FETA TOAST WITH MINTY BEANS



Feta toast with minty beans image

This simple veggie toast with minty soybeans, feta and beetroot on rye bread makes an easy desk lunch and can be plated up in just 8 minutes

3 heaped tbsp frozen soybeans or baby broad beans
1 tsp extra virgin rapeseed oil
1 tsp cider vinegar
½ garlic clove , finely grated
1 mint sprig, leaves chopped
1 slice rye and wheat dark sourdough bread
1 heaped tbsp Greek yogurt
15g feta
1 ready-cooked beetroot , sliced

Steps:

  • Boil the beans following the pack instructions, about 3 mins, then drain and mix with the oil, vinegar, garlic and mint. Meanwhile, toast the bread.
  • Mix the yogurt with the feta to make a rough paste, then spread half onto the toast. Top with the beetroot slices, then spread on the rest of the feta mix and pile the beans on top. Eat with your fingers or a knife and fork. Take all the different bits for the sandwich to work in small tubs and build it at your desk.

A light salad full of good-for-you greens, and made more filling with couscous

250g couscous
300g frozen broad beans
125g baby spinach leaves
20g pack fresh mint
85g black olives
200g pack feta cheese

Steps:

  • Prepare couscous with boiling water, according to the packet's instructions.
  • Meanwhile, boil broad beans according to pack instructions. Cool in a colander under the cold tap, then drain. Put baby spinach leaves into a colander and pour over boiling water to wilt. Refresh under cold water and squeeze dry.
  • Stir the broad beans, spinach, mint and the black olives into the couscous. Crumble in the feta. Drizzle with plenty of olive oil and season. Toss well.

2 x 250g packs fresh mixed bean salad
½ x 400g can chopped tomatoes
4 thick slices sourdough
80g feta

Steps:

  • Put the mixed beans and tomatoes in a pan over a medium heat. Simmer for 7 mins until the sauce is reduced a little, then season well. Drizzle the sourdough slices with a little olive oil on each side and grill until both sides are golden brown. Top the bread with the beans and crumble over the feta.

Pea & feta toasts image

This spin on bruschetta tops baguette slices with crushed peas, mint and salty cheese - great for canapés

Yield Serves 5 as a nibble, or 10 with other nibbles

Number Of Ingredients 7

300g frozen pea , left at room temperature to defrost
3 tbsp low-fat natural yogurt
2 tbsp chopped mint , plus a few extra leaves, torn
zest and juice ½ lemon
15 slices cut from a thin baguette , lightly toasted
85g feta cheese , crumbled
drizzle olive oil

Steps:

  • Put the defrosted peas, yogurt, chopped mint, lemon zest and juice and some seasoning in a bowl. Mash well with a potato masher. Divide the pea mixture between the toasts, then scatter a little feta on top of each with some more pepper. Arrange on a plate, scatter with more mint leaves and a drizzle of oil. Serve.
