1 ½ cups whole wheat flour
⅓ cup organic sugar
1 ½ teaspoons baking soda
1 ½ teaspoons baking powder
1 tablespoon ground cinnamon
1 teaspoon ground cardamom
2 teaspoons ground ginger
½ teaspoon ground cloves
½ teaspoon kosher salt
½ cup quick oat
3 cups shredded carrots, about 3 large carrots
1 ½ cups crushed pineapple, 1 can, drained, juice reserved
3 large eggs, beaten
¼ cup butter, 1/2 stick, melted
1 cup walnuts, chopped, optional
1 cup plain greek yogurt
1 tablespoon maple syrup

Steps:

  • Preheat the oven to 375˚F (190˚C). Generously grease a 9 x 4 (22 x 10 cm) loaf pan with oil.
  • In a large bowl, sift together the flour, sugar, baking soda, baking powder, cinnamon, cardamom, ginger, cloves, and salt. Add the oats and whisk to combine.
  • In a separate large bowl, combine the shredded carrots, pineapple, eggs, and melted butter. Mix well.
  • Add the wet ingredients to the dry ingredients and stir until there are no dry clumps left. Gently fold in the walnuts, if using.
  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake for 1 hour, until a toothpick inserted in the center of the bread comes out clean.
  • While the bread is baking, make the Greek yogurt "frosting": In a small bowl, combine the Greek yogurt, maple syrup, and 2 tablespoons of the reserved pineapple juice. Stir until well incorporated. Chill in the refrigerator until ready to use.
  • Remove the bread from the oven and allow to cool for 10 minutes, until safe to handle. Remove from the loaf pan and let cool completely on a wire rack.
  • Slice the bread and serve with a smear of frosting.

Steps:

  • 1. Preheat the oven to 375 degrees In a large bowl, cream together ingredients until they form fine crumbs. Take out 1/2 cup of the crumbs, and put it aside for the topping (this is where I sometimes add cinnamon)
  • 2. Add cup of milk and mix until smooth. Pour the batter into an 8 inch greased cake pan. Sprinkle the 1/2 cup of crumbs over the batter. Bake at 375 degrees for 30 minutes or until a toothpick inserted in the middle comes out clean.

1 (3 1/2 ounce) package instant vanilla pudding
3/4 cup oil

1/2 cup sugar
1/2 cup nuts (optional)
2 teaspoons cinnamon
1 cup powdered sugar
2 tablespoons butter
1 teaspoon butter flavoring

Steps:

  • Beat together first four ingredients. Then add eggs one at a time - ( but beat less than two minutes).
  • Pour 1/2 batter in a 9x13 pan or Bundt pan and pour 3/4 of the filling on top. Pour remaining batter over filling. Sprinkle remaining filling on top (not too much though as the sugar can burn).
  • Bake at 350°F for 55 minutes (usually not this long).
  • Glaze-----Heat glaze ingredients until near boiling and glaze while cake is still warm from oven.
  • NOTES---I have found that the glaze is hit or miss, some people like it some do not. I have started experimenting with different glazes and have found that a thicker glaze works better for my taste -- DH says it doesn't even need a glaze the cake is so good!

2 cups all-purpose flour
1/2 cup sugar
2 teaspoons baking powder
1 large egg, lightly beaten
1/2 cup milk
1/4 cup butter, softened
1 teaspoon grated lemon zest
2 cups fresh or frozen blueberries
TOPPING:
1/3 cup sugar
1/4 cup all-purpose flour
1/4 cup finely chopped walnuts
1/2 teaspoon ground cinnamon
3 tablespoons cold butter

Steps:

  • In a bowl, combine flour, sugar and baking powder. Add egg, milk, butter and lemon zest; mix just until dry ingredients are moistened. Fold in the blueberries. Spread in a greased 9-in. square baking pan. For topping, combine sugar, flour, walnuts and cinnamon. Cut in butter until mixture is crumbly. Sprinkle over batter. Bake at 350° for 40-45 minutes or until cake tests done.

Easy Sausage Blueberry Muffin Breakfast Cake image

This sounded SO gross to me when I first heard of it at a church breakfast...sausage with blueberries?! After about a month of them pestering me to try it, I did and can't ever get enough! Very easy to make and a big hit with children! Cook time includes about 10 minutes to brown sausage.

2 packages of real blueberry muffin mix
1 lb roll of pork sausage

Steps:

  • Other ingredients will vary according to box directions, such as eggs, oil, etc.
  • Brown sausage in a frying pan; drain.
  • Prepare both boxes of blueberry muffin mix, according to directions, in a large bowl.
  • Add sausage and pour into a 9X13 baking dish.
  • Cooking times will vary, but mine is usually done in about 30 minutes, or until golden on top.
  • Use a toothpick to test for doneness if you are unsure.
  • Cut into squares.

I made this for a friend who has a deep love for bacon. It reminds me a lot of pancakes and bacon.

12 slices bacon
¼ cup packed brown sugar
1 (9 ounce) package white cake mix, batter prepared as directed on package
1 teaspoon maple flavored extract
¼ cup maple syrup

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 9 inch round cake pan.
  • Place the bacon in a large, deep skillet; cook over medium-high heat, turning occasionally, until lightly browned but still soft, about 7 minutes. Drain the bacon slices on a paper towel-lined plate. Place the bacon on the bottom of the greased cake pan, overlapping slices as necessary to fit. Sprinkle the bacon strips with the brown sugar.
  • Combine the prepared cake batter, maple extract, and maple syrup in a large bowl, mixing well. Pour the batter over the brown sugar and bacon in the cake pan.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, 15-20 minutes. Cool cake slightly and remove from pan by inverting onto a serving platter. Cut into wedges to serve.
