As of march 21,2005 I adopted this recipe and did some tweeking.I hope you give it a try. The 2 reviews are before the tweeking. Briam is a summer favorite Greek vegetable casserole which is served as a main course dish when lighter, cooked food is desired. Briam is often varied by the addition artichoke hearts, in fact any vegetables you have on hand will likely go well in briam. UMMM I think I'd even like some olives and or capers in it.

Number Of Ingredients 12

1 lb zucchini, sliced 1/4 inch
1 lb potato, sliced 1/8 inch
1 lb eggplant, sliced 1/4 inch
1 red peppers or 1 green pepper, sliced
1 thinly sliced onion
2 thinly sliced green onions
2 lbs ripe peeled tomatoes, chopped
1 bunch diced parsley
6 -8 minced garlic cloves
salt
pepper
1/4 cup olive oil

Steps:

  • Preheat oven to 350.
  • In a casserole dish layer half of the ingredients in order except for the oil, seasoning with salt and pepper as you layer repeat with remaining half of the ingredients.
  • Top with oil and bake uncovered for about 1 1/2 hour.
  • The top will be crisp and the inside soft and melt in your mouth!

1 cup butter, softened
1/2 cup confectioners' sugar
1 teaspoon vanilla extract
1 cup all-purpose flour
2/3 cup cornstarch

Steps:

  • In a small bowl, cream butter and confectioners' sugar until light and fluffy. Beat in vanilla. Combine the flour and cornstarch; gradually add to creamed mixture and mix well. , Drop by 1/2 teaspoonfuls onto ungreased baking sheets. Bake at 350° for 11-13 minutes or until bottoms are lightly browned. Cool for 5 minutes before removing from pans to wire racks.

2/3 cup butter, softened (no subsitutes)
3/4-1 cup sugar
3 large eggs
1 2/3 cups half-and-half cream or 1 2/3 cups milk
2 1/3 cups all-purpose flour
1 cup yellow cornmeal
1 tablespoon baking powder
1/2 teaspoon baking powder
1 teaspoon salt
1 cup canned corn niblet, drained and coarsley chopped

Steps:

  • Set oven to 400 degrees F (set oven rack to second-lowest position).
  • In a medium bowl cream butter with sugar.
  • In another bowl whisk eggs with half and half cream or milk.
  • In a small bowl combine flour, cornmeal, 1 tablespoon plus 1/2 teaspoon baking powder and salt; add to the creamed mixture alternately with egg mixture.
  • Mix in chopped corn.
  • Transfer to prepared baking pan.
  • Bake for about 25-27 minutes or until cake tests done.

GINGER CREAM:
1/2 cup heavy whipping cream
2 slices fresh gingerroot (about 3/4-inch diameter)
1 cinnamon stick (3 inches)
1 tablespoon grated orange zest
3 tablespoons maple syrup
1/8 teaspoon ground nutmeg
OATMEAL:
4 cups water
2 cups old-fashioned oats
1/4 cup chopped dried apricots
1/4 cup dried cherries, chopped
1/2 teaspoon salt
3 tablespoons brown sugar
2 tablespoons butter, softened
1 cup fresh or frozen unsweetened raspberries, thawed
1/4 cup sugar

Steps:

  • In a small saucepan, combine the cream, ginger, cinnamon stick and orange zest; bring to a boil. Reduce heat; simmer, covered, for 10 minutes. Remove from the heat; strain and discard solids. Stir in syrup and nutmeg., In a large saucepan, bring water to a boil; stir in the oats, apricots, cherries and salt. Reduce heat to medium; cook for 5 minutes, stirring occasionally. Remove from the heat; stir in brown sugar and 1/4 cup ginger cream. Let stand, covered, for 2 minutes., Grease four 10-oz. broiler-safe ramekins with butter; place on a baking sheet. Divide raspberries among ramekins. Spoon oatmeal over raspberries; sprinkle evenly with sugar. Broil 4-6 in. from the heat for 7-9 minutes or until sugar is caramelized. Serve with remaining ginger cream.
