These are very easy, very tasty Brazilian cheese rolls, much like you might find at a churrascaria.

2 cups tapioca starch
1 teaspoon salt
½ cup vegetable oil
⅓ cup water
⅓ cup milk
2 eggs
6 ounces shredded Parmesan cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a baking sheet
  • Place tapioca starch and salt in a large bowl.
  • Bring vegetable oil, water, and milk to a boil over medium heat until a white foam appears. Pour milk mixture over tapioca starch and stir until well mixed; allow dough to rest for 15 minutes. Mix eggs and Parmesan cheese into dough. Shape dough into 1 1/2-inch balls and place on prepared baking sheet.
  • Bake in preheated oven until rolls are browned, 15 to 20 minutes.

Number Of Ingredients 6

3/4 pound (12 ounces) crumbled feta cheese
2 cups all-purpose flour or manioc flour (available in Latino markets)
1/2 teaspoon salt
1/2 cup cooking oil
1 cup whole milk
2 eggs

Steps:

  • 1. Preheat oven to 400 degrees. 2. Mix the feta cheese, flour, and salt together in a food processor. Add the cooking oil and process a few more seconds. 3. Warm the milk for one minute in a microwave and add to the processor mixture, along with the eggs. Process until well blended. Place mixture in a bowl and refrigerate for 1/2 hour or longer. Roll the dough into round balls the size of golf balls and place on an ungreased cookie sheet. 4. Bake approximately 17 minutes, or until golden brown. If you have leftover rolls, you can briefly microwave them, or cut them in half, toast them, and spread them with butter.

1/3 cup butter (olive oil can be substituted but butter is best)
1/2 cup milk
1/3 cup water
1 teaspoon salt
2 cups tapioca flour
1 1/3+ cups pecorino romano, parmesan, manchego, cheddar
2 eggs

Steps:

  • Scald to boiling: water, milk, butter and salt. Place tapioca flour in stand mixer and add boiling mixture to it mixing it in. The tapioca will seize. Let stand 15 minutes. Then add cheese mixture and 2 eggs. The mixture will slightly resemble cottage cheese. Scoop mixture into roll portions on silpat. Oil has and roll in hands to make smooth balls. Bake at 375F for 40-45 minutes until golden.
