BREAKFAST OF CHAMPIONS
I had this for breakfast at my friend's place. Didn't leave until i got the recipe from her cook! Bacon,onions,cheddar cheese, tomato, milk and eggs in 1 dish! It will keep you going the whole day! Serve on toast, its a great way to start your morning.

Steps:
- Cook chopped bacon in a hot skillet till oil oozes out.
- Add in onions and saute till fragrant.
- Dump in minced tomato and let cook till soft.
- Add in the cubed cheese and blend to let it melt.
- Add the milk to the eggs and beat together.
- Pour on bacon mixture and keep stirring, make sure it will not set.
- Mixture has to be lumpy.
- Dish up and sprinkle with chopped chives.
- Great on toasts!

This is a great mexican breakfast dish, not for dieters. The tomato sauce you can find in the mexican isle of your local grocery store. It's a yellow can with a duck on it. Enjoy!

Steps:
- Mix eggs in bowl, add salt and pepper to taste.
- Cut tortillas in triangle sized chips.
- Heat oil in skillet on medium heat and add corn tortillas in a single layer, cook until crispy and golden, remove and drain on paper towels.
- Add garlic and chopped onion to skillet. (you may need to add another teaspoon of oil to pan).
- Brown for a second and return corn chips to skillet.
- Add eggs covering the corn chips, continuing to cook eggs thoroughly.
- Add oregano and Pato Sauce and stir, cook for another minute or two and remove from heat.
- Add cheddar cheese as topping to melt.
- Sprinkle with queso fresco.
- Top with chopped green onion for garnish.
- Serve with sour cream to taste.

- Beat the eggs and add them to the chorizo.

- Separate the halves of the English muffins and spread them with some of the butter. Set them face down on a griddle to lightly brown. Set aside.
- Add 1 tablespoon of the butter to a skillet over medium heat. Cut the ham into small circles with a biscuit cutter or ring cutter and quickly brown in the skillet.
- In the same skillet (or a separate one if you run out of room), place 6 egg rings into the pan and brush with butter all over the interior of the rings. Crack an egg into each ring. Sprinkle with salt and pepper and cook. Flip the eggs over when the white is 80 percent set, after 3 or 4 minutes, and cook about 30 seconds to 1 minute more.
- Lay out the muffins in a row with the bottoms down and the tops ready to go on. Lay a slice of cheese on each. Lay a slice of ham on each. Lay an egg on each. Put the tops on. Immediately wrap them in a foil bag to lock in the heat.
