2 tablespoons all-purpose flour
2 cans (10-3/4 ounces each) condensed cream of chicken soup, undiluted
1 cup sour cream
1/2 cup grated carrot
2 tablespoons grated onion
1/2 teaspoon pepper
3 packages (10 ounces each) frozen broccoli cuts, thawed
1-1/2 cups crushed seasoned stuffing
1/4 cup butter, melted

Steps:

  • In a large bowl, combine the flour, soup and sour cream. Stir in the carrot, onion and pepper. Fold in the broccoli. , Transfer to a greased 2-1/2-qt. baking dish. Combine stuffing and butter; sprinkle over top. Bake, uncovered, at 350° for 50-60 minutes or until bubbly and heated through.

4 medium onions, quartered
1 lb fresh broccoli, broken into big pieces (florets and stems)
4 tablespoons butter
1 tablespoon flour
1 teaspoon salt
1 teaspoon pepper
3 ounces cream cheese
1 cup grated cheese (cheddar or colby or mozza-I like to mix cheddar and colby)
1 cup milk
1 cup breadcrumbs

Steps:

  • Cook onion and broccoli in boiling water for 8 minutes. Drain and put in a large casserole dish.
  • Melt 2 tbsp butter over low heat. Add flour, salt & pepper. Add milk, stirring until thick and bubbly. Add the cream cheese, stirring until melted. Pour sauce over veggies. Sprinkle grated cheese over top.
  • Cover and bake at 350 degrees for 30 minutes. While cooking, melt 2 tbsp butter and mix with the breadcrumbs.
  • After 30 minutes, add the breadcrumbs to the casserole and bake uncovered for another 30 minutes.

1 lb Velveeta cheese (cubed)
2 (10 1/2 ounce) packages frozen broccoli, chopped
2 cans cream of mushroom soup
2 cans milk
2 1/2 cups cooked rice
1 medium onion (chopped)
1/4 cup celery (chopped)

Steps:

  • Saute onions, celery, and broccoli in butter.
  • Mix with soups diluted with milk, cooked rice, and 2/3 of grated cheese.
  • Turn into buttered 9 x 13 inch or 2 quart casserole dish and top with remaining cheese.
  • Bake in preheated oven at 350 degrees for 1 hour.

1 teaspoon cornstarch
1 teaspoon chicken bouillon powder
1 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon pepper
1 tablespoon cooking oil
7 cups broccoli, chopped (or florets)
1 garlic clove, minced (or 1/4 t. garlic powder)

Steps:

  • Stir together first 6 ingredients and set aside.
  • Heat cooking oil in wok or frying pan on medium-high. Add broccoli and garlic and stir-fry 3-4 minutes or until broccoli is tender-crisp.
  • Stir cornstarch mixture and add to broccoli mixture until boiling and thickened.

I was hunting for recipes on Recipezaar and couldn't find something that I had all the ingredients for, so I had to create something using what I had. This isn't as quick and easy as some similar recipes, but used fresh veggies and real rice . It also tasted fantastic, and my family loved it! The preparation stretched a small package of boneless skinless chicken breasts into a meal that could feed 8 people!

3 boneless skinless chicken breasts
2 cups rice
4 crowns fresh broccoli, cut into florets
1 (10 3/4 ounce) can cream of chicken soup
8 ounces cheese spread (Like Cheese Whiz)
1 (10 3/4 ounce) can chicken broth
1/4 cup finely chopped green pepper
8 ounces finely shredded cheddar cheese
garlic salt

Steps:

  • Brown chicken breasts in a small amount of oil until cooked through.
  • Cut cooked chicken into bite-sized pieces and season if desired (I used Emeril's Southwest Essence).
  • Meanwhile, cook the 2 cups of rice in 4 cups of water for 15 minutes (or as directed on package), and steam broccoli florets in a colander over boiling water for about 5 minutes.
  • Broccoli should be crunchy but edible.
  • Preheat oven to 375 degrees.
  • In a very large bowl, combine cooked rice, chicken pieces, steamed broccoli, green pepper, soup, cheese whiz, chicken broth, shredded cheese, and a little garlic salt if desired.
  • Mix thoroughly and turn into a 9x13 pan coated with cooking spray.
  • Bake at 375 degrees for 45 minutes or until top is slightly browned and casserole is bubbly.

My mom used to make this easy recipe every Thanksgiving when I was little. We kids could never get enough! It was our very favorite Thanksgiving vegetable. If you have children, or have some coming to visit you as guests this Thanksgiving, I guarantee that they will eat (and enjoy) this veggie dish! Even though I rarely cook with canned condensed soups, I still make this yummy broccoli casserole during the holiday season. It's fabulous with a Christmas ham and potatoes au gratin too. Mmmmmmm!

1 (10.75 ounce) can condensed cream of mushroom soup
1 cup mayonnaise
1 egg, beaten
¼ cup onions, chopped
3 (10 ounce) packages frozen chopped broccoli
8 ounces shredded sharp Cheddar cheese
salt and pepper to taste
1 dash paprika

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter a 9x13 inch baking dish.
  • In a medium mixing bowl, whisk together condensed soup, mayonnaise, egg and onions.
  • Place frozen broccoli into a very large mixing bowl. (I like to use my large stainless steel bowl to mix this recipe thoroughly.) Break up the frozen broccoli. Using a rubber spatula, scrape soup-mayonnaise mixture on top of broccoli, and mix well. Sprinkle on cheese, and mix well. Spread mixture into prepared baking dish, and smooth top of casserole. Season with salt, pepper and paprika.
  • Bake for 45 minutes to 1 hour.

1 onion, chopped
2 (10 ounce) packages chopped frozen broccoli, thawed
1 (10.75 ounce) can condensed cream of mushroom soup
1 cup shredded sharp Cheddar cheese

½ teaspoon garlic salt
¼ teaspoon ground black pepper
½ teaspoon seasoned salt
1 ½ teaspoons lemon juice
12 buttery round crackers, crushed fine
2 tablespoons butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt 3 tablespoons butter in a medium skillet over medium-high heat. Saute onion until golden.
  • In a 2 quart casserole dish, mix together onion, broccoli, soup, cheese, mayonnaise, eggs, garlic salt, pepper, seasoned salt, and lemon juice. Sprinkle crushed crackers over top and dot with remaining 2 tablespoons butter.

1 pkg 10 oz. frozen broccoli chopped, partly thawed
1 can(s) 8 1/2 oz. cream style corn
1 Tbsp grated onion
1/4 tsp salt
1 dash(es) pepper
3 Tbsp butter or margarine
1 c herb seasoned stuffing mix

Steps:

  • 1. In mixing bowl, combine egg, broccoli, cream style corn, onion, salt & pepper.
  • 2. In small sauce pan, melt butter then add herb seasoned stuffing mix. Add 3/4 cup of it to broccoli mixture. Put into ungreased 1 qt. casserole dish.
  • 3. Sprinkle with remaining 1/4 cup stuffing mix. Bake uncovered at 350 for 35 to 40 mins.

3 cups sliced fresh mushrooms
1 tablespoon butter
6 cups cubed cooked chicken
3 cans (8 ounces each) sliced water chestnuts, drained
SAUCE:
6 tablespoons butter, cubed
1/2 cup plus 1 tablespoon all-purpose flour
1-1/2 teaspoons seasoned salt
1/8 teaspoon pepper
3 cups chicken broth
1 cup heavy whipping cream
6 egg yolks, lightly beaten
3/4 teaspoon lemon juice
1/8 teaspoon ground nutmeg
3/4 cup slivered almonds, toasted

Steps:

  • Place broccoli in a steamer basket; place in a large saucepan over 1 in. of water. Bring to a boil; cover and steam for 5-7 minutes or until crisp-tender. Meanwhile, in a large skillet, saute mushrooms in butter until tender. , In a greased 13-in. x 9-in. baking dish, layer 4 cups chicken, two-thirds of the mushrooms, two cans of water chestnuts and 4 cups broccoli. In a greased 8-in. square baking dish, layer the remaining chicken, mushrooms, water chestnuts and broccoli., In a large saucepan over medium heat, melt butter. Stir in the flour, seasoned salt and pepper until smooth. Gradually add broth and cream. Bring to a boil; cook and stir for 2 minutes or until thickened and bubbly. Remove from the heat. , Stir a small amount of hot mixture into egg yolks. Return all to the pan; cook and stir until mixture reaches 160° and coats the back of a metal spoon. Remove from the heat; stir in lemon juice and nutmeg. , Pour 3 cups sauce over the large casserole and remaining sauce over the small casserole; sprinkle with almonds. Bake, uncovered, at 375° for 20-25 minutes or until bubbly and heated through.
