1 sheet frozen puff pastry, thawed
8 oz. Brie, thinly sliced
1 small Golden Delicious apple, cored and thinly sliced
2 tsp. honey
2 tbsp. chopped roasted, salted almonds
2 tbsp. pomegranate seeds

Steps:

  • Preheat oven to 400°F. On large sheet parchment, roll pastry to 12" by 10" rectangle. Fold 1/2 inch of edges to form rim. With fork, poke holes all over pastry sheet.
  • Arrange Brie in single layer on pastry. Top with apple. Sprinkle 1/8 teaspoon each salt and pepper all over apple. Slide parchment onto cookie sheet. Bake 30 to 35 minutes or until deep golden brown.
  • Drizzle all over with honey. Garnish with almonds and pomegranate seeds.

Apples and cheese make perfect partners in this puff pastry tart, ideal for using up the remnants of a cheeseboard or leftover cranberry sauce. Serve hot or cold for a Boxing Day buffet

320g pack ready-rolled all-butter puff pastry , defrosted at room temperature if frozen
1 tbsp olive or rapeseed oil , plus a drizzle
3 large onions , halved and sliced
2 tbsp white wine vinegar , plus a splash
1 tbsp Dijon mustard
small bunch of thyme , leaves picked, plus a few sprigs to serve
1 eating apple
100g cranberry sauce (or chutney)
175g brie , sliced (or other cheese)

Steps:

  • Heat oven to 200C/180C fan/gas 6. Unroll the pastry sheet onto a large baking tray (leave it on the paper from the pack). If the edges are not straight, trim them with a sharp knife. Score a border, about 1cm in from the edge. Score a criss-cross pattern over the central piece of pastry (this will prevent it from rising too much) and around the border, if you like. Bake for 15 mins.
  • Meanwhile, heat the oil in a large pan. Add the onions and cook for 10-15 mins until softened and starting to caramelise. Stir in the vinegar, bubble for 1 min more, then add the Dijon mustard and thyme, season well and set aside. Slice the apple thinly through the core so a few slices have a nice star in the middle, and remove any seeds. Toss the slices in a splash of vinegar to prevent them from browning.
  • The pastry should be puffed and starting to colour. Push down the centre, then spread over the onions. Add blobs of cranberry sauce, then top with the apple slices and brie, overlapping them to cover the tart. Add a few more thyme sprigs, drizzle with a little oil, then put back in the oven for a further 25 mins until the cheese is bubbling and the apple slices are soft. Serve warm or cold.

1 sheet frozen puff pastry, thawed in refrigerator
2 tablespoons extra-virgin olive oil
3 large Vidalia onions or other sweet variety, thinly sliced
4 thyme sprigs, plus more for garnish
Kosher salt and freshly cracked black pepper
1/3 cup good quality beef stock

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
  • On a work surface, roll the puff pastry into a roughly 10 by 16-inch rectangle. With a sharp knife, trim uneven edges to make a perfect rectangle. Evenly cut off the outer 1 inch of each side of the rectangle in strips; put the puff sheet on the baking sheet. Dip your finger in water and run around the top edges of the rectangle and replace the removed strips of pastry along the edges of the sheet, pressing lightly to adhere. With a fork, pierce the interior of the tart shell to prevent rising; do not pierce the adhered edges. Bake until the outer edges have puffed and are golden in color; about 15 minutes. Set aside.
  • Heat 2 tablespoons olive oil in a large skillet over medium-low heat. Add onions and thyme sprigs and season well with salt and pepper, to taste. Cook, stirring occasionally, until the onions begin to brown. Add the stock, a tablespoon at a time, as the pan gets dry, scraping and stirring the brown bits that are stuck to the bottom oft the pan. When the onions are caramelized to a dark golden color, remove from the heat and discard the leafless thyme sprigs (the leaves fall off while cooking).
  • When ready to serve, preheat the oven to 350 degrees F. Evenly spread the caramelized onions on the cooked pastry shell and heat in the oven until warmed through, 5 to 7 minutes. Remove from oven, to a cutting board and cut into wedges. Arrange on a serving platter and garnish each wedge with a sprig of fresh thyme. Serve immediately and enjoy!

CARAMELIZED ONIONS AND APPLES WITH BRIE



Caramelized Onions and Apples with Brie image

2 packages (14 ounces each) sliced green apples, Chiquita®
2 large sweet onions, sliced into thick rounds
1/2 cup golden raisins, Sun-Maid®
1/3 cup packed light brown sugar, Domino®/C&H®
1 packet (1.8 ounce) white sauce mix, Knorr®
1 tablespoon fines herbes, Spice Islands®
1 stick (1/2 cup) butter, cut into small pieces
No-stick cooking spray, Pam®
1/2 package (17.3 ounce) frozen puff pastry (1 sheet), thawed, Pepperidge Farm®
1 wheel (13.2 ounce) baby brie, Aloutte®

Steps:

  • 1. In a large bowl, combine apples, onions, raisins, brown sugar, white sauce mix, and fines herbes; toss well. Place mixture in a 5-quart slow cooker; dot with butter. Cover and cook on Low heat setting for 12 hours.
  • 2. Forty minutes before serving, preheat oven to 400 degrees F. Coat a baking sheet with no-stick cooking spray; set aside.
  • 3. Unroll pastry sheet. Place Brie wheel in the center of the puff pastry and wrap cheese by bringing ends of pastry together toward the center of the wheel. Carefully turn cheese over, folding pastry ends securely under wheel. Lay on prepared baking sheet, folded side down. Bake for 25 minutes or until light golden brown. Let cool 10 minutes.
  • 4. Serve pastry-wrapped Brie warm with caramelized onion and apple mixture.

These apple-onion tarts have a rosemary-infused, parsnip sweetened crust.

1 tablespoon extra-virgin olive oil
1 tablespoon unsalted butter
3 medium Gala apples, peeled, cored, halved, and sliced 1/4 inch thick
8 medium yellow onions, halved and thinly sliced
3 tablespoons cider vinegar
1/2 teaspoon coarse salt
All-purpose flour, for dusting
Rosemary-Manchego Tart Dough
1 cup coarsely grated manchego cheese (2 to 3 ounces)
Freshly ground pepper, to taste

Steps:

  • Heat oil and butter in a large skillet over medium-high heat. Add apples and onions, and cook until golden brown, about 15 minutes. Cover, reduce heat to low, and cook until very soft and caramelized, about 35 minutes. Add vinegar and salt, and cook 5 minutes. Let cool.
  • On a lightly floured surface, roll out dough to a generous 1/8 inch thick. Cut out six 7-inch rounds, gathering scraps and rerolling dough if needed. Place on parchment-lined baking sheets.
  • Puree half the apple-onion mixture in a food processor until smooth. Using an offset spatula, spread 3 tablespoons apple-onion puree over each dough round, leaving a 1-inch border around edges. Sprinkle each with 2 tablespoons cheese. Season with pepper. Top each with a generous tablespoon of remaining apple-onion mixture, and sprinkle with 2 teaspoons cheese. Fold edges of dough in, crimping with your fingers. Refrigerate until chilled, about 30 minutes. Meanwhile, preheat oven to 350 degrees.
  • Bake until edges are golden brown, 40 to 45 minutes. Serve tarts warm or at room temperature.

3 tablespoons butter, softened
3/4 cup sugar
2 large apples
1 cup dried figs, halved
1/2 pound Brie cheese, rind removed, sliced
1 sheet refrigerated pie crust

Steps:

  • Preheat oven to 425°. Spread butter over bottom of a small cast-iron skillet or shallow 1-qt. baking dish; sprinkle evenly with sugar., Peel, quarter and core apples; arrange in a circular pattern over sugar, rounded side down. Place figs around apples. Place skillet over medium heat; cook until sugar is caramelized and apples have softened slightly, 10-12 minutes. Remove from heat; top with cheese. , Unroll crust; place over fruit and cheese, tucking under edges. Place skillet in oven on an upper rack; bake until crust is golden brown, 15-18 minutes. Let cool in skillet 5 minutes. Carefully invert onto a serving plate; serve warm.

Number Of Ingredients 7

24 pre baked miniature tart shells, bought or your own favourite recipe.
2 large onions, thinly sliced
2 tablespoons olive oil
2 tablespoons brown sugar
2 tablespoons balsamic vinegar
salt and pepper
200 g brie cheese, sliced into slivers without the rind.

Steps:

  • Heat oil in deep skillet on medium heat.
  • Add onions and cook until transparent.
  • Add brown sugar and vinegar and cook covered for 15 minutes over low heat until onions are caramelized.
  • Season with salt and pepper as desired and cook on low until all moisture is evaporated.
  • Cool slightly and spoon approx.
  • 1 tablespoon into pre baked shells and top with a sliver of Brie cheese.
  • Bake at 350 degrees for 15 minutes or until the cheese melts.
  • Serve warm.
