TOMATO BRIE PASTA (LINGUINE WITH TOMATOES AND BASIL) image

4 ripe tomatoes, cut into 1/2 inch cubes
1 pound Brie cheese, rind removed, torn into irregular pieces
1 cup cleaned fresh basil leaves, cut into strips
3 garlic cloves, peeled and finely minced
1 cup best quality olive oil
salt to taste
1/2 tsp freshly ground pepper
1 1/2 pounds linguine
freshly grated imported Parmesan cheese (optional)

Steps:

  • 1. Combine tomatoes, brie, basil, garlic, 1 cup olive oil, salt and pepper in a large serving bowl. Prepare at least 2 hours before serving and set aside, covered, at room temperature 2. Bring 6 quarts of water to a boil in a large pot. Add the linguine and boil until al dente, about 10 minutes. 3. Drain pasta and immediately toss with the tomato sauce. Serve immediately

4 large, ripe tomatoes, peeled and seeded (or 6 good-quality cannedd)
large handful of basil leaves, torn (about 1 cup)
1 lb. Brie cheese, rind removed and cut into pieces
1 garlic clove, minced
1 head roated garlic* or 2 addition cloves raw garlic, minced
1 c. extra-virgin olive oil
1/2 - 1 tsp. salt (to taste)
1/2 tsp. freshly ground pepper
1 1/2 lb. linguine or thick spaghetti
grated parmesan cheese, optional
to roast garlic, cut off top to expose cloves, drizzle with olive oil, sprinkle with salt and wrap in aluminum foil. Roast in 350 degree oven for 1 hour.

Steps:

  • Combine all ingredients except for pasta in a large serving bowl. Set the mixture aside for 2-3 hours to allow flavors to meld (this step may be ommitted if in a hurry). Bring a large pot of water to a rolling boil and season very generously with salt (the pasta water should taste like sea water). Add pasta and cook to al dente, reserving a bit of the cooking water. Mix pasta with sauce and add cooking water as needed to achieve a slightly creamy, sauce consistency.Sprinkle with parmesan cheese, if desired.

2 (14.5 ounce) cans Italian-style diced tomatoes
½ pound Brie cheese, cubed
2 tablespoons chopped fresh basil

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Meanwhile, in a large saucepan, heat tomatoes over medium-high heat. Bring to a slow boil and stir in cheese. Reduce heat to medium-low, and stir to melt cheese.
  • Toss pasta with tomato sauce and top with chopped basil before serving.

I got this recipe online awhile ago and added lots of things to it to add more flavor. Originally the recipe was only 4 ingredients and super bland. I think I fixed it now. :)

12 ounces uncooked bow tie pasta
1 tablespoon olive oil
1/4 cup chopped onion
4 garlic cloves, crushed
1/4 cup chopped green pepper
1 teaspoon oregano
1 teaspoon thyme
1 tablespoon balsamic vinegar
1/4 teaspoon sugar
1 (30 ounce) can diced tomatoes
1/2 lb brie cheese, rind removed and cubed
1/4-1/2 teaspoon salt
2 tablespoons chopped fresh basil, for garnish

Steps:

  • Cook bow ties according to package directions; drain but do not rinse.
  • While bowties cook, heat oil in a large skillet.
  • Sautee the onion, garlic and green bell pepper in skillet until soft but not browned.
  • Add oregano, thyme, balsamic vinegar, sugar and tomatoes to skillet.
  • Heat just to a boil and reduce heat.
  • Add the cubed brie cheese and stir until melted.
  • Add any salt if needed.
  • Pour sauce over cooked pasta and mix well.
  • Serve and garnish with the chopped fresh basil leaves.

1/4 lb brie cheese, cut in 1/2-inch cubes
1 cup fresh basil, chopped
1/4 cup onion, minced
1/4 cup olive oil
1/4 cup toasted pine nuts

6 tilapia fillets
1/4 cup olive oil
1/4 cup basil, chopped
1/4 teaspoon garlic, minced

1 lb pasta, of choice

Steps:

  • Mix in large bowl: tomatoes, cheese, basil, onions, oil, pine nuts, salt and pepper; cover and set aside.

Serves 6 as a main course
3/4pounds Brie (triple cream if you can get it)
4 medium ripe-as-can-be tomatoes
2 medium cloves garlic
1/2cup loosely packed basil leaves, cleaned and dried
1/2cup plus 2 tablespoons excellent olive oil
Kosher or sea salt and freshly ground pepper
1pound curly pasta (I like cavatappi)

Steps:

  • Put the Brie in the freezer for about 20 minutes to firm up a little. This will make it easier to cut when the time comes. Roughly chop the tomatoes and put them in a large serving bowl. Finely chop the garlic and add it to the bowl. Chiffonade or roughly chop the basil and add that to the bowl too. Pour in the olive oil and add a generous amount of salt and pepper. Gently stir everything together. Once the Brie is firm enough, cut it into 1/2-inch cubes and add these to the bowl. Gently fold to combine the cheese with the rest of the ingredients. Cover the bowl and let it sit at room temperature for at least 2, and up to 8, hours -- the longer the better. When you are ready to eat, bring a large pot of heavily salted water to a boil and cook the pasta until just al dente. Strain it and tip it into the bowl with the sauce. Fold everything together until it is well combined, the Brie has begun to melt, and the pasta is slicked with cheese and tomato goodness. Serve immediately with a big green salad
