These baked tortilla roll-ups tuck all the fixings of a breakfast burrito-eggs, cheddar, sausage, and salsa-into a deliciously crispy, compact, freeze-ahead format. To keep the crunch long after freezing, use the oven and not the microwave to reheat.

1 teaspoon vegetable oil, plus more for brushing
6 ounces breakfast sausage, casings removed
5 large eggs, beaten
Kosher salt and freshly ground pepper
4 ounces cheddar, shredded (1 cup)
1/3 cup homemade or store-bought salsa
6 flour tortillas (each 8 inches)

Steps:

  • Preheat oven to 425°F. Heat oil and sausage in a medium nonstick skillet over medium-high; cook, breaking up meat into bite-size pieces with the back of a spoon, until cooked through, 5 to 6 minutes.
  • Add eggs; season with salt and pepper. Cook, stirring, until soft curds form, 30 seconds. Remove from heat; stir in cheese and salsa. Divide mixture among tortillas (about 1/3 cup each); roll up and place, seam-side down, on a baking sheet.
  • Brush taquitos with oil and bake until shells are crisp and cheese is melted, 12 to 14 minutes.

SPICY MAPLE SAUSAGE, EGG AND CHEESE BREAKFAST TAQUITOS



Spicy Maple Sausage, Egg and Cheese Breakfast Taquitos image

1 package Johnsonville (or similar brand) Maple Breakfast Sausage (should have 14 links in pack, thaw if frozen)
12 Large eggs
1/4 cup Milk (optional)
2 dashes Crushed red pepper
2 pinches Salt/Pepper (to taste)
14 Flour or corn tortillas
1.5 cups Shredded cheese blend
2 Jalapenos, seeds and stems removed and diced

Steps:

  • Preheat oven to 425 degrees F.
  • Add the frozen sausage links to a large skillet over medium heat. Cook, turning occasionally, until fully cooked. Remove from pan and drain.
  • Crack eggs into a bowl and add milk if desired. Whisk well and then add to the pan. Season with salt, pepper and crushed red pepper (cayenne powder works as a substitute). Scramble eggs as they cook. Remove from heat once desired texture has been reached.
  • Warm tortillas either in the microwave (30 seconds or so) or in a skillet (warm on low heat until pliable).
  • Divide eggs, cheese and jalapenos evenly among the tortillas. Pile ingredients towards one edge. Add one sausage link to each tortilla. Roll tortillas tightly. Place taquitos seam side down on non-stick baking pan. Bake for six minutes. Remove from oven, flip taquitos over (seam side up; should remain sealed) and bake for additional six minutes or until golden brown. Remove from heat to cool. Serve plain or with picante sauce for dipping.

frozen breakfast sausage links
5 large eggs
salt, coarse
black pepper, freshly ground
cooking spray
1 1/2 cups shredded cheddar cheese
1 cup chopped cilantro
10 white corn tortillas
salsa
hot sauce
sour cream

Steps:

  • Preheat oven to 425 degrees F.
  • Add sausage links to a large skillet and cook over medium-high until heated through and browned on all sides, about 8 minutes. Set aside.
  • Add eggs to a medium bowl and whisk until combined. Season with salt and pepper.
  • Spray a non-stickpan with cooking spray and add eggs to pan, stirring with a rubber spatula until just about set, 2 minutes. Add the chopped cilantro and cook until eggs are just set, about a minute more. Transfer to a bowl.
  • Warm the tortillas for 10 seconds in the microwave. Divide the eggs amongst the tortillas and top with shredded cheese. Place sausage link on top. Roll up and place seam side down on a parchment-lined sheet tray. Spray with cooking spray and bake until golden brown, about 15 minutes. Serve with salsa, hot sauce, or sour cream.
