200 g) of cheddar cheese and the butter to a large bowl. Mix to combine with an electric hand mixer or stand mixer.
  • Add the flour, paprika, garlic powder, and 2 teaspoons salt and mix well. Add 3 tablespoons of ice water and mix. Add the remaining ice water 1 tablespoon at a time. The dough should hold together when pinched, but crumble apart if you break it up in your hand. If it seems too dry, add a bit more ice water.
  • Transfer the dough to a clean surface and knead with your hands until it comes together. Shape the dough into a disc, then wrap in plastic wrap and chill in the refrigerator for 30 minutes.
  • Lightly flour a clean surface and roll out the dough into a circle about ⅛ inch (8 mm) thick. Carefully transfer the crust to a 9½-inch (24-cm) glass pie dish.
  • Trim the edges (save the trimmings to make crackers!). Poke holes in the bottom of the crust with a fork, then use the tines to crimp the edges. Line the dough with parchment paper and fill with pie weights.
  • Bake for 30 minutes, until the edges are crisp.
  • While the crust is baking, prepare the fillings. In a large skillet over medium-high heat, cook the bacon until crisp, 5-7 minutes. Using tongs, remove the bacon from the skillet and let drain on paper towels until cool enough to handle.
  • Add the broccoli to the skillet and cook until lightly browned, about 5 minutes. Remove the pan from the heat.
  • Chop the bacon.
  • Remove the pie weights from the crust, then add the broccoli and chopped bacon to the center. Sprinkle with the remaining shredded cheddar cheese.
  • In a medium bowl, lightly beat the eggs. Add the milk, remaining ½ teaspoon salt, and the pepper. Whisk to combine.
  • Pour the egg mixture over the fillings in the crust.
  • Bake for 35-40 minutes, or until the eggs are set and the top is lightly browned. Cover the edges with tinfoil if they are starting to burn.
  • Let the quiche cool for 15 minutes before slicing and serving.

My mom used to make this easy recipe every Thanksgiving when I was little. We kids could never get enough! It was our very favorite Thanksgiving vegetable. If you have children, or have some coming to visit you as guests this Thanksgiving, I guarantee that they will eat (and enjoy) this veggie dish! Even though I rarely cook with canned condensed soups, I still make this yummy broccoli casserole during the holiday season. It's fabulous with a Christmas ham and potatoes au gratin too. Mmmmmmm!

1 (10.75 ounce) can condensed cream of mushroom soup
1 cup mayonnaise
1 egg, beaten
¼ cup onions, chopped

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter a 9x13 inch baking dish.

  • Place frozen broccoli into a very large mixing bowl. (I like to use my large stainless steel bowl to mix this recipe thoroughly.) Break up the frozen broccoli. Season with salt, pepper and paprika.
  • Bake for 45 minutes to 1 hour.

4 cups fresh broccoli florets
24 large eggs
5 tablespoons butter, divided
1-3/4 cups sliced fresh mushrooms

2 green onions, chopped

  • In a large saucepan, place steamer basket over 1 in. of water. Place broccoli in basket. Bring water to a boil. In a large skillet, heat 3 tablespoons butter over medium heat. Add mushrooms, ham and green onions; cook and stir 4-6 minutes or until vegetables are tender.
