- Defrost the puff pastry and separate the strips.
- Cut each strip into three squares. Then cut those squares into four squares.
- Line mini muffin pan with liners and place a puff square in each liner so the corners go up the sides some.
- Put a small amout of brie about 1/4 teaspoons on the squares, then same amount of the hot pepper peach preserves.
- Bake at 400 for 12-15 minutes. Remove liners from pastry before serving, if desired.

I found this recipe years ago when I was looking for things to serve at a New Year's Eve party. They were a great success! You can make these pies ahead of time. They can be refrigerated for two days or frozen for one month. When thawing, allow each pie to sit out for 20 minutes.

- 1. Put 1/2 tap. Of jelly into each fillo cup. Place one piece of Bri into each cup and sprinkle with 1/4 tsp. of almonds.

RASPBERRY PHYLLO CUPS WITH BRIE
Steps:
- to make the phyllo cups, place 1 sheet phyllo on a work surface and brush with melted butter. Top with another sheet and brush with butter. Repeat wit the remaining 2 sheets. Using a 3 inch round metal cookie cutter (or other cylinder), cut layered phyllo into 18 circles. If dough sticks, run a shar knife around the cutter. Lighly butter 2 mini muffin tins. Place 1 phyllo circle into 18 of teh muffin cups and press gently with your fingertips to fit snugly. Preheat oven to 350F and bake for 15 to 20 minutes, or until phyllo is browned and has a nutty aroma. PORTABELLA AND BRIE CUPS
Richly flavored portabellas are sautéed and topped with Brie. Appetizers don't get much more delicious than this!

- Heat oven to 375°F. Spray 24 miniature muffin cups with cooking spray. Brush mushrooms or wipe clean with damp cloth. Finely chop.
- In 6-inch skillet, stir mushrooms, butter and garlic. Cook and stir over medium heat 5 to 6 minutes or until butter is absorbed and mushrooms are tender. Stir in onions and mustard.
- If using crescent rolls: Unroll dough; separate into 4 rectangles. Firmly press perforations to seal. If using dough sheet: Unroll dough; cut into 4 rectangles.
- Cut each rectangle in half lengthwise; make 2 crosswise cuts to form 6 squares of dough from each rectangle. Press 1 square of dough into each muffin cup, letting corners stand above top of each cup. Spoon about 1 tablespoon mushroom mixture into each cup.
- Bake 10 to 12 minutes or until light golden brown. Meanwhile, cut Brie into 24 pieces. Remove cups from oven. Place 1 piece of Brie over mushroom mixture in each cup.
- Bake 2 to 4 minutes longer or until cups are golden brown and cheese is softened. Cool 5 minutes; remove from muffin cups. Cool slightly before serving.
