A vegetarian mock meatloaf, this is the version from the SDA cookbook 'An Apple A Day'. I will be updating this recipe when I figure out standard substitutions for the more specific products used (McKay's Chicken Seasoning and George Washington Broth).

1/2 cup butter
1 cup onion, chopped
1 cup pecans, ground
3 teaspoons chicken-flavored vegetarian seasoning (McKay's)
1 (1 ounce) package George Washington broth
6 eggs
1/2 cup milk
1 quart cottage cheese
4 cups Special K cereal
13 ounces Worthington FriChik, diced

Steps:

  • Saute onion, pecans, chicken seasoning and broth powder in butter.
  • Beat eggs and milk together and combine diced soymeat and remaining ingredients.
  • Bake in a well greased large flat pan in a 350 degree oven for 1-1½ hours (top will be dark brown when finished baking).

2/3 cup mayonnaise
1/3 cup sour cream
5 hard-boiled eggs
7 ounces canned tuna
1 medium onion
garlic powder, to taste
lettuce
tomatoes

Steps:

  • Mix together mayo, sour cream and garlic powder. Mash the eggs with a fork and drain the tuna well. Chop the onion very finely. Mix everything together and layer between the bread slices. Add lettuce, tomato as desired.

My tasty take on a Pittsburgh Original. I live just north of Pittsburgh, and not far form a Primanti's. We go there quite often, but when I want to save money or am really craving a sandwich, I just make one. Or course it's not as god as the original, but pretty darn close! For the recipe I put corned beef as my meat, but you an use any meat you prefer. Primanti's offers up Pastrami, Ham, Cappicola, steak, fried egg, turkey, and much more on thier sandwiches. This recipe is for two sandwiches.

four slices of thick cut soft Italian bread
sliced corned beef, in the amount of your choice or meat, of your choice in the amount of your choice
2 slices provolone cheese or 2 slices cheese, of your choice
1 cup cooked French fries, still warm or
10 cooked ore-ida oven chips
4 slices tomatoes
2 cups angel hair Coleslaw
3 tablespoons vegetable oil
2 tablespoons white vinegar
1 tablespoon sugar
1 teaspoon onion powder
1 teaspoon salt
1 teaspoon pepper

Steps:

  • Make the cole slaw by mixing the cole slaw, vegetable oil, sugar, onion powder, salt, and pepper together in a bowl.
  • cook your fries. I use the ore-ide oven chips, those can be cooked like normal in the oven, or microwaved. To get the true primanti's fry texture I microwave these oven chips for about three minutes. It works best with these because they are pre-cooked, and tase well when microwaved.
  • assemble your sandwich by putting the meat on the bottom piece of bread.
  • put the cheese on the meat.
  • put the french fries on.
  • put as much cole slaw as you like on.
  • place two slices of tomato on top
  • place your top piece of bread on.
  • cut in the middle, and viola.a Primanti!

Per her intro, "Salad dips like this have been very popular in Iceland since the 1960s. They are usually served on crackers at parties or used as sandwich filling much like in the U.S." (This recipe begins w/eggs already hard-boiled, so that cooking time has not been included" *Enjoy* !

250 g shrimp (9 oz can or may use frozen baby shrimp)
1 (8 ounce) can crushed pineapple (well-drained)
5 ounces mayonnaise
3 ounces cream cheese (softened)
1/2 teaspoon paprika
1 teaspoon lemon juice
1 dash Tabasco sauce
salt and pepper (to taste)
2 tablespoons chives (freshly-snipped)

Steps:

Most Icelanders have an enormous "sweet tooth" and an Icelandic afternoon tradition called "Kaffi og Kaka" (coffee and cake) is 1 way they indulge their craving. At first I expected something simple, but I quickly realized K&K is the Icelandic version of an American tradition ... "pig out till you seriously hurt yourself!" For some, it's daily and casual. For others, it's less frequent ... but a very formal, put out your best china, fill a table w/all manner of taste sensations and eat for 2 hrs while pouring coffee so strong it would make you gasp w/terror. A favorite treat for such occasions is Iceland Almond Cake. Again my source is my "Classic Scandanavian Cooking" cookbook by Nika Hazelton. Part of the intro says "This cake is good & easy, & it will keep well if wrapped in aluminum foil - without the filling & topping, of course."

1 cup butter
1 cup sugar
4 eggs (separated)
1 teaspoon vanilla
1 cup almonds (blanched and finely ground)
1 cup flour (sifted)
1/2 teaspoon baking powder
1/2 cup strawberry jam
1 cup heavy cream (whipped and sweetened to taste)

Steps:

  • Set oven temp at 350°F.
  • Cream butter and gradually add sugar. Beat in egg yolks (1 at a time), beating well after ea addition. Stir in vanilla and almonds.
  • Sift together the flour & baking powder and gradually add to batter. Beat egg whites till stiff (but not dry); fold into batter.
  • Bake in three 8-inch buttered & floured layer pans for about 30 minutes or till golden brown. Cool at least 5 minutes before removing from pans.
  • Spread strawberry jam between cooled layers and cover top and sides with swirls of whipped cream. Serve immediately and watch as it disappears.
