3 tablespoons butter, cut into small pieces
1/2 cup firmly packed brown sugar
1 tablespoon lemon juice
2 medium bananas, firm and ripe
2 cinnamon sticks
rind of one lime, cut into thin strips
1/3 cup sweetened flaked coconut

Steps:

  • In a shallow microwavable glass baking dish or pie plate, mix butter, brown sugar and lemon juice. Microwave, uncovered, on HIGH for 1 minute. Stir well.
  • Peel bananas and cut them in half crosswise. Slice each lengthwise. Arrange 8 pieces in a single layer in the sugar mixture, turning them over once to coat. Put cinnamon sticks and lime peel around the banana pieces.'.
  • Microwave on HIGH, uncovered for 2 minutes. Baste the bananas with the sauce. Microwave on HIGH for 1 or 2 more minutes, or until the bananas are soft.
  • Let stand for 3 minutes.
  • Garnish with coconut and serve warm with the sauce.

2 bananas
Juice of 1 lime
1 tablespoon dark rum
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1 tablespoon dark brown sugar
1 tablespoon butter (optional)

Steps:

  • Preheat the oven to 400 degrees. Peel the bananas and slice in half lengthwise. Lay the pieces into a buttered 9-by-13-by-2-inch ovenproof dish. Pour the lime juice and rum evenly over the bananas. Sprinkle on the cinnamon, nutmeg, and brown sugar. Dot on the butter, if using, and bake for 10 to 15 minutes. Serve hot, topped with a tablespoon of fresh cream or ice cream.

In Brazil we call this Banana Cake, but when I baked this for the first time here everyone started calling it Banana Bread. You can add nuts in the dough or on the top if you wish.

3 tablespoons margarine
2 cups white sugar
3 egg yolks
3 cups all-purpose flour
1 tablespoon baking powder
1 cup milk
3 egg whites
6 bananas
2 tablespoons white sugar
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch pan.
  • In a large bowl, mix together margarine and sugar until smooth. Mix in yolks. Stir in flour and baking powder alternately with the milk.
  • In another bowl, beat egg whites until doubled in volume. Fold beaten whites into the dough. Spread into a greased 9 x 12 inch pan. Slice bananas over the top of the dough. In a small bowl, mix together the 2 tablespoons sugar and the cinnamon; sprinkle over bananas.
  • Bake at 350 degrees F (175 degrees C) for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool.

This is a Brazilian dish that has an odd ingredient, bananas. The bananas are almost a dessert on their own but are eaten along with rice in a dish that can be varied to one's taste.

2 cups lemon juice
1 cup white sugar
1 tablespoon butter
1 tablespoon rum
6 ripe bananas, halved lengthwise
7 cups water
3 ½ cups brown rice
2 (15 ounce) cans black beans, drained
1 (14.5 ounce) can diced tomatoes
2 teaspoons vegetable oil
2 (4 ounce) links sausage
2 pinches dried dill
2 pinches dried basil

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease a 9x13-inch baking dish.
  • Combine lemon juice, sugar, butter, and rum in a saucepan. Bring to a simmer over low heat, stirring occasionally, until sugar is dissolved and sauce thickens slightly, about 10 minutes.
  • Arrange bananas cut-side down in the baking dish. Pour enough sauce over bananas to cover, reserving any extra sauce for serving.
  • Bake in the preheated oven until bananas are soft and sticky, about 30 minutes.
  • Bring water and brown rice to a boil in another saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender and liquid has been absorbed, 45 to 50 minutes.
  • Combine black beans and diced tomatoes in a skillet over low heat; heat until warmed through, about 10 minutes.
  • Heat oil in a large skillet over medium heat. Add sausage links; cook, flipping often, until no longer pink in the center, about 10 minutes. Slice sausage into small pieces.
  • Scoop rice into a large bowl. Pour black beans on top. Sprinkle dill and basil on top. Add sausage; mix gently to combine. Serve bananas alongside.

Boozy baked caramelised bananas image

Use up your bananas and transform them into our boozy baked caramelised dessert with the help of rum, maple syrup and pecans

6 ripe bananas, peeled and sliced in half lengthways
2 tbsp dark brown soft sugar
2 tbsp maple syrup
3-4 tbsp rum or whisky
40g pecans, toasted and chopped
vanilla or salted caramel ice cream, to serve

Steps:

  • Heat the oven to 220C/200C fan/gas 8. Toss the banana halves in an ovenproof dish with the sugar, maple syrup and rum or whisky. Sprinkle with a small pinch of salt, if you like.
  • Bake for 15 mins, then remove from the oven. Heat the grill to high and grill the bananas for 3-5 mins, or until bubbling and caramelised. Spoon the bananas into bowls and scatter over the pecans. Serve with ice cream, and any of the caramelised syrup from the dish drizzled over the top.
