ALL IN ONE BREAKFAST CASSEROLE WITH A TWIST
This is a casserole that is easy to prepare and quite different. The twist? Using hard boiled eggs and sweet potatoes! The flavors are amazing! - 1. Preheat oven at 350 degrees Spray your sheet pan, 9 x 13, with olive oil. You can use any brand or kind of spray, this is what I use. peel and grade your potatoes, set aside.
- 2. Cook your sausage and bacon, crumble and set aside. Boil your eggs, peel and smash. (Should be 2 cups) Diced your onions and peppers, set aside.
- 3. Pan fry your white and sweet potatoes together in vegetable oil and 2 tablespoons unsalted butter. After they have browned and tender, place in your pan.
- 4. In the same frying pan cook your onions and peppers until tender.
- 5. Start layering up your ingredients: Potatoes cheese sausage eggs scallions & pepper mix Bacon top with more cheese
- 6. Place in your preheated oven (350 degrees) for about 30 minutes or until all ingredients are hot and the cheese is melted.
- 7. Optional: 1: When serving, using the same pan, fry up a few soft cooked eggs and place on top each serving. 2: Pour white gravy on top!

While looking for something a little different, I concocted this from a number of different sources and it was well received at potlucks. You can substitute egg substitute and reduce milk a little and it works well. Baking time may vary

- Trim crust from bread and cut in 2 inch cubes Spray 9 X 13 Casserole dish with nonstick spray and put cubed bread in the dish Brown and drain sausage Add chopped peppers and olives and stir into mixture (heat through only) Combine beaten eggs, dry mustard, and 2 cups of milk in a bowl.
- Layer sausage mixture on top of bread Layer Cheese on top of sausage mixture Layer Sliced Mushrooms on top of Cheese Pour egg mixture into dish, cover and refrigerate overnight When ready to bake, combine soup and 1/2 cup milk and pour over top of dish Bake in preheated 350 degree oven for 1 1/2 to 2 hours.
- (Check to make sure egg mixture is cooked in the middle of the dish).
- I forgot to add the eggs. Use 8 large eggs. Mix and pour over the layered mixture. Egg substitute works well by reducing the milk by 1/2 cup ..
