Ms. Christensen's recipe, which uses the florets as well as the stalks, asks you to blanch the broccoli (cooking it for a few minutes in generously salted boiling water, then shocking it with salted iced water). It takes a little extra time, but the crisp-tender, bright green broccoli, seasoned inside and out, is your just reward. Try not to eat the entire bowl yourself.

1 bunch broccoli (about 1 1/4 pounds), ends trimmed

  • Bring a large pot of generously salted (use about 1/2 cup kosher salt) water to a boil. Set up an ice bath next to the stove and generously salt (about 1/4 cup kosher salt) that water as well.
  • Cut the broccoli stems from the heads; slice the florets into small pieces, each about 1-inch long. Peel the stems with a peeler and cut each stem in half lengthwise, then slice into 1/2-inch-thick half-moons. Add broccoli to the boiling water and blanch for 30 seconds; transfer to the ice water to shock the broccoli and stop the cooking. Drain broccoli in a colander, then set aside (still in the colander) to drain completely.
  • In a large dry skillet, toast pecans over medium heat until they smell nutty, about 1 minute; remove pecans and set aside. Return skillet to medium heat and add bacon and oil. Cook, stirring occasionally, until bacon has rendered its fat and is crispy, about 10 minutes. Turn heat to low and whisk in mustard and vinegar. Add green onions and pecans and season generously with black pepper.

1/3 lb cooked bacon (Applewood smoked by Neuske's is my favorite, cook slowly to extra crisp)
2 cups fresh broccoli, raw
1/2 cup raisins
1/2 cup roasted salted sunflower seeds
1 cup mayonnaise (Best Foods or Hellman's)
1/2 cup sugar
2 tablespoons white wine vinegar
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • While slowly cooking bacon to extra crisp, soak raisins in HOT tap water. Drain bacon on paper towels. Drain raisins. Pour extra fat out of frying pan.
  • In same pan (keeping the fond (browned bits), toast sunflower seeds lightly for one minute.
  • Make dressing by combining mayo, sugar, vinegar, salt, and pepper. Add crumbled bacon, sunflower seeds, and raisins.

3 tablespoons olive oil
Kosher salt and freshly ground black pepper
4 pieces thick-cut bacon, cut into small 1-inch strips
1/2 small red onion, diced (about 1/3 cup)
1/4 cup apple cider vinegar
2 tablespoons sugar
1/2 cup toasted walnuts, coarsely chopped

Steps:

  • Preheat the oven to 400 degrees F.
  • Toss the broccoli together with the oil and sprinkle generously with salt and pepper. Spread the broccoli in an evenly spaced single layer onto a baking sheet. Roast until the florets just begin to char and the stems have softened slightly, 15 to 20 minutes.
  • In the meantime, add the bacon to a small skillet over medium heat. Cook, stirring occasionally until the fat has rendered and the bacon is almost crispy, about 5 minutes. A filling and delicious main dish salad. I have used turkey bacon and low-fat dressing to lighten it up. Chill time is 1-2 hours.

2 (19 ounce) bags frozen cheese tortellini
4 cups broccoli florets
2 cups cherry tomatoes, cut in half (or whole grape tomatoes)
2 tablespoons chopped fresh chives or 2 tablespoons green onions
1 cup coleslaw dressing
1 lb bacon, cooked and crumbled
1/4 cup sunflower seeds
salt and pepper

Steps:

  • Prepare the tortellini according to package directions; rinse with cold water; drain.
  • In a large bowl, mix the tortellini, broccoli, tomatoes, chives, and dressing.
  • Cover and refrigerate 1-2 hours.
  • Right before ready to serve, add bacon and sunflower seeds; gently stir to combine.
  • Season to taste with salt and pepper.
  • Serve cold.

Broccoli, Bacon and Onion Salad image

5 cups broccoli florets (from about 1 large bunch)
8 slices bacon
2/3 cup olive oil
3 tablespoons red wine vinegar
1 cup chopped red onion
1/2 cup toasted salted sunflower seeds

Steps:

  • Cook broccoli in medium pot of boiling salted water until crisp-tender, about 4 minutes. Drain well. Cook bacon in heavy large skillet over medium heat until brown and crisp. Transfer bacon to paper towels and drain. Crumble bacon. Whisk oil and vinegar in medium bowl to blend. Mix in onion. Season to taste with salt and pepper. (Broccoli, bacon and dressing can be prepared 2 hours ahead. Let stand separately at room temperature.)
  • Combine broccoli and bacon in large bowl. Toss with enough dressing to coat. Garnish with sunflower seeds. Pass remaining dressing separately.
