Steps:
- In a bowl, cream butter and sugars. Add eggs, 1 at a time, beating well after each addition. Combine flour, baking powder and baking soda; add alternately with sour cream to creamed mixture, beating well after each addition. Fold in sausage and blueberries., Pour into a greased 13x9-in. baking pan. Sprinkle with pecans. Bake at 350° for 35-40 minutes or until cake tests done. , For sauce, combine sugar and cornstarch in a saucepan. Add water and blueberries. Cook and stir until thick and bubbly. Spoon over individual servings. Refrigerate leftover cake and sauce.

EASY SAUSAGE BLUEBERRY MUFFIN BREAKFAST CAKE
This sounded SO gross to me when I first heard of it at a church breakfast...sausage with blueberries?! After about a month of them pestering me to try it, I did and can't ever get enough! Very easy to make and a big hit with children! Cook time includes about 10 minutes to brown sausage.

Steps:
- Other ingredients will vary according to box directions, such as eggs, oil, etc.
- Brown sausage in a frying pan; drain.
- Prepare both boxes of blueberry muffin mix, according to directions, in a large bowl.
- Add sausage and pour into a 9X13 baking dish.
- Cooking times will vary, but mine is usually done in about 30 minutes, or until golden on top.
- Use a toothpick to test for doneness if you are unsure.
- Cut into squares.
SAUSAGE, BACON AND EGG BREAKFAST BUNDT CAKE

Steps:
- Preheat oven to 350.
- Brown sausage and cook bacon, quarter biscuits, and dice onion.
- Mix all ingredients well in a large bowl.
- Spray a large bundt pan with nonstick spray and pour in mixture.
- Bake at 350 for 30 minutes.
- Cool at least 5 minutes before attempting to remove from pan.
- Slice and serve immediately, or take it to the office!

This is a wonderful breakfast cake that includes sausage. It's wonderful spices fill the air as you bake it making your house smell as good as it tastes! It's an 'in a hurry, out the door' morning food that you don't even mind giving the kids.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Place raisins in a bowl and cover with boiling water; set aside for 5 to 10 minutes. Drain well and dry raisins in cloth, set aside.
- Place sausage in a large, deep skillet. Cook over medium-high heat until lightly brown. Drain, crumble into small pieces and set aside.
- In a large bowl, combine sausage, white sugar and brown sugar; stir until mixture is well blended. Add eggs and beat well.
- In a separate bowl, sift together flour, ginger, baking powder and pumpkin pie spice. Stir baking soda into coffee. Add flour mixture and coffee alternately to meat mixture, beating well after each addition. Fold raisins and walnuts into cake batter. Turn batter into well-greased and floured Bundt cake pan.
- Bake in preheated oven for 75 to 90 minutes until done. Cool 15 minutes in pan before turning out onto serving platter.

- In a mixing bowl, cream butter and sugars.

- Combine flour,baking powder and baking soda.

- (At this point, you can cover and chill overnite then in morning bake as directed) Bake 350 degrees F for 35-40 minutes or til cake tests done.

- Add water and blueberries.
- Cook and stir til thick and bubbly.
- Spoon over individual servings.
- (Leftovers- spread sauce over cake, cover and refrigerate).
BLUEBERRY SAUSAGE BREAKFAST CAKE

- In a medium bowl, mix together the flour baking powder and baking soda; set aside. In a large bowl beat the butter until fluffy then add the sugars and beat until well combined. Add eggs, 1 at a time, and beat well after each addition. Add the flour mixture alternately with the sour cream. Mix just until combined. Fold in the sausage and blueberries. Pour the batter into a greased 9-in by 13-inch pan. Sprinkle the nuts over the top. At this point you can either cover the batter and refrigerate it until morning or bake it right away. When you are ready, bake it at 350 F for 35 to 40 minutes, or until a tester inserted in the center comes out clean. Serve warm with Blueberry Sauce. Bring first 5 to boil add rest till thickened.
BREAKFAST CAKE WITH SAUSAGE AND APPLES
This is awesome. It is a mixture of browned sausage and sliced sweet apples, wrapped up in a bundle of refrigerator cinnamon rolls and baked in a Bundt® or angel food cake pan. Top with dusted powdered sugar or the frosting that comes with the rolls, it looks like you slaved for hours. You can serve it like pull-apart bread but be careful-you may lose the sausage and apple pieces when pulling it apart.

- Heat a nonstick skillet over medium-low heat. Add sausage links and cook, turning often, until cooked through and browned, 12 to 16 minutes. Remove from the heat and cut links into 1/2-inch pieces.
- While the sausages are cooking, preheat the oven to 350 degrees F (175 degrees C). Spray the bottom, sides, and center of a fluted tube pan (such as Bundt®) with nonstick spray.
- Open cinnamon rolls and set frosting packages aside. Separate rolls and layer, with sides touching, to completely cover the bottom, sides, and center of the pan. Reserve several rolls for the top.
- Dump apple pie filling into a bowl. Use 2 knives and cut apples in opposite directions (crisscross) into 1/2-inch pieces. Add sausage slices, cinnamon, and allspice; gently stir until blended, being careful not to break up the apples any more. Spoon apple-sausage mixture into the cinnamon roll-lined pan, distributing it evenly around the pan. Lay cinnamon rolls on top to completely seal the apple mixture inside the rolls. You may not use all of the rolls.
- Bake in the preheated oven until cinnamon rolls are brown, about 20 minutes. Remove from the oven and let sit for 5 minutes. Run a table knife around the edges to loosen. Invert carefully onto a serving plate or cooling rack. Let cool, about 30 minutes.
- While the cake is cooling, warm icing packets in hot water. Drizzle icing over top of the cake. Cut into slices and serve.

SAVORY SAUSAGE BREAKFAST CAKE
Steps:
- 1. Preheat the oven to 400 degrees. Grease an 8 by 8 inch baking dish. 2. Break the sausage into pieces and place in a skillet. Cook the sausage until it is beginning to brown and has rendered some of its fat, breaking it into small pieces as you cook. Add the onion and continue to cook until the sausage is browned and no longer pink in the middle and the onions are soft. Drain well and leave to cool slightly. 3. Place the cooled sausage and onion into a bowl and add the cheddar cheese and sage. Toss to combine. Add the lightly beaten egg and stir to mix everything together well. 4. In another bowl, stir the flour, baking powder and baking soda together with a fork. Add the milk and mayonnaise and stir with the fork to combine. Pour 1/2 of the batter into the prepared pan and spread to cover the bottom. Spread the sausage and cheese mixture evenly over the batter in the pan, then spread the remaining batter over the top. Do the best you can, but it will not cover the top of the sausage mixture and that's fine. 5. Bake the cake for 20 - 25 minutes until firm and golden. Serve warm.
