2 cups pineapple chunks
1 cup vanilla yogurt
1 cup fresh or frozen raspberries
1/2 cup chopped dates or raisins
1 cup sliced ripe banana
1/4 cup sliced almonds

Steps:

  • In 4 parfait glasses or serving dishes, layer the pineapple, yogurt, raspberries, dates and banana. Sprinkle with almonds. Serve immediately.

Apple Cinnamon Greek Yogurt Breakfast Parfaits image

Honey, vanilla, and cinnamon stirred into Greek yogurt and then layered with crisp apples and applesauce. We love this as a fancy fall breakfast, but it passes just as easily for a surprisingly decadent dessert.

1 1/2 cups Greek yogurt (I use 2%)
2 tablespoons honey
1 teaspoon vanilla
1 teaspoon ground cinnamon
1 medium crisp apple (I like honeycrisp, gala, or pink lady for these, cored and diced)
1/4 cup applesauce
Additional honey and cinnamon for topping (if desired)

Steps:

  • Have two sturdy glasses, mason jars, or mini trifle bowls ready.
  • To a medium bowl, add the yogurt, honey, vanilla, and cinnamon. Stir well to combine.
  • Grab 1/4 of the apples and sprinkle them at the bottom of the glasses. Add 1/3 of the yogurt, a few spoonfuls each. Depending on the size of your glass, you may need to spread the layers gently with the back of a spoon to distribute to the edge of the glass. Top with more apples (1/4), then more yogurt (1/3). Add all of the applesauce (2 tablespoons per glass), then more apples (1/4). Top with remaining yogurt and sprinkle with remaining apples. Drizzle with a little more honey and sprinkle with cinnamon if desired. Serve.

1 teaspoon grated orange zest

Steps:

  • Mix yogurt and orange zest together in a bowl.
  • Layer some of the strawberries, yogurt mixture, granola, and blueberries in a parfait glass. Repeat layers until all the ingredients are used up.

6-1/2 cups frozen unsweetened raspberries
1/4 cup packed brown sugar
1/4 cup orange juice
2 tablespoons cornstarch
1/2 teaspoon grated orange zest
2 cups fresh blueberries
2 cups fresh blackberries
2 cups granola without raisins
4 cups vanilla Greek yogurt
Additional brown sugar, optional

Steps:

  • Place raspberries and brown sugar in a blender; cover and process until pureed. Press through a sieve; discard seeds. , In a small saucepan, combine the raspberry puree, orange juice, cornstarch and orange zest. Cook and stir over medium heat until thickened and bubbly. Reduce heat to low; cook and stir 2 minutes longer. Remove from the heat; cool., In eight parfait glasses, layer half of the raspberry sauce, berries, granola and yogurt. Repeat layers. Sprinkle with additional brown sugar if desired. Serve immediately.

1/2 cup blackberries
1/2 cup blueberries
1/2 cup thinly sliced strawberries
1 cup plus 2 tablespoons Fig Compote, recipe follows
3 cups 2% Greek yogurt
3/4 cup Fruit-and-Nut Trail Mix, recipe follows
3 cups fresh black mission figs (about 20 ounces), roughly chopped
1/2 cup coconut sugar
2 tablespoons white wine vinegar
1 tablespoon orange zest
1/2 cup freshly squeezed orange juice (from about 2 oranges)
1 teaspoon ground cinnamon
Kosher salt
1 tablespoon honey
3 cups walnuts (about 12 ounces)
2 cups cashews with sea salt (about 10 ounces)
1 cup coconut flakes
1/2 cup pepitas (about 2 1/2 ounces)
2 tablespoons melted coconut oil
Kosher salt
1/2 cup banana chips
1/2 cup goji berries
1/2 cup chopped dried pineapple
1/4 cup carob chips, optional

Steps:

  • Mix together the blackberries, blueberries and strawberries in a bowl. Put 2 tablespoons Fig Compote in the bottom of six parfait glass. Top with 1/4 cup yogurt, followed by 1/4 cup of the mixed berries. Add another layer of yogurt, and then top with 1 tablespoon Fig Compote and 2 tablespoons Fruit-and-Nut Trail Mix. Serve immediately.
  • Combine the figs, sugar, vinegar, orange zest and juice, cinnamon and 3/4 teaspoon salt in a medium pot over medium-high heat; bring to a boil. Begin to break down the figs with a potato masher or the edge of a wooden spoon. Continue to boil until the compote has thickened enough to resemble a chutney and a wooden spoon drawn through the mixture leaves a track behind it, 5 to 6 minutes. Remove from the heat and let cool completely, about 15 minutes.
  • Stir in the honey and season with salt. Store in an airtight container in the refrigerator for up to 2 weeks.
  • Preheat the oven to 375 degrees F.
  • Combine the walnuts, cashews, coconut flakes and pepitas in a large bowl; toss with the coconut oil and some salt. Spread the mixture evenly onto a baking sheet. Bake until toasted and fragrant, 10 minutes. Let cool completely, at least 20 minutes.
  • Mix in the banana chips, goji berries and dried pineapple. Stir in the carob chips if you want a bit of "chocolate" with your trail mix! Serve immediately or store in an airtight container at room temperature.

Dash salt
1/3 cup uncooked couscous
1/2 cup reduced-fat sour cream
1/2 cup lemon yogurt
1 tablespoon honey
1/4 teaspoon grated lemon zest
1 cup sliced peeled kiwifruit
1 cup fresh blueberries
1 cup fresh raspberries
Chopped crystallized ginger and minced fresh mint

Steps:

  • In a small saucepan, bring milk and salt to a boil. Stir in couscous. Remove from the heat; cover and let stand for 5-10 minutes or until milk is absorbed. Fluff with a fork; cool., In a small bowl, combine the sour cream, yogurt, honey and lemon zest. Stir in couscous., Combine the kiwi, blueberries and raspberries; spoon 1/4 cup into each of six parfait glasses. Layer with couscous mixture and remaining fruit. Garnish with ginger and mint.
