2 medium head of broccoli (see note)
4 Tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
3 garlic cloves (minced)
1/4 cup grated Parmesan cheese
1/4 cup breadcrumbs (plain or Italian style)

Steps:

  • Preheat oven to 400 degrees F.
  • Line a large baking sheet with parchment paper.
  • Trim broccoli heads and cut into florets. Cut large florets in half.
  • Place broccoli in a large mixing bowl. Add olive oil, salt, pepper and minced garlic. Toss to coat.
  • Add Parmesan cheese and breadcrumbs and toss to coat.
  • Spread broccoli on prepared sheet. If there is any leftover breadcrumb mixture in the bottom of the bowl, sprinkle it over broccoli.
  • Roast in preheated oven for 20 to 25 minutes or until the broccoli is soft and the breadcrumb mixture is golden brown.
  • Serve.

Coarse salt
1 head Romanesca or regular cauliflower, trimmed, left whole, and a few incisions made in the stem
1 head purple or regular broccoli, trimmed, left whole
8 tablespoons (1 stick) unsalted butter
1/2 cup fresh breadcrumbs

Steps:

  • Bring 1 inch of salted water to a boil in 2 separate pots fitted with steamer baskets. Add cauliflower to one pot and broccoli to second pot. Cover, and steam until tender when pierced with the tip of a knife, 8 to 10 minutes.
  • Meanwhile, in a medium skillet, melt butter over medium heat. Cook until butter turns brown, 3 to 4 minutes. Remove from heat, and season with salt.
  • Remove cooked cauliflower to one platter and broccoli to a second platter. Pour half of the browned butter over the cauliflower. Return pan to heat and add breadcrumbs, cook, stirring frequently, until the breadcrumbs begin to brown. Spoon over broccoli. Serve immediately.

2 heads broccoli, cut into florets
⅓ cup panko bread crumbs
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon lemon zest
½ teaspoon kosher salt
¼ teaspoon ground black pepper
⅛ teaspoon red pepper flakes
1 tablespoon lemon juice
¼ cup grated Parmesan cheese

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Line a large rimmed baking sheet with foil.
  • Toss broccoli, bread crumbs, olive oil, garlic powder, lemon zest, salt, black pepper, and pepper flakes on the prepared baking sheet.
  • Roast in the preheated oven for 10 minutes. Toss broccoli and continue to roast until golden brown around the edges and slightly crisp, but not mushy, about 10 more minutes.
  • Remove from the oven. Immediately drizzle with lemon juice, then sprinkle with Parmesan cheese and serve.

Butter-Steamed Broccoli With Peppery Bread Crumbs image

Here is an easy, elegant broccoli dish. If you wish, make the crumbs by pulsing cubes of day-old French bread in a food processor, but really any type of bread crumbs will do.

1 1/2 cups coarse bread crumbs
1 tablespoon extra-virgin olive oil
1 teaspoon coarsely ground black pepper
Salt
1 large head or 2 medium heads broccoli (1 1/2 to 2 pounds)
4 tablespoons unsalted butter
2 ounces Parmesan cheese, for shaving

Steps:

  • Heat oven to 350 degrees. Spread bread crumbs on a rimmed baking sheet and drizzle with olive oil. Bake until golden, about 10 minutes, turning pan and stirring crumbs occasionally to ensure even browning. Remove from oven and transfer crumbs to a bowl. Stir in black pepper and salt to taste. Set aside at room temperature.
  • Cut off thick stems of broccoli and save for another purpose, such as soup. Cut broccoli tops into 3-inch-long spears of approximately equal size.
  • Put a large skillet over medium-high heat. Melt butter, add broccoli spears and season with salt. Add 1 cup water, turn heat to high and cover skillet with a tight-fitting lid. Cook rapidly until firm-tender but still bright green, about 5 minutes. The broccoli should absorb all the butter and water. (If there is any buttery liquid left, spoon over broccoli just before serving.)
  • Transfer broccoli to a serving platter or a large wide shallow bowl. Sprinkle generously with peppery crumbs. Using a vegetable peeler, shave Parmesan into rough shards and scatter over the top.
