CINNAMON ROLL BREAKFAST CASSEROLE WITH SPICED APPLES



Cinnamon Roll Breakfast Casserole with Spiced Apples image

This gooey, refrigerated cinnamon roll dish layered with homemade spiced apples is good for breakfast, brunch, or dessert.

3 medium Granny Smith apples, peeled and diced
½ cup brown sugar
½ cup maple syrup, divided
3 teaspoons ground cinnamon, divided
½ teaspoon ground nutmeg
½ cup milk
2 large eggs
2 (17.5 ounce) cans refrigerated cinnamon roll dough with icing

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Place diced apples in a large skillet over medium heat with brown sugar, 1/2 cup maple syrup, 2 teaspoons cinnamon, and nutmeg. Mix together and simmer until apples are tender, 10 to 15 minutes. Drain apples and set aside.
  • Meanwhile, whisk milk, eggs, and remaining 1 teaspoon cinnamon together in a bowl.
  • Open 1 tube cinnamon rolls; set icing aside. Cut each cinnamon roll into 6 pieces. Place all pieces into the milk mixture and mix around until fully covered. Remove from the milk mixture and press into the bottom of the prepared baking dish.
  • Evenly place spiced apples on top of the cinnamon roll layer. Open remaining tube of cinnamon rolls and repeat step 4 (cutting and coating cinnamon rolls), then press on top of the apples to form a top layer. Drizzle remaining 1/4 cup maple syrup over top.
  • Bake in the preheated oven until the top is golden brown and puffy, 30 to 35 minutes.
  • Heat 2 icing packets in the microwave for 5 to 10 seconds; drizzle over the casserole. Serve immediately.

An old recipe that I just stumbled over again. Tastes great on homemade biscuits. With some grits and eggs and you have a real "southern" breakfast treat.

1 cup sugar
1 teaspoon cinnamon
1/4 teaspoon nutmeg
4 -5 large cooking apples (such as Granny Smith)
2 tablespoons water
1/4 cup butter

Steps:

  • Combine sugar, cinnamon and nutmeg.
  • Pare apples and chop into bite sized pieces.
  • Put in a 4 C measure and sprinkle with cinnamon and sugar as you add the apples.
  • When you have 4 cups, put apples, water and butter into a saucepan.
  • Cover and cook over low to medium heat, stirring once or twice, for 15-20 minutes or until apples are tender.

BREAKFAST CAKE WITH SAUSAGE AND APPLES



Breakfast Cake with Sausage and Apples image

This is awesome. It is a mixture of browned sausage and sliced sweet apples, wrapped up in a bundle of refrigerator cinnamon rolls and baked in a Bundt® or angel food cake pan. Top with dusted powdered sugar or the frosting that comes with the rolls, it looks like you slaved for hours. You can serve it like pull-apart bread but be careful-you may lose the sausage and apple pieces when pulling it apart.

14 links breakfast sausage
nonstick cooking spray
3 (12.4 ounce) packages refrigerated cinnamon roll dough with icing
1 (15.25 ounce) can apple pie filling
1 teaspoon ground cinnamon, or to taste
½ teaspoon ground allspice, or to taste

Steps:

  • Heat a nonstick skillet over medium-low heat. Add sausage links and cook, turning often, until cooked through and browned, 12 to 16 minutes. Remove from the heat and cut links into 1/2-inch pieces.
  • While the sausages are cooking, preheat the oven to 350 degrees F (175 degrees C). Spray the bottom, sides, and center of a fluted tube pan (such as Bundt®) with nonstick spray.
  • Open cinnamon rolls and set frosting packages aside. Separate rolls and layer, with sides touching, to completely cover the bottom, sides, and center of the pan. Reserve several rolls for the top.
  • Dump apple pie filling into a bowl. Use 2 knives and cut apples in opposite directions (crisscross) into 1/2-inch pieces. Add sausage slices, cinnamon, and allspice; gently stir until blended, being careful not to break up the apples any more. Spoon apple-sausage mixture into the cinnamon roll-lined pan, distributing it evenly around the pan. Lay cinnamon rolls on top to completely seal the apple mixture inside the rolls. You may not use all of the rolls.
  • Bake in the preheated oven until cinnamon rolls are brown, about 20 minutes. Remove from the oven and let sit for 5 minutes. Run a table knife around the edges to loosen. Invert carefully onto a serving plate or cooling rack. Let cool, about 30 minutes.
  • While the cake is cooling, warm icing packets in hot water. Drizzle icing over top of the cake. Cut into slices and serve.

3/4 cup raisins

This is a recipe from the Bagley House Bed and Breakfast. It is their most requested recipe and is an adapted version of Miss Bobo's Apple Goodie recipe from Lynchburg, Tennessee. It's very much like an apple crisp. Their recipe gives instructions to clean the dish as soon as possible or reheat adding water and a few drops of dishwashing soap to help remove the caramelized sugar. I didn't and boy do I wish I had. The recipe reads 4-5 servings, but because it is so sweet, I cut down on how much to serve. I did not time the preparation.

3 apples (3-4 large Granny Smith)
1 cup sugar
1 tablespoon all-purpose flour
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
3/4 cup oats, uncooked
3/4 cup brown sugar, dark, packed (I used light)
3/4 cup all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon baking powder
1/2 cup butter, melted

Steps:

  • Peel and thinly slice apples. Combine apples, sugar, one tablespoon flour, cinnamon, and salt and place in a WELL greased casserole dish. (I used a rectangular pan.) Mix oats, brown sugar, flour, baking soda, and baking powder. Sprinkle over apple mixture. Pour butter over all. Bake at 350 degrees for about 40 minutes. Some of the mixture didn't get butter on it, so I used a fork and gently pressed the mixture and butter together.

½ pound dried red kidney beans
1 lb. pound breakfast sausage
1 large onion, chopped
3 large garlic cloves, minced
2 large Granny Smith apples, cored, unpeeled, cut into 1 inch chunks
½ cup packed dark brown sugar
3 T chili powder
1 ½ t dried mustard
15 oz. tomato sauce
sour cream for garnish

Steps:

  • Soak kidney beans overnight. Drain, cover with water and cook over low heat until the skin begins to break but the beans are still slightly hard. Drain beans reserving 2 cups of the liquid. In a large, heavy pot, brown breakfast sausage breaking into 1" pieces. When the sausage is pink, add the chopped onion. Continue to brown the sausage; drain off any fat. Add to the pot, the garlic, apples, sugar, chili powder, mustard, tomato sauce, reserved bean liquid, and salt and pepper to taste. Simmer, uncovered, stirring occasionally for 60-75 minutes or until apples are softened and the chili is thick. Serve with a dollop of sour cream.
