BEST BREAD MACHINE SOURDOUGH

Best Bread Machine Sourdough image

This recipe gives a slightly dense bread with a slightly chewy crust and a little tang from the sour dough, depending entirely on your sourdough. A "San Francisco" sourdough starter is appropriate for this recipe.

Provided by todgeimer

Categories     Sourdough Breads

Time 3h15m

Yield 1 Two Pound Loaf, 10 serving(s)

Number Of Ingredients 7

1 cup sourdough starter, you must have a starter available
3/4 cup water, warm about 110F
1 tablespoon sugar
1 tablespoon active dry yeast (not rapid rise yeast)
3 cups bread flour
3 tablespoons oil
2 teaspoons salt

Steps:

  • Put first 4 ingredients in bread machine and stir gently. (yes, this works...).
  • Let sit for about 10 minutes. Starter should start to bubble a little.
  • Add flour, then spread oil and salt evenly over the flour.
  • Select basic course or following custom settings if your bread maker has them:.
  • Custom settings for Zojirushi BB-CEC20: Preheat - 20 Minutes ( I start cycle after mixing first four ingredients then add remaining three ingredients after ten minutes), Knead - 20 minutes, Rise1 - 40 minutes, Rise2 - 40 minutes, Rise3 - OFF, Bake - 58 minutes Medium or Dark crust setting ( I use medium), Keep warm - OFF.
  • Check a few minutes into kneading and add flour or water as needed to get a just slightly tacky dough that sticks to your fingers like a strong post it note and stretches smoothly without tears when kneading. Sourdough bread dough is a little gloopier then regular white bread.
  • See directions for making a starter or order a starter online.
  • Like all sourdough breads wait until at room temperature before cutting or insides will clump up and tear the insides out of the loaf.

We served it with a homemade Garlic butter spread. My husband set the opened beer out the night before to go flat.Time is approximate.

SOURDOUGH FETA DILL BREAD (BREAD MACHINE)

Sourdough Feta Dill Bread (Bread Machine) image

I love the feta dill bread by Barb Gertz, but I wanted to convert it to a sourdough version. This is what I came up with. Time is approximate, as starters can be variable, and does not include time for sponge to develop. Try baking this as rolls for sandwiches.

Provided by duonyte

Categories     Sourdough Breads

Time 4h

Yield 1 1 1/2 lb loaf, 12 serving(s)

Number Of Ingredients 12

1 cup bread flour
1/2 cup water
2 tablespoons sourdough starter
1/2 cup milk
2/3 cup crumbled feta
1 egg
1 tablespoon olive oil
2 1/2 cups bread flour
1/3 cup instant potato flakes
1 tablespoon sugar
1 1/2 teaspoons salt
1/2 cup chopped fresh dill, stems removed and lightly packed

Steps:

  • Prepare sponge: mix together the water, 1 cup flour and starter in a medium bowl. Cover and set in a warm space. Sponge will take 8 to 24 hours to develop. If you are not ready to bake, it will hold for a couple of days in the refrigerator.
  • Set bread machine to dough cycle. Place sponge and all remaining ingredients in pan in order recommended by the manufacturer. When the dough is completed, transfer it to a large oiled bowl, cover and let rise until doubled.
  • Remove and shape loaf as desired. Cover and let rise until doubled. The dough is slightly sticky, and I like to turn it out onto an oiled, not floured, board.
  • Bake in preheated 400 deg. oven for 30 minutes, or until it reaches an internal temperature of 200 to 205 degrees.
  • Note1: Starters vary considerably about how much time they need to double the loaf. If you are not confident about your starter, you can add 1 teaspoons instant yeast with the dry ingredients to ensure a prompt rise.
  • Note2: As with all bread recipes, check the texture of the bread early in the cycle and add additional flour or water, as needed. Feta is variable in the amount of moisture it contains.
  • Note3: Unless you know that your sourdough is strong, you may wish to shape immediately after the dough finishes kneading, and let it rise only once.

BREAD MACHINE CRUSTY SOURDOUGH BREAD

Bread Machine Crusty Sourdough Bread image

This sourdough bread machine recipe has unraveled the closely guarded secret to great sourdough bread and made it "bread machine easy." How do you make sourdough bread? Especially one with such a delicious crust? The sourdough starter should be made at least 1 week before you make the bread and then kept cool in the refrigerator until ready to use. Use the starter once a week or stir in 1 teaspoon sugar, and after using, replenish or "feed it" according to our directions. This sourdough bread recipe for the bread machine will create a tangy, sour flavor that only gets better as you regularly replenish your sourdough starter.

Provided by Betty Crocker Kitchens

Categories     Side Dish

Time 3h40m

Yield 12

Number Of Ingredients 9

1 1/2 teaspoons bread machine or quick active dry yeast
4 cups lukewarm water (105°F to 115°F)
3 cups Gold Medal™ All-Purpose Flour or Gold Medal™ Bread Flour
4 teaspoons sugar
1/2 cup water
3 cups Gold Medal™ Bread Flour
2 tablespoons sugar
1 1/2 teaspoons salt
1 teaspoon bread machine or quick active dry yeast

Steps:

  • Make sourdough starter at least 1 week before making bread. In large glass bowl, dissolve 1 1/2 teaspoons yeast in warm water. Stir in 3 cups flour and 4 teaspoons sugar. Beat with electric mixer on medium speed about 1 minute or until smooth. Cover loosely; let stand at room temperature about 1 week or until mixture is bubbly and has a sour aroma. Transfer to 2-quart or larger nonmetal bowl. Cover tightly; refrigerate until ready to use.
  • Use sourdough starter once a week or stir in 1 teaspoon sugar. After using starter, replenish it by stirring in 3/4 cup all-purpose flour, 3/4 cup water and 1 teaspoon sugar until smooth. Cover loosely; let stand in warm place at least 1 day until bubbly. Cover tightly; refrigerate until ready to use. To use, stir cold starter; measure cold starter, and let stand until room temperature (starter will expand as it warms up).
  • Measure 1 cup of the sourdough starter and all remaining bread ingredients carefully, placing in bread machine pan in the order recommended by the manufacturer.
  • Select Basic/White cycle. Use Medium or Light crust color. Do not use delay cycle. (Total time will vary with appliance and setting.) Remove baked bread from pan; cool on cooling rack.

WHOLE WHEAT SOURDOUGH BREAD (NOT MACHINE)

Whole Wheat Sourdough Bread (Not Machine) image

I came up with this when I couldn't find one that was both light and easy. I also needed one that made multiple loaves. The sourdough starter is basic #41544 with a Tablespoon of honey added to it. This is a very forgiving recipe. I hope you enjoy.

Provided by Maeven6

Categories     Sourdough Breads

Time 3h

Yield 3 loaves, 36 serving(s)

Number Of Ingredients 12

1 1/2 tablespoons dry yeast
2 cups sourdough starter
1 2/3 cups warm water
2 teaspoons salt
1/4 cup molasses
1/4 cup honey
1 tablespoon ground flax seeds (optl)
2 tablespoons gluten
3 tablespoons olive oil
2 cups bread flour
4 cups whole wheat flour
1 egg, beaten (egg wash)

Steps:

  • Place warm water, sourdough starter, molassas, honey, yeast, salt, and oil in a large mixer with standard blade. Blend well.
  • Add one cup of each whole wheat flour, bread flour, and gluten. Blend for 3-5 minutes.
  • Add last cup of bread flour, one cup of whole wheat flour, and flax seed if desired. Mix for 3-5 minutes to working up the gluten. Change blades to dough hook.
  • With the mixer on the lowest speed work in the remaining flour, scaping the sides of the bowl to the center. You may use all the flour or not depending on the humidity and the flour being used.
  • When the dough is beginning to form a soft ball and comes away from the mixer move it to a lightly floured surface.
  • Knead a few minutes until a soft dough is formed and it springs back when poked. The dough should have the baby bottom feel.
  • Put the dough in a lightly oiled large bowl, I use a cooking spray. Put a linen over the bowl and set it in a warm location. Set the timer for one hour.
  • Check the dough at the one hour mark, the dough should have doubled in bulk. Once it has doubled remove it to a dry counter top. Divide it into two to three sections, making 3 loaves.
  • Press each section out into a rectangle aprox 1/2" thick, do not use a rolling pin just hands and aproximates. Roll the dough as if rolling a jelly roll, forming a log.
  • Place each section into a sprayed loaf pan.
  • Put the loaves in a warm place and cover them with a linen. Let them double in bulk, aprox 1 hour.
  • Turn the oven on and brush the tops with the beaten egg. Bake at 350 for 35 minutes or until you have a nice golden brown loaf.
  • It slices better if cooled but it is heaven straight out of the oven.

SOURDOUGH BREAD FOR THE BREAD MAKER MACHINE

Sourdough Bread for the Bread Maker Machine image

I decided to make my own Sourdough Recipe with rich Buttermilk, and I have entered this into my personal recipes. I developed this recipe which has worked out well from the 1st loaf, and just seems "fool-proof", and very tasty. Once your Sourdough is the flavor you like best, you can jar it and put it into the refrigerator in 10 ounce portions and use a complete jar each loaf you make in the breadmaker. VERY QUICK and SO EASY!

Provided by Domajazz

Categories     Sourdough Breads

Time 8m

Yield 1 Loaf (1.5#), 6-8 serving(s)

Number Of Ingredients 6

10 ounces sourdough starter
4 -6 ounces warm water
1/2 teaspoon salt
2 tablespoons sugar
3 1/4 cups bread flour
1 1/2 teaspoons yeast

Steps:

  • Spray your bread pan with Olive Oil spray and add ingredients in this order:.
  • 10 ounces of Sourdough Starter.
  • 4-6 ounces (about ½ cup) Warm water (not hot).
  • ½ tsp salt.
  • 2 TBSP Sugar.
  • Once you have all these ingredients in bottom of pan add the flour on top and make a slight hole in the middle to add yeast and cover with flour
  • Don't upset the wet ingredients with flour or yeast.
  • 3 ¼ cups BREAD Flour.
  • 1 ½ tsp Yeast (I have used BEER yeast in blocks you can get at some grocer's, this is great too).
  • In Bread Maker Machine:.
  • Bake as a normal (white) loaf with desired crust color.
  • I always check the blending to be certain it is not too wet or too dry - you can adjust with water or bread flour - you can even remove the (lump) from the breadmaker and hand knead for a minute on floured countertop.
  • There should be no problem for this dough to rise and cook nicely.
  • Lastly, once it's DONE - be there to remove from pan ASAP. (If it sits the moisture in the breadmaker can deform loaf and make soggy.).
