1 (2 pound) package frozen hash brown potatoes
2 cups shredded Cheddar cheese
1 (7 ounce) can green chile peppers
8 large eggs
2 cups milk

½ teaspoon onion powder
½ teaspoon garlic powder

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch dish with cooking spray.
  • Cook sausage in a large skillet, stirring occasionally, until no longer pink, 6 to 8 minutes. Drain fat and transfer to a bowl.
  • Cook and stir hash browns to the same skillet until lightly browned, about 8 minutes. Place hash browns in the baking dish; top with sausage, shredded Cheddar cheese, and green chile peppers.
  • Whisk eggs, milk, salt, pepper, onion powder, and garlic powder in a bowl. Pour over hash brown mixture.
  • Bake uncovered in the preheated oven until bubbly and the top is golden brown, 35 to 40 minutes.

1/2 loaf of sliced white loaf bread
1 pound fresh bulk pork sausage with sage
10 ounces sharp Cheddar, grated
2 cups half-and-half
1 teaspoon dry mustard
1 teaspoon salt
5 large eggs, lightly beaten

Steps:

  • Cut the bread into 1-inch cubes and spread in the bottom of a greased 9- by 13- by 2- inch casserole dish.
  • In a medium skillet, brown the sausage over medium heat until fully cooked and no longer pink. Remove the sausage with a slotted spoon to drain the fat. Spread the cooked sausage over the bread and top with the cheese. Then stir together the, half-and-half, dry mustard, salt and eggs. Pour this mixture over the cheese. Cover the casserole with aluminum foil and refrigerate for 8 hours or overnight.
  • The next day, preheat the oven to 350 degrees F.
  • Bake the covered casserole until set and slightly golden, about 50 minutes. Remove from the oven and allow the casserole to set for 15 minutes before serving.

cooking spray
1 (16 ounce) package pork breakfast sausage
1 sweet onion, chopped
7 eggs
1 (8 ounce) package Cheddar cheese, grated, divided

Steps:

  • Preheat an oven to 450 degrees F (230 degrees C). Prick potatoes several times with a fork and place onto a baking sheet.
  • Bake in the preheated oven until potatoes are soft, 50 minutes to 1 hour. Remove potatoes from oven and let cool until safe to handle, at least 15 minutes.
  • Reduce oven temperature to 350 degrees F (175 degrees C). Spray a casserole dish or 9x13-inch pan with cooking spray.
  • Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Transfer sausage to a bowl. Saute onion in the same skillet until translucent, about 5 minutes. Transfer onion to the bowl with the cooked sausage.

20 ounces diced potatoes, with onion, refrigerated, Simply Potatoes
1 teaspoon butter
1 teaspoon seasoning salt
1 teaspoon black pepper
12 eggs, lightly beaten
8 ounces shredded mild cheddar cheese

Steps:

  • Preheat oven to 350 degrees.
  • Lightly grease a medium baking dish.
  • Cook and stir sausage in a medium skillet over medium heat until evenly browned and broken up.
  • Remove sausage to a separate plate.
  • Add the butter to the same skillet and replace over medium heat.
  • Add the package of diced potatoes.

1 pound bulk pork sausage
½ cup chopped red bell pepper
¼ cup chopped onion
¼ cup chopped green onions
½ cup cream cheese
1 teaspoon ground black pepper
2 cups shredded Cheddar cheese
6 large eggs
¾ cup low-fat milk

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking pan with nonstick spray. Line the bottom of the pan with crescent roll dough, pinching the perforated seams together.
  • Heat a large skillet over medium-high heat. Cook and stir sausage, bell pepper, and both onions in the hot skillet until sausage is browned and crumbly, 5 to 7 minutes. Steps:

  • Line sides of 4- to 5-quart slow cooker with foil that has been folded into thirds; spray with cooking spray. (See tip.)
  • In medium bowl, beat eggs, half-and-half, pepper flakes, salt and pepper with whisk. Reserve 3/4 cup Cheddar cheese and 2 tablespoons green onions; set aside. In small bowl, stir together remaining cheeses.

1 onion, chopped
1 bell pepper, cored, seeded and chopped
2 cloves garlic, very finely chopped
6 large eggs
21/2 cups milk
1 tablespoon chopped fresh sage
1 tablespoon chopped fresh flat-leaf parsley
12 ounces white bread, cubed (about 1/2 loaf)
1/2 cup grated Cheddar cheese (about 2 ounces)
Coarse salt and freshly ground black pepper
2 teaspoons canola oil, plus more for the dish
1/2 pound pork or turkey country sausage, casings removed

Steps:

  • In a large nonstick skillet, heat the oil over medium heat. Add the sausage and cook, stirring and breaking it up into smaller pieces, until it begins to brown, 3 to 5 minutes. Add the onion and bell pepper and cook until the onion is golden, about 5 minutes. Add the garlic and cook until fragrant, 45 to 60 seconds. Remove from the heat to cool slightly.
  • Meanwhile, whisk together the eggs, milk, sage and parsley in a large bowl. Add the cubed bread, sausage-vegetable mixture and 1/4 cup of the cheese. Season with salt and pepper. Stir to combine. Cover and refrigerate for at least 30 minutes or overnight.

  • Preheat the oven to 400 degrees F (200 degrees C). Lightly grease a 9x13-inch baking dish.

2 cups milk

1 (4 ounce) can sliced mushrooms (drained) or 1 (4 ounce) can fresh sliced mushrooms

1 pound ground country sausage
4 English muffins, halved and torn into bite-sized pieces
1 cup diced onion
1 cup diced bell pepper
1 cup shredded Cheddar cheese
8 eggs, beaten
1 ¼ cups milk
1 teaspoon dried basil
½ teaspoon black pepper

Steps:

  • Cook ground sausage in a large skillet over medium-high heat, stirring often, until browned and cooked through, about 5 minutes. Drain excess grease.
  • Spread torn English muffin pieces along the bottom of a 9x13 baking dish. Layer cooked sausage, onions, bell peppers, and Cheddar cheese over English muffin pieces.
  • Combine eggs, milk, basil, and pepper in a bowl; whisk until well combined. Pour egg mixture into the baking dish. Gently press down on top of the casserole mixture with a spatula. Cover and refrigerate 8 hours to overnight.
  • Preheat the oven to 375 degrees F (190 degrees C).
  • Uncover casserole and bake in the preheated oven until casserole is set and eggs are cooked, about 35 minutes. Check by inserting a knife. Let cool for 15 minutes before eating.

1 tablespoon extra-virgin olive oil
4 ounces breakfast sausage
4 ounces sliced cremini mushrooms
1 small leek, cleaned and chopped
1 clove garlic, grated
1/2 red bell pepper, seeded and diced
1/4 teaspoon hot paprika
Pinch of ground mustard
Kosher salt and freshly ground black pepper
8 ounces frozen chopped spinach, thawed and squeezed out
4 large eggs
1 to 2 dashes hot sauce
3 ounces Gruyere cheese, grated
Nonstick cooking spray, for the ramekins

Steps:

  • Preheat the oven to 375 degrees F.
  • Heat a medium skillet over medium-high heat. Add the oil to heat, then add the sausage and cook until browned and crispy, breaking up any big clumps with the back of a wooden spoon, 5 to 6 minutes. Remove the sausage to a large bowl, leaving behind any rendered fat. Add the mushrooms and leeks to the skillet with the fat and cook until they are softened, 2 to 3 minutes. Add the garlic and red bell peppers. Sprinkle in the paprika, mustard, 1/2 teaspoon salt and 1/4 teaspoon pepper and cook for 5 to 8 minutes more. Add the mushroom mixture to the bowl with the sausage. Stir together and taste for seasoning.
  • In a blender, add the spinach, eggs, hot sauce, 1/4 teaspoon salt and 1/2 teaspoon pepper. Blend until smooth. Stir the spinach mixture and Gruyere into the sausage mixture a little at a time.
  • Spray four 5-ounce ramekins with nonstick cooking spray. Pour the mixture into the ramekins. Bake until the casseroles are entirely set, 35 to 50 minutes. Let the casseroles cool slightly before eating. Serve warm or at room temperature.

7 slices white sandwich bread
1 pound bulk breakfast sausage
Softened unsalted butter or nonstick vegetable cooking spray (for pan)
4 scallions, white and pale green and dark green parts separated, thinly sliced
1 (10-ounce) package frozen spinach, thawed, squeezed dry
8 ounces cheddar cheese, shredded (about 2 cups)
8 large eggs
1 1/2 cups milk
1/2 cup full-fat Greek yogurt
1 teaspoon mustard powder
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon ground nutmeg

Steps:

  • Preheat oven to 425°F. Toast bread on a rimmed baking sheet until dry, 8-10 minutes.
  • Meanwhile, heat a large skillet over medium-high. Add sausage and cook, breaking into pieces with a spatula, until browned, about 7 minutes.
  • Butter a 3-quart baking dish. Arrange 6 bread slices in dish in one layer, covering bottom of pan completely and cutting slices to fit if needed. Tear remaining slice into smaller pieces to fill in any gaps.
  • Using a slotted spoon, transfer sausage to baking dish, scattering over bread.
  • Heat skillet over medium and add white and pale green scallion parts. Cook, stirring, until softened and just starting to take on color, about 3 minutes. Add spinach, stir to combine, and cook until warmed through, 1-2 minutes more. Top sausage with spinach mixture, then top spinach mixture with cheese.
  • Whisk eggs, milk, yogurt, mustard powder, salt, pepper, and nutmeg in a large bowl. Gently pour over casserole. Cover and chill at least 4 hours or up to overnight.
  • Uncover dish and transfer to a cold oven. Heat oven to 375°F and bake casserole until eggs are puffed and cheese is browned, about 40 minutes.
  • Let casserole cool several minutes. Top with dark green scallion parts.

Steps:

  • In a large skillet over medium-high heat, cook sausage, stirring occasionally, and breaking up meat with a spoon, until browned, 8 to 10 minutes. Add onion; cook. Stirring, until soft, 8 to 10 minutes. Stir in sun-dried tomatoes. Transfer to a plate; let cool until barely warm.
  • Butter an 8-inch-square baking dish. In a large bowl, whisk together eggs, milk, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Arrange half the bread in a slightly overlapping layer in bottom of dish. Scatter half the sausage mixture and then half the cheese over the bread. Repeat with remaining bread, sausage, and cheese, pressing firmly. Pour egg mixture over layers. Cover and refrigerate at least 20 minutes or up to overnight.
  • Preheat oven to 350 degrees. Bake, uncovered, until puffed and golden and a toothpick inserted into center comes out clean, 35 to 45 minutes.

This is a variation on a standard breakfast casserole recipe. You can really use any combination of meat, vegetables, and cheese that you have on hand. This one came out really well! You can substitute frozen drained spinach for the sauteed fresh if that's easier.

1/2 lb bulk sausage, cooked and drained
1 tablespoon butter
1/3 cup chopped onion
1/2 cup chopped mushroom
2 garlic cloves, minced
2 cups fresh spinach, washed, stemmed, and chopped
1 1/2 cups swiss cheese
4 eggs
1/2 cup light cream
1/2 teaspoon pepper
1/2 teaspoon salt
1/4 teaspoon cayenne

Steps:

  • Preheat oven to 350.
  • Grease 9" square pan with a bit of butter.
  • Add rest of butter to skillet. Saute onion for 2 minute on med heat, then add mushrooms and garlic. Cook and stir for 4 minutes, until mushrooms have begun to soften, and remove to a bowl.
  • Add spinach to skillet and saute lightly, just for a minute or two. Drain by pressing a spatula against the spinach.
  • To assemble, layer half of sausage in baking dish. Top with 1/3 of cheese. Add mushroom mixture, then 1/3 of cheese. Add spinach, then rest of cheese, then rest of sausage.
  • Beat eggs with cream and seasonings. Pour over other ingredients.
  • Casserole can be refrigerated overnight at this point.
  • Bake at 350 for 30 minutes, until center is set. Cool for 10 minutes before cutting.
