1/3 cup mayonnaise
1 tablespoon milk
1/2 cup seasoned bread crumbs
1/8 teaspoon onion powder
2 boneless skinless chicken breast halves (6 ounces each)

Steps:

  • In a shallow bowl, combine mayonnaise and milk. In another bowl, combine bread crumbs and onion powder. Dip chicken in mayonnaise mixture, then roll in crumb mixture. , Place in a greased 8-in. square baking pan. Bake, uncovered, at 350° for 10 minutes. Turn over; bake 10-15 minutes longer or until juices run clear.

1 cup bread crumbs
1 (1 ounce) package dry French onion soup mix
⅓ cup mayonnaise
1 tablespoon garlic paste
4 skinless, boneless chicken breasts

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Mix bread crumbs and dry soup mix together in a bowl.
  • Mix mayonnaise and garlic paste together in a separate bowl. Microwave on high to thin out consistency, 20 to 30 seconds.
  • Brush chicken breasts with the mayonnaise mixture. Cover with the crumb mixture. Place on a baking sheet.
  • Bake on the middle rack of the preheated oven until chicken is no longer pink in the center and juices run clear, about 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

6 ounces sour cream
2 teaspoons lemon juice
2 teaspoons paprika
1 (14 ounce) package dry stuffing mix (such as Pepperidge Farm® Herb Seasoned Stuffing)
8 thin chicken breasts
½ cup butter

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine sour cream, lemon juice, and paprika in a bowl until well combined. Place stuffing mix in a shallow bowl. Dip chicken breasts into sour cream mixture so both sides are covered, then dip into seasoned stuffing mix on both sides. Roll each chicken breast up and place into a glass baking pan.
  • Melt butter in a saucepan over medium-low heat and drizzle over the chicken breasts in the baking pan.
  • Bake in the preheated oven until chicken breasts are no longer pink in the center and browned on the outside, and the juices run clear, 45 to 60 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

I like my wings baked and not fried. These are very tasty and crispy. For easier cleanup, line pan with foil and spray with nonstick spray.

2/3 cup breadcrumbs
1 teaspoon onion powder
1 teaspoon dried basil
1/2 teaspoon garlic salt
1/2 teaspoon paprika
1 egg
1 tablespoon water
10 whole chicken wings

Steps:

  • In a large resealable plastic bag, combine the bread crumbs, onion powder, basil, garlic salt and paprika.
  • In a small bowl, whisk egg and water.
  • Cut chicken wings into three sections and discard wing tips.
  • Dip wings in egg, then place in bag and shake to coat.
  • Place on a greased 15 x 10" baking pan.
  • Bake at 425° for 30-35 minutes or
  • until juices run clear, turning once.

In search of a (cough cough) better way to eat breaded chicken, I found this worked really well when done correctly. As if there is anyway to eat breaded chicken healthy, this does cut down on all that frying in a deep frying pan or deep fryer.

4 boneless skinless chicken breasts
2 cups breadcrumbs
1/4 cup romano cheese
2 eggs
1/4 cup olive oil (reserve tsp for oven pan)
1 teaspoon black pepper
1 cup flour (of your choosing, Ive used coconut flour and regular unbleached flour)

Steps:

  • you also need : cast iron pan.
  • pre heated oven at 400 degrees.
  • so, whisk together eggs and olive oil (reserving some for later) and pepper in a bowl. Heat cast iron or whatever pan you have that can also go into a 400 degree oven.
  • 1. Clean breaded chicken and pat dry.
  • 2. cover in flour.
  • 3. Cover in eggs mixture.
  • 4. Cover in bread crumbs.
  • 5. take reserved olive oil and place on hot pan.
  • 6. very quickly brown both side of the chicken ( if not done carefully bread crumb will fall apart).
  • 7. After 1 minute per side on the chicken, take directly into the hot oven and bake for 20 minutes. Done.

2 chicken breasts, boneless and skinless
2 pkg ranch style dressing mix
1 bottle ranch dressing w/bacon
1 c bread crumbs
salt and pepper if desired

Steps:

  • 1. Rinse and pat dry chicken breasts salt and pepper if desired set aside
  • 2. Combine breadcrumbs and ranch dressing mix in shallow dish
  • 3. Pour bottle ranch dressing in another shallow dish
  • 4. Place chicken breasts in dish with ranch dressing turning to cover both sides with dressing
  • 5. Remove breasts and place in breadcrumb dish coating both sides with crumbs
  • 6. Line cookie sheet with foil. Place cookie rack on foil
  • 7. Preheat oven to 350
  • 8. Place chicken breasts on rack. Place in oven. Bake for 25 mins. Flip breasts. Bake additional 20 mins. or until crust is golden brown

This is a family favorite recipe at our house that I usually make at least once per month. It's really like an oven-fried chicken, it should come out crispy and browned. I don't even measure the ingredients any more, I just dump the flour and spices in the bag and shake away - it's SO easy! This is great with mashed potatoes (if you make gravy with the pan drippings) and corn (in the summer), carrots (in the winter). The original recipe is from GH Illustrated Cookbook, I've changed a few things.

1/2 cup butter or 1/2 cup margarine
3/4 cup flour
1 1/2 teaspoons salt
2 teaspoons paprika
1/4 teaspoon pepper
2 (3 lb) fryer chickens, cut into 8 pieces each

Steps:

  • In a large roasting pan (or two 9x13 pans), in a 425° oven, melt the butter or margarine.
  • Mix flour, salt, paprika and pepper in a heavy-duty plastic bag; shake chicken pieces in the bag, a few at a time, until evenly coated.
  • In the pan (s), place the chicken, skin side down, in the melted butter; bake 30 minutes.
  • Turn chicken pieces and bake 15 minutes more until pieces are fork-tender.
  • I usually make gravy from the de-greased pan juices, using some or all of the leftover flour and some chicken stock.

1/4 cup ranch salad dressing
1 cup crushed corn flakes cereal
1/2 cup grated parmesan cheese
1/2 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon garlic powder

Steps:

  • Preheat oven to 400; grease an 11x7 baking pan; set aside.
  • Pour Ranch dressing into Bowl 1.
  • Combine Bowl 2 ingredients, set aside.
  • Toss chicken in Bowl 1, then Bowl 2; fluffing artistically :-) .
  • Place chicken cubes in single layer on baking pan.
  • Bake for 12-15 minutes.
  • Serve with additional Ranch dressing.
  • VARIATION: Use Bleu cheese dressing instead (much more yumm-o for the grown-up palate!).
  • VARIATION #2: There's always the honey-mustard salad dressing route, too.

2 chicken breasts (skinned)
2 slices white bread
1 tablespoon pumpkin seeds
1 tablespoon sunflower seeds
75 g grated parmesan cheese
50 g unsalted butter
1/4 teaspoon fresh ground black pepper
lemon, zest of (optional)
1/2 lemon, juice of (optional)

Steps:

  • Preheat the oven to 190°C.
  • Grease an ovenproof dish (I use butter but I am sure olive oil could work).
  • Tear the bread into pieces and put it into a mixer, add the seeds and turn them into rough breadcrumbs.
  • Add the parmesan, pepper and lemon zest (if using).
  • Melt the butter.
  • Add the butter to the breadcrumb mixture and mix well.
  • Put the chicken breasts in the ovenproof dish and pat the breadcrumb mixture firmly down on top of them, covering all of the flesh.
  • Bake for 25-30 minutes.
  • Optional: Once the chicken is cooked take it from the dish and add the lemon juice to the pan, mix well and serve as a side-sauce. This is very strong and not everyone likes it but it works very well with veggies such as broccoli. Use sparingly!

2 Tbsp. lite soy sauce
2 Tbsp. HEINZ Apple Cider Vinegar
1 Tbsp. LEA & PERRINS Reduced Sodium Worcestershire Sauce
1 env. SHAKE 'N BAKE Extra Crispy Seasoned Coating Mix

Steps:

  • Heat oven to 425°F.
  • Arrange chicken in single layer in shallow pan. Mix water, soy sauce, vinegar and Worcestershire sauce; pour over chicken. Let stand 1 hour, basting occasionally. Drain well, discarding marinade.
  • Coat chicken with coating mix as directed on package, omitting water. Place in single layer in ungreased 15x10x1-inch baking pan.

•1/2 cup flour
•1 tablespoon paprika
•2 teaspoons black pepper

•2 eggs
•2 teaspoons Worcestershire sauce

•3/4 cup dry breadcrumbs
•1/4 cup fresh shredded Parmesan cheese
•1 tablespoon herb season blend (your choice. We like using a simple Italian Herb blend)
•6 chicken drumsticks
•Olive oil

Steps:

  • Directions 1.Preheat the oven to 425F. Coat the bottom of a roasting pan or baking sheet with a thin layer of olive oil. 2.Mix together the paprika, flour, black pepper and salt in one bowl. In another, beat together the eggs, Worcestershire sauce and lemon juice. In a third bowl, combine the breadcrumbs, Parmesan cheese and herb season blend. 3.Pat the chicken dry with a paper towel, then dredge in the flour mixture, turning to coat. Next, dip the drumsticks in the eggs, making sure they get coated before finally dredging in the bread crumbs, making sure they are nice and coated. Place the chicken immediately on the prepared baking sheets. 4.Bake for 20-25 minutes, or until cooked through and the juices run clear (not pink) when poked with a sharp knife. 5.Enjoy
