In order not to waste egg yolks and to save time, I like to use a carton of liquid egg whites. Egg whites tend to be rubbery, so adding in the cottage cheese helps make them creamier. You can store extras in the freezer and reheat as needed.

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 12-cup muffin pan generously with cooking spray.
  • Combine egg whites, cottage cheese, garlic powder, salt, and pepper in a blender; blend until smooth, about 15 seconds.

3 cups frozen hash brown potatoes, thawed
½ cup Cheddar cheese
¼ teaspoon salt
¼ teaspoon ground black pepper
1 tablespoon canola oil
1/4 (1-pound) package Jimmy Dean Premium Pork Sausage
¼ cup diced red bell pepper
¼ cup diced white onion
1 (4 ounce) can chopped green chilies
12 large eggs

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Lightly spray a muffin tin with cooking spray.
  • In a bowl, mix thawed hash browns, cheese, salt, and pepper. Evenly distribute the mixture in the muffin cups, pressing down the bottoms and up on the sides to create "cups." Bake for 20 minutes, or until golden brown around the edges.
  • In a small frying pan, heat 1 tablespoon of oil over medium-high heat for about 30 seconds. Add Jimmy Dean sausage and cook for 8 to 10 minutes, until browned, stirring frequently to break up the sausage into small pieces. Drain.
  • In a bowl, mix the cooked Jimmy Dean sausage with the bell pepper, onion, and green chili.
  • Carefully remove the muffin tin from the oven and fill halfway with the sausage and pepper mix. Top each cup with 1 raw egg.
  • Place the muffin tin back in the oven for about 10 minutes, or until the eggs have set to your liking.

1 cup milk
12 eggs
2/3 cup grated Cheddar cheese
2/3 cup diced ham
1 teaspoon salt

1/2 tablespoon chopped fresh rosemary leaves, if desired

Steps:

  • Heat oven to 375°F. Spray 12 regular-size muffin cups with cooking spray
  • In medium bowl, mix Bisquick mix and milk with wooden spoon to form thick dough. Dump out onto floured surface, and use a floured rolling pin to roll it 1/4 inch thick. Cut into rounds with 3- or 4-inch round cutter.
  • Press the rounds into muffin cups. Sprinkle cheese in each cup, followed by a few cubes of ham. Crack the eggs individually into small bowl, then gently slide 1 egg into each muffin cup. Top with remaining cheese and ham. Sprinkle with salt, pepper and rosemary.

1/2 cup honey
1 teaspoon vanilla

Steps:

  • In a medium large bowl, pour the Peanut Butter Whole Grain Cheerios into the bowl.
  • In a different medium size bowl, measure and scrape out the crunchy peanut butter and microwave for 40 seconds.
  • Take out, stir, and add the 1/2 cup honey.
  • Add the vanilla, and mix in until well-combined.

1 tablespoon butter or 1 tablespoon margarine
6 eggs
1 (12 ounce) package hormel little sizzlers pork sausage links, cut into small pieces
1/2 cup finely chopped onion
1/2 cup finely chopped green pepper
1/8 teaspoon garlic powder
1 1/2 cups dry biscuit mix
2 cups shredded sharp cheddar cheese

Steps:

  • Heat oven to 375º F.
  • Lightly grease baking sheet.
  • In large skillet, over medium-high heat, melt butter. Add eggs. Cook 4 to 5 minutes or until lightly scrambled and very softly set, stirring frequently. Set aside to cool slightly.

These are so darling and would be a wonderful surprise for a little breakfast in bed or that special someone. The recipe is here but anyone could use their favorite pancake recipe and do these! I found them displayed at our local upscale Nugget Market and thought you all would enjoy!

1 1/4 c buttermilk
1/2 c melted unsalted butter
2 large eggs
2 Tbsp granulated sugar
1 tsp kosher salt
1 tsp baking soda

1 pt berries (your choice)
2 tsp canola oil
1/4 c powdered sugar
bamboo skewers or fancy picks

Steps:

  • 1. In a medium bowl, whisk together all ingredients except oil, berries and powdered sugar (some lumps will remain) and set aside to rest. Heat a large nonstick skillet, frying pan, or griddle over medium heat. Add canola oil to pan, then ladle 1 tablespoon batter for each pancake and cook until bubbles cover the top, about 2 minutes. Flip and cook until golden brown, another 1 minute; repeat with remaining batter. Skewer 3-5 pancake coins on a bamboo skewer & top with a berries and powdered sugar.

I am going through so much oat milk that it has had me creating loads of new recipes for the pulp. so don't forget to check out the recipes with the oat pulp and the oat milk it's self. So far I have made a seeded bread, muffins, donuts, a suet cake, apple cake, cookies and apple pancakes

3/4 cup(s) oat pulp (1 1/2 recipe of oat milk to create this amount of pulp)
1 1/2 cup(s) buttermilk pancake mix
1 large egg
1 tablespoon(s) cinnamon sugar
1 tablespoon(s) sesame seeds

Steps:

  • Mix well, it will be stiff. put in fridge for 1/2 hour and drop by spoonfuls into hot oil. Turn and cook completely. remove and roll in cinnamon sugar.
  • can be served plain on the run like donuts or with syrup (to dunk in) in place of pancakes.
  • the oat pulp should be well drained of milk and look like this.

  • Combine prunes, oats, and coconut in a food processor. Process until prunes soften and mixture comes together like a dough. Roll into bite-sized pieces.

Eggs and bacon pair with Mexican flavors in this bite-size tortilla cup that is packed with flavor!

6 Old El Paso™ flour tortillas for burritos (8 inch; from 11-oz package)
12 eggs
1/2 cup cooked bacon bits
1/4 cup canned Old El Paso™ refried beans
1/4 cup shredded Cheddar cheese (1 oz)
Green onion, chopped, if desired
Sour cream, if desired
Old El Paso™ Thick 'n Chunky salsa, if desired

Steps:

  • Heat oven to 350° F. Spray 12 regular-size muffin cups with cooking spray.
  • Using 4-inch round cookie cutter, cut 2 rounds from each tortilla. Place rounds on microwavable plate; microwave uncovered on High 15 seconds to soften. Place 1 in each muffin cup, using bottom of small glass to press into each cup.
  • In large bowl, beat eggs until fluffy. Fold in bacon bits. Heat 10-inch skillet over medium-low heat; pour egg mixture into pan. Scramble eggs until fluffy.
  • Place 1 teaspoon beans in bottom of each tortilla-lined cup; add 1/4 cup egg mixture to each cup. Top each with 1 teaspoon cheese.
  • Bake 18 to 20 minutes or until cheese is melted and tortillas are crisp.
  • Top with remaining ingredients; serve immediately.

FOOD FOR THOUGHT! As I made these Breakfast Bites; I thought they would make a nutritious, quick and delicious breakfast for school children (and we grown folks too). You can buy egg bites in the freezer section; but it is very quick and less expensive to make your own. And you don't have preservatives & can control the ingredients. Children (and all of us-the truth be known) need a good breakfast. Most teachers will tell you they can tell which students had breakfast and which ones didn't. Without a good nutritious breakfast & good night's sleep; they give out of steam before lunchtime.

7 large eggs or you can use egg beaters
1/2 teaspoon(s) kosher salt
1/4 cup(s) milk
1 1/2 cup(s) shredded monterey jack & cheddar cheese, divided
6 slice(s) cooked oscar mayer turkey bacon; ( or any brand) and torn into bite size pieces; or 3/4 cup real cooked bacon bits
**note: sometimes i use cooked and torn ham or turkey in place of the bacon
OPTIONAL FOR VEGETARIAN OR ADDITIONS: CAN ADD IN PLACE OF THE MEAT; OR IN ADDITION TO THE MEAT.
1 large sweet yellow or vidalia onion, chopped
3/4 cup(s) red bell and green bell pepper (or yellow or orange); cut in small strips; and each strip cut in halves or thirds
1 tablespoon(s) olive or vegetable oil.

Steps:

  • 1. Preheat oven to 350°F. Spray a 24-cup mini muffin pan with non-stick cooking spray and set aside. OR Can use regular muffin tins; just cook longer. NOTE: They work best when putting the batter directly in the muffin tins. The muffin papers seem to stick to the batter and break apart when you try to get them out of the papers.
  • 2. In a large bowl, whisk together the eggs until smooth. Add the salt, milk, 1 cup cheese and Bacon (or bacon bits or ham, etc) and mix until well combined.
  • Optional addition of bell peppers and onions: Saute onions and peppers in the olive oil, to make them softer. You can cook them ahead of time and add them to the batter with the meat and cheese---or leave out the meat if you want them to be vegetarian.
  • 3. Spoon the mixture into the regular-sized or mini muffin cups, filling each one 2/3 full. Sprinkle remaining 1/2 cup cheese evenly over filled muffin cups.
  • 4. Bake for 23-25 minutes or until the tops and edges start to turn golden. Let set in pan 5 minutes before gently lifting each one out with a table knife.
  • Enjoy!!
  • NOTE: Store in an airtight container in the refrigerator for up to 5 days. Reheat in a warm oven or in the microwave for 20-30 seconds. . You can put them in sandwich bags or wrap in plastic wrap, if desired.
