2 tablespoons extra-virgin olive oil, plus more for drizzling
2 large shallots, halved and thinly sliced (1/4 cup)
3 large cloves garlic, minced (2 tablespoons)
2 pounds broccoli, stems peeled and chopped, florets cut into 1-inch pieces (about 5 cups florets)
3 small Yukon Gold potatoes, peeled and chopped (1 1/2 cups) Kosher salt and freshly ground pepper
2 packed cups grated white cheddar (from an 8-ounce block)
1 tablespoon fresh lemon juice, plus grated zest for serving
4 slices (each 1/2 inch thick) rustic Italian bread

Steps:

  • Preheat oven to 400 degrees. In a medium saucepan, heat oil over medium-high. Add shallots, half of garlic, broccoli stems, potatoes, and a pinch of salt. Cook, stirring, 3 to 4 minutes. Add 5 cups water; season with salt. Bring to a boil, then reduce heat and simmer until vegetables are tender, about 10 minutes. Add 3 cups broccoli florets; cook until tender, 8 to 10 minutes more. Let cool slightly. Transfer to a blender with 1 cup cheese; puree until smooth. Season with salt, pepper, and lemon juice.
  • Stir together remaining cheese and garlic. Place bread on one side of a rimmed baking sheet, and remaining broccoli florets on other. Drizzle both with oil; season with salt and pepper. Top bread with cheese mixture. Roast 15 minutes, tossing florets halfway through. Serve soup topped with toasts, florets, and zest.

I found many recipes for broccoli Cheddar soup. I changed many of the ingredients in those recipes. This is the recipe I came up with. It's the best one yet. You don't need all the extra ingredients to make it. Just basic ingredients. and it's delicious. I think it tastes just like Panera®.

¼ small onion, chopped
2 tablespoons all-purpose flour
1 cup half-and-half
1 ½ cups chicken broth
salt and ground black pepper to taste
2 cups chopped broccoli
1 carrot, chopped
1 celery stalk, chopped
1 ¼ cups shredded mild Cheddar cheese

Steps:

  • Melt butter in a stock pot over medium-high heat; add onion and saute until tender, 3 to 4 minutes. Whisk in flour and continue to stir until mixture turns golden brown, about 5 minutes. Slowly add half-and-half to onion mixture, stirring until mixture is smooth. Add chicken broth; season with salt and ground black pepper.
  • Reduce heat to medium-low and simmer mixture until thickened, about 10 minutes. Add broccoli, carrot, and celery. Simmer until vegetables are tender yet crisp, about 20 minutes.
  • Reduce heat to low. Add Cheddar cheese to soup and cook, stirring occasionally, until cheese melts, about 5 minutes.

A staple of any fast-casual restaurant, broccoli-cheddar soup has somewhat of a cult following on the internet. Thicker than cream of broccoli, this roux-thickened soup can be puréed completely smooth or left chunky and rustic. Either way, be sure to use the sharpest Cheddar available (white or orange work here). It'll provide richness in addition to a necessary acidity.

6 tablespoons unsalted butter
1 large yellow onion, finely chopped
2 cloves garlic, finely chopped
Kosher salt and freshly ground pepper
2 pounds broccoli, florets with stems peeled and trimmed to 3 inches
1/4 cup all-purpose flour
3 cups low-sodium chicken or vegetable broth
2 cups half and half
8 ounces very sharp Cheddar, grated, plus more for the top
1/4 teaspoon freshly grated nutmeg

Steps:

  • Melt 3 tablespoons butter in a large heavy-bottomed pot over medium heat. Add onion and garlic, and season with salt and pepper. Cook, stirring occasionally, until onion is softened and translucent, 5 to 8 minutes.
  • Add broccoli, and season with salt and pepper. Cook, stirring occasionally, until broccoli is bright green and slightly tender, 8 to 10 minutes. Using a large cooking spoon, transfer broccoli mixture to a medium bowl and set aside.
  • Heat remaining 3 tablespoons butter in the same pot over medium heat (don't worry about any remaining broccoli bits). Add flour and whisk constantly, cooking until the mixture has turned a pale golden brown, 2 to 3 minutes.
  • Gradually whisk in chicken broth until no lumps remain (it'll thicken considerably at first), followed by half-and-half. Bring to a simmer and stir in cheese, nutmeg and all but 1 cup of the reserved broccoli mixture.
  • Reduce heat to low and simmer until liquid has thickened and reduced by about 1/4 and the broccoli is completely tender, 25 to 30 minutes.
  • Using a hand blender, purée the soup to desired consistency. (Some like to leave bits of broccoli in there. It is up to you how smooth or chunky the soup is.) Alternatively, transfer to a blender and purée to desired consistency.
  • Season soup with salt and pepper, and divide among bowls. Top with remaining 1 cup broccoli, more Cheddar (if you like), and lots of freshly ground pepper.

1 tablespoon olive oil
1 tablespoon butter
1 tablespoon minced garlic (6 cloves)
2 1/2 lbs potatoes, peeled and quartered
2 carrots, peeled and coarsely chopped
5 cups chicken stock or 5 cups chicken broth
8 ounces broccoli
8 ounces cauliflower
3/4 cup milk
3/4 cup whipping cream
1 cup shredded cheddar cheese (4 oz.)
1 teaspoon kosher salt
1/4 teaspoon ground black pepper

Steps:

  • In a Dutch oven cook onions in hot oil and butter until soft and golden brown.
  • Add garlic and continue cooking.
  • Add potatoes, carrots, and chicken stock.
  • Bring to boiling; reduce heat.
  • Cover and simmer for 1 hour.
  • Meanwhile, separate broccoli into small flowerets (reserve) and tender stems, discarding tough stems.
  • Coarsely chop tender stems.
  • Core and separate cauliflower into small flowerets.
  • Add broccoli stems and cauliflower to potato mixture.
  • Cover; simmer 45 minutes.
  • Add broccoli flowerets and cook, covered, for 15 minutes more.
  • Add milk, cream, cheese, salt, and pepper to vegetable mixture.
  • Lightly puree with a potato masher until coarsely blended to desired texture.

  • Chop broccoli into coarse chunks. You can use stems; just be sure to peel the tough outer layer.

1 large white onion, diced
1 1/2 cups Bavarian style beer (recommended: Hefeweizen)
1 bunch broccoli (about 6 large stalks), broken into florets, plus stalks trimmed, peeled and into disks
Salt and freshly ground black pepper
Pinch ground nutmeg
2 quarts low-sodium chicken stock
1 1/2 cups heavy cream
2 cups shredded Cheddar
1/4 cup (4 tablespoons) whipped cream cheese
1/4 cup whipped cream cheese softened
2 hard-boiled eggs, peeled while warm and diced
3 strips bacon, fried, drained and crumbled (recommended: Nueske's Applewood Smoked Bacon)
8 slices wheat bread

Steps:

  • In a large stockpot, heat grapeseed oil over medium-high heat until it shimmers. Add onion and saute until it turns translucent. Add beer and let cook until most of the alcohol evaporates. Stir in broccoli florets and disks, and season with salt, pepper and nutmeg. Pour in chicken stock and bring to a boil. Reduce heat to medium low and cook until broccoli is very soft.
  • While the soup is cooking, make the topping for the croutons. Gently fold cream cheese, eggs, and bacon bits together, cover and refrigerate until needed. Stir heavy cream into the soup, remove from heat, and puree with an immersion blender.
  • Stir in shredded Cheddar and whipped cream cheese, cover and let sit for about 5 minutes to allow the cheese to melt. Use the immersion blender to thoroughly mix, and adjust salt and pepper, to taste, if necessary. Cover and keep warm.
  • Preheat oven to 400 degrees F. Toast what bread and cut into triangles. Sprinkle some cheddar cheese on each toast triangle and top with some of the egg/bacon mixture. Sprinkle some more Cheddar on top, place on a baking sheet and put in the oven for a few minutes to let the cheese melt. Serve soup in crocks with a crouton floating on the surface of the soup.

  • In a small bowl, cover the cashews with water and soak for 1 hour, then drain.
  • In a large pot, heat the olive oil over medium heat. Add the potatoes, carrots, onion, garlic, salt, and 2 cups (480 ml) of vegetable broth. Cover and simmer for 30 minutes.
  • Transfer the soup to a blender or use an immersion blender to blend until smooth. Return the soup to the pot and rinse out blender.

1 pound broccoli rabe
Kosher salt
3 tablespoons unsalted butter
3 cloves garlic, finely chopped
1 onion, chopped (about 1 cup)

12 ounces ale, such as Boddingtons
2 cups milk
2 tablespoons soy sauce
8 ounces shredded yellow Cheddar
1 cup sour cream, for garnish
Smoked paprika, for sprinkling

Steps:

  • Blanch the broccoli rabe in a large pot of boiling salted water until tender, about 4 minutes. Drain. When cooled, chop up the broccoli rabe and set aside.
  • Heat the butter in a large, heavy saucepan over medium-high heat until hot. Add the garlic, onions, 1 teaspoon salt and 3/4 teaspoon pepper, and cook, stirring occasionally, until golden, about 10 minutes. Stir in the flour, whisk in the beer and bring to a boil. Add the milk, 2 cups water and the soy and bring to a boil again. Boil the soup, stirring occasionally, until thickened and slightly reduced, about 6 minutes. Add in the chopped broccoli rabe. 8 cups vegetable stock
1 cup heavy cream

1 cup sherry wine
1/2 cup parsley

  • Warm butter and olive oil in a large pot. Add broccoli (chopped into small piece) and onions and saute for a few minutes.

  • Pour into a blender and puree. I like it a little chunky so I do a quick puree.
  • Return to pot and add the Worcestershire sauce, heavy cream and cheddar, nutmeg, salt and pepper. Simmer on low for 15-20 minutes.
  • Stir in sherry and parsley and remove from heat. Garnish with Sprig of parsley and any remaining crumbled aged cheddar!

  • Trim the broccoli and cut the stems into 1/2 inch slices. Add the stems to the onion and potato mixture. Fry for 5 minutes and season

This super easy Broccoli Cheddar Soup is chock full of colorful, chunky vegetables in a rich and cheesy broth for a totally meal-worthy soup.

1 yellow onion ($0.52)
1 lb. broccoli ($1.49)
2 carrots ($0.23)
4 Tbsp butter ($0.52)
4 Tbsp all-purpose flour ($0.04)
2 cups chicken broth ($0.24)
2 cups whole milk ($0.75)
1/2 tsp smoked paprika ($0.05)
1/4 tsp garlic powder ($0.02)
1/4 tsp freshly cracked black pepper ($0.02)
1/8 tsp cayenne pepper ($0.02)
6 oz. sharp cheddar, shredded ($1.27)

Steps:

  • Dice the onion. Chop the broccoli into very small pieces. Peel and slice the carrots.
  • Add the butter and onion to a large soup pot and sauté over medium until the onions are soft and translucent. Add the flour and continue to sauté for about 2 minutes more, or until the flour is coating the bottom of the pot and is a light golden brown color.
  • Add the chicken broth and whisk to dissolve all the flour off the bottom of the pot. Turn the heat up to medium-high and, while stirring often, allow the broth to come up to a simmer. When it reaches a simmer it will thicken to a gravy consistency.
  • Turn the heat back down to medium and whisk in the milk, smoked paprika, garlic powder, black pepper, and cayenne pepper. Allow the broth to come back up to a simmer.
  • Add the chopped broccoli and carrots, allow the broth to come back up to a simmer, and continue to simmer the vegetables, stirring often, for 15 minutes, or until the carrots are tender.
  • Finally, turn the heat down to medium-low and stir the shredded cheese into the soup, one handful at a time, until it is fully melted. Taste the soup and add salt if needed (this will depend on the salt content of your broth-I did not add any).

• 2pounds broccoli, florets roughly chopped into 1-inch pieces, stems trimmed, peeled, and cut into 1/4-inch-thick slices
• 1 medium onion, roughly chopped (about 1 cup)
• 2 medium garlic cloves, minced or pressed through garlic press (about 2 teaspoons)
• 1 1/2teaspoons dry mustard powder
• Pinch cayenne pepper
• Table salt
• 3-4cups water
• 1/4teaspoon baking soda
• 2cups low-sodium chicken broth (see note)
• 2ounces baby spinach (2 loosely packed cups)
• 3ounces sharp cheddar cheese, shredded (3/4 cup)
• 1 1/2ounces Parmesan cheese, grated fine (about 3/4 cup), plus extra for serving
• Ground black pepper

Steps:

  • • 1. Heat butter in large Dutch oven over medium-high heat. When foaming subsides, add broccoli, onion, garlic, dry mustard, cayenne, and 1 teaspoon salt. Cook, stirring frequently, until fragrant, about 6 minutes. Add 1 cup water and baking soda. Bring to simmer, cover, and cook until broccoli is very soft, about 20 minutes, stirring once during cooking. • 2. Add broth and 2 cups water and increase heat to medium-high. When mixture begins to simmer, stir in spinach and cook until wilted, about 1 minute. Transfer half of soup to blender, add cheddar and Parmesan, and process until smooth, about 1 minute. Transfer soup to medium bowl and repeat with remaining soup. Return soup to Dutch oven, place over medium heat and bring to simmer. Adjust consistency of soup with up to 1 cup water. Season to taste with salt and pepper. Serve, passing extra Parmesan separately

1 1/2 pounds broccoli (about 1 large head)
1 tablespoon olive oil
1/2 medium yellow onion, medium dice
Kosher salt
Freshly ground black pepper
1 medium russet potato (about 8 ounces)
2 cups low-sodium chicken broth or water
2 cups water
2 cups shredded sharp cheddar cheese (about 5 ounces)
2 tablespoons sour cream

Steps:

  • Remove the florets from the broccoli head and cut them into 1-inch pieces. Place half in a large bowl and half in a small bowl; set aside. Cut off the bottom of the stalk and use a vegetable peeler to trim away the woody outer layer. Cut the stalk into 1-inch pieces and place them in the large bowl with the florets; set aside.
  • Heat the oil in a large saucepan over medium heat until shimmering. Add the onion, season with salt and pepper, and cook, stirring occasionally, until softened, about 5 minutes.
  • Meanwhile, peel the potato and cut it into 1-inch pieces. Add the potato, chicken broth, water, and reserved pieces of stalk and florets from the large bowl to the saucepan, season with salt and pepper, and bring to a boil over high heat. Reduce the heat to low and simmer until the potato pieces and broccoli stalks can be easily pierced with a knife, about 20 minutes. Meanwhile, cut the remaining florets into 1/4-inch pieces; set aside.
  • Using a blender, purée the soup in batches until smooth, removing the small cap from the blender lid (the pour lid) and covering the space with a kitchen towel (this allows steam to escape and prevents the blender lid from popping off). Place the blended soup in a clean saucepan and return it to low heat. Add the reserved broccoli florets and simmer until they are tender and can easily be pierced with a knife, about 10 minutes. Stir in the cheese and sour cream. Taste and season with additional salt and pepper as needed.
