1 pint/tub bocconcini, small bites fresh mozzarella in water
1 slice, 1/4-inch thick slice prosciutto
1 pint multi-colored baby or grape tomatoes or red grape tomatoes
4 thin scallions, whites and greens, trimmed
A handful basil leaves, thinly sliced
A handful flat-leaf parsley, finely chopped
3 tablespoons extra-virgin olive oil
Salt and freshly ground black pepper
8 slices peasant bread

Steps:

  • Halve the cheese bites and add to a serving bowl. Finely dice the ham, then halve the tomatoes and add to bowl with the cheese. Thinly slice the scallions and herbs, add to the bowl and dress salad with a liberal dose of olive oil, and salt and pepper, to taste. Char the bread in a hot oven or under the broiler and serve with the salad for topping.

RHUBARB AND STRAWBERRY BREAKFAST CROSTINI



Rhubarb and Strawberry Breakfast Crostini image

You'll get about five cups of preserves from this recipe. Try leftovers alongside soft cheeses or over vanilla ice cream. Fresh ricotta is available at some supermarkets and at specialty foods stores and Italian markets.

Yield Makes 6 servings

Number Of Ingredients 8

1 1/2 pounds trimmed rhubarb, cut into 1-inch pieces
1 cup sugar
1/2 cup fresh orange juice
1/4 cup fresh lemon juice
2 tablespoons minced peeled fresh ginger
2 1-pint containers fresh strawberries, hulled, quartered lengthwise
1 cup fresh ricotta cheese
12 diagonal baguette slices, toasted

Steps:

  • Preheat oven to 350°F. Combine first 5 ingredients in 13x9x2-inch glass baking dish. Cover with foil; bake until rhubarb is soft, about 1 hour. Remove from oven. Mix strawberries into rhubarb mixture in baking dish. Cover; let stand at room temperature 5 minutes. Uncover; cool to room temperature. Cover and chill.
  • Spread ricotta cheese over toasts. Top with generous spoonful of preserves.
