1 cup water
2 tablespoons butter or margarine, softened
1 egg
3 1/4 cups Gold Medal™ Better for Bread™ flour
1/4 cup sugar
1 teaspoon salt
3 teaspoons bread machine or active dry yeast
Butter or margarine, melted, if desired

Steps:

  • Measure carefully, placing all ingredients except melted butter in bread machine pan in the order recommended by the manufacturer. Select Dough/Manual cycle. Do not use delay cycle.
  • Remove dough from pan, using lightly floured hands. Cover and let rest 10 minutes on lightly floured surface.
  • Grease large cookie sheet with shortening. Divide dough into 15 equal pieces. Shape each piece into a ball. Place 2 inches apart on cookie sheet. Cover and let rise in warm place 30 to 40 minutes or until double. (Dough is ready if indentation remains when touched.)
  • Heat oven to 375°F. Bake 12 to 15 minutes or until golden brown. Brush tops with melted butter. Serve warm, or cool on wire rack.

3 ½ cups White Lily® All Purpose Wheat Flour, or more as needed

1 (.25 ounce) package active dry yeast
Crisco® Original No-Stick Cooking Spray

Steps:

  • Place water, butter, egg, 3 cups flour blend, sugar, salt and yeast in bread machine pan in order recommended by the manufacturer. Select Dough/Manual cycle. During initial mixing cycle, open lid and scrape down sides of bread pan as necessary. As dough mixes, add just enough additional flour blend to create a soft dough. When Dough/Manual cycle is complete, remove dough from bread machine pan. Place on lightly floured surface.
  • Coat 13 x 9-inch baking pan with cooking spray. Pat dough into rectangle. Cut with pizza cutter or serrated knife into 15 equal pieces. Shape each into a ball. Place evenly in prepared pan. Cover and let rise in warm place until doubled, about 35 to 45 minutes.
  • Heat oven to 375 degrees F. Uncover rolls. Bake 15 minutes or until golden brown. Serve warm or cool completely on wire rack.

1 cup water (70° to 80°)
1/4 cup butter, cubed
1 large egg
1-1/4 teaspoons salt
3-1/4 cups bread flour
1/4 cup sugar
3 tablespoons nonfat dry milk powder
1 package (1/4 ounce) quick-rise yeast
EGG WASH:
1 large egg
4 teaspoons water

Steps:

  • In bread machine pan, place the first eight ingredients in order suggested by manufacturer. Select dough setting. Check dough after 5 minutes of mixing; add 1-2 tablespoons water or flour if needed., When cycle is completed, turn dough onto a lightly floured surface. Divide and shape into 24 balls. Roll each into an 8-in. rope; tie into a loose knot. Tuck ends under., Place 1-1/2 in. apart on greased baking sheets. We think this is the best white bread recipe ever! It is a tender bread with a slightly sweet taste. My dinner rolls using this dough are so good, everyone always loves them. It doesn't take to long to make them when the bread maker does most of the work. The cook time is listed for the rolls only because everyone's bread makers cooks at different rates. Mine is older and a regular loaf will take 4 hours and 10 minutes. I have found that 15 balls of dough fit perfectly in the 9X13 pan with sides touching after raising the 2nd time but they can be made whatever size you want. I hope you enjoy this great bread as much as we do.

  • I let them about double in size.
  • Bake in a 350° oven about 12-15 minutes until golden brown.
  • After removing from the oven, brush the tops of the rolls with melted butter.

1/2 cup plain yogurt
1/4 cup honey (1/8 c.for less sweet roll)
4 tablespoons butter
1 egg, beaten

Steps:

  • Mix milk, yoghurt, honey and butter in a small mixing bowl, heat in microwave 1 minute. Stir until the butter is melted.

  • When cycle is complete, shape dough into 18 equal rolls.
  • Place in lightly greased pans. I like to use pie pans instead of a baking sheet.
  • Cover rolls with a damp cloth and let rise about 30-40 minutes or until doubled in size. When using whole wheat flour, I like to set the pans on an electric heating pad set on medium.
  • Bake in a preheated 350 degree oven for 15 to 20 minutes.
  • Brush tops with melted butter.

1 cup lukewarm milk (put in microwave for about 30 seconds)
1 egg
1/4 cup shortening
3 1/2 cups flour (bread flour is best)

  • Press dough cycle and let run until finished.

These rolls were made using my bread machine, using the dough cycle and then forming the rolls. Very soft tender roll. I'm posting this recipe by request. Very easy, especially when the machine does all the hard work.

1 egg, room temperature
3/4 c (plus 1 tablespoon) water, 80 degrees f/27 degrees c
3 Tbsp oil
3 Tbsp sugar
1 1/2 tsp salt (i used natural sea salt)
3 1/4 c bread flour (may need to add add'l flour if to sticky)
2 tsp active dry yeast
melted butter, optional and not part of original recipe

Steps:

  • 1. This recipe is for 1.5 lbs and will make 18 rolls. Be sure to set your machine up for 1.5 lbs and set on the dough cycle. I have a Breadman Bread Machine. Check instructions on your machine as different machines may vary.
  • 2. Add ingredients to your bread machine in order listed. Start machine and let it complete the cycle.
  • 3. Once cycle is complete; place dough on a lightly floured service and divide into 18 pieces; shape. NOTE: you may want to put some oil in your hands to keep dough from sticking to hands.
  • 4. Place on a greased baking sheet; cover with plastic and let rise for 30 minutes in a warm place. I spread a little melted butter to tops of rolls. This was not part of the recipe but I like the butter. NOTE: I turn light on in oven and place rolls there to rise. I take out of oven a few minutes before ready to bake so the I can heat oven.
  • 5. Heat oven to 350 degrees; bake 15 to 25 minutes or until golden brown. Spred more butter if desired. NOTE: It took about 23 minutes in my oven.

  • Place 12 dough balls into each oiled pan. Cover and let rise for 45 minute to 1 hour or until doubled.
  • Preheat oven to 350 degrees. Place bread pans on middle rack of oven. Bake for 15 minutes. Brush melted butter over tops of rolls. Continue to bake for an additional 15 minutes or until done and nicely browned.
  • Remove rolls from oven and put on cooling rack to cool for a few minutes.
  • Serve and Enjoy!

This recipe came in the recipe book with my Bread Machine. I've have used it for years, and it is a family favorite.

WHITE DINNER ROLLS
1 c milk
1/3 c butter
1 egg, room temp, slightly beaten
3/4 tsp salt
3 1/4 c all purpose flour, sift
1/2 c sugar
3 tsp active dry yeast
WHEAT DINNER ROLLS
2 c all purpose flour
1 1/4 c wheat flour
**all other ingredients are the same

Steps:

  • 1. Heat milk and butter in microwave for 2 min. Add in one egg at room temp. Pour into bread pan. Sift flour into a bowl, add salt and sugar, pour into bread pan. Make a small indention on top of flour and add yeast.
  • 2. Run on DOUGH cycle. Once dough has mixed, rested, and risen, punch down. Let sit for 10 min.
  • 3. Bring dough out onto lightly floured surface, cut into 12-18 pcs., depending on how big or how many rolls you desire. Place in 11x13 baking pan sprayed with spray oil. Brush with butter or olive oil. Let rest till doubled in size. Bake 375° for 15 min.
  • 4. If making whole wheat rolls, use 2 c. of all purpose flour, and 1 1/4 c. of wheat flour. All other ingredients are the same, follow the same steps as the regular dinner rolls.

In my quest for the perfect fluffy and flavourful dinner roll recipe for my bread machine I came across a treasure on the King Arthur Flour site. It soon became a family favourite. However, I found that I often didn't have the mashed potato and potato water it required right at hand to quickly mix up a batch whenever I wanted, so I experimented and modified the original recipe in order to use instant mashed potato flakes instead. I now keep a box in my pantry exclusively for this recipe. Note: Sometimes I substitute 2 cups of the all-purpose flour with whole wheat flour. The resulting rolls are just as heavenly this way too! The preparation time does not include the machine cycle or the rising time. I usually allow approx. 4 hours to get them into the oven.

1 1/3 cups water
2 eggs
6 tablespoons butter (or margarine)
1/3 cup sugar
1 1/2 teaspoons salt
1 tablespoon powdered milk
2/3 cup potato flakes
4 1/4 cups all-purpose flour
2 1/2 teaspoons bread machine yeast

Steps:

  • Place all the ingredients into the pan of your bread machine in the order recommended by the manufacturer (usually, liquids first, yeast last).
  • Program the machine for 2 lb dough cycle, and press Start.
  • Check the dough about 10 minutes before the end of the final kneading cycle and adjust its consistency as necessary by adding additional water or flour to form a soft, smooth ball.
  • DON'T SKIP THIS STEP! Allow the machine to complete its cycle, then allow the dough to remain in the machine till it's doubled in bulk, perhaps an additional 30 minutes or so.
  • To make stand-alone rolls, divide the dough into 16 equal pieces. If you want to make soft-sided, pull-apart rolls, divide the dough into 15 pieces. This will make quite large rolls. If you prefer smaller rolls you can easily get 24 from this amount of dough.
  • Place the 16 dough balls onto a parchment-lined or lightly greased baking sheet or sheets, leaving about 2 inches between them. Or place the 15 dough balls into a lightly greased 9 x 13-inch pan, spacing them evenly in five rolls of three balls each. If I'm making 24 soft-sided rolls I use a baking sheet with a rim and create six rows of four buns.
  • Cover the pan(s) with a proof cover or lightly greased plastic wrap, (I just use a clean dish towel) and allow the rolls to rise for about 2 hours, until they're quite puffy.
  • Bake the rolls in a preheated 350°F oven for 20 to 25 minutes, until they're golden brown. In my convection oven I bake two trays at a time (the large buns) on the convection bake setting for about 18 minutes.
  • Remove them from the oven, carefully turn them out of the pan -- the pull-apart rolls will come out all in one piece -- and brush them with melted butter, if desired.

This Roll Dough is awsome for Cabbage Burgers.

3/4 - 1 c lukewarm water (100*f)
2 Tbsp butter butter (unsalted and softened)
1 large egg ( room temperature )
3 1/2 c unbleached all purpose flour
1/4 c white granulated sugar
1 1/4 tsp salt
1 Tbsp instant yeast

Steps:

  • 1. Put all ingredients into the bread machine as in order on the recipe
  • 2. Turn Bread machine on Manual Dough cycle only. allow the bread machine to go through all cycles.
  • 3. Deflate the dough and devide into 2 balls and then devideeach ball into 8 or 9 pieces. Round and shape each piece into a ball
  • 4. place 8 or 9 finished balls of dough into each of 2 8" pr 9"inch round cake pans that are lightly greased. cover and let rise for about a hour or until very puffy.
  • 5. If Desired you can brush unbaked rolls with melted butter or egg wash (1 egg beaten with 1 tablespoon water) Sprinkle with herbs and or small seeds.
  • 6. Bake in a preheated 375*F oven for 12-15 minuntil Golden !! DO NOT OVER BAKE !!!
  • 7. Remove rolls from oven and as soon as you are able to handle them , take rolls out of pans and brush with melted butter. cool completely on a wire rack. Best Yeast rolls , pass around the table and enjoy

Although this is a bread machine, I have made these successfully on my stand mixer using a few amount adjustments --- here is the original bread machine recipe for you to enjoy! It states to select the sweet cycle for this! To bring the egg to room temperature faster place the egg in a cup of warm water for about 3-5 minutes. Prep time is rising time, it does not include the machine kneading time --- for pan greasing see my recipe#78579

1 cup warm water
1 teaspoon skim milk powder (can use 2 teaspoons)
1 egg (room temperature)
2 tablespoons butter, softened
3 1/4 cups white bread flour
1/4 cup sugar
1 teaspoon salt
3 teaspoons dry yeast
1 egg white (whisked with 1 teaspoon cold water)
sesame seeds

Steps:

  • Place the ingredients in the bread machine in order listed.
  • Select the sweet dough cycle.
  • Adjust the water or flour to create a soft semi-sticky dough after about 5 minutes of kneading.
  • Grease a large cookie sheet.
  • Divide the dough into 12-15 pieces.
  • Shape each into a ball, place about 2-inches apart.
  • Cover with a clean tea towel and place in a warm spot to rise until doubled (about 45 minutes (the time will vary depending on the temperature of you room).
  • Brush the dough balls with egg white mixture, then sprinkle with sesame seeds.
  • Bake in a 375 degree oven for about 12-15 minutes.
