2 cups whipping cream
1/4 cup sugar
1 1/2 teaspoons instant coffee crystals
4 large egg yolks
1 tablespoon brandy
1 teaspoon vanilla extract
3 tablespoons (packed) golden brown sugar

Steps:

  • Preheat oven to 350°F. Arrange six 3/4-cup ramekins or custard cups in 13x9x2-inch metal baking pan. Combine cream and 1/4 cup sugar in heavy medium saucepan; bring almost to simmer, stirring until sugar dissolves. Remove from heat; add coffee and whisk to dissolve. Whisk egg yolks in medium bowl to blend. Gradually whisk in warm cream mixture, then brandy and vanilla. Strain custard into 4-cup measuring cup; pour into ramekins, dividing equally. Pour enough hot water into pan to come halfway up sides of ramekins.
  • Bake custards until center moves only slightly when pan is gently shaken, about 35 minutes. Remove custards from pan. Chill until cold, at least 3 hours, then cover and keep chilled overnight.
  • Preheat broiler. Arrange custards on baking sheet. Press 1/2 tablespoon brown sugar through strainer onto each custard, forming even layer. Broil 6 inches from heat source until sugar melts, bubbles and caramelizes, watching carefully and rotating sheet for even browning, about 4 minutes. Refrigerate custards until sugar topping hardens, at least 1 hour and up to 4 hours before serving.

2 cups whipping cream
1/4 cup sugar (or to taste)
2 teaspoons instant coffee granules
4 large egg yolks
1 tablespoon brandy
1 1/2 teaspoons pure vanilla extract
3 -4 tablespoons light brown sugar

Steps:

  • Set oven to 350 degrees F.
  • Arrange 6 (about 3/4-cup size) ramekins or use custard cups in a 13 x 9-inch baking dish.
  • In a medium saucepan combine cream and 1/4 cup sugar; bring almost to a simmer, stirring until the sugar dissolves; remove from heat and add in the coffee granules, whisk to dissolve the granules.
  • In a medium bowl whisk together egg yolks; gradually whisk in the warm cream mixture, then the brandy and vanilla.
  • Strain the custard into a 4-cup measuring cup (use a larger measuring cup if you are doubling the recipe) then divide/pour the mixture evenly between the ramekins or custard cups.
  • Pour enhough HOT water into the 13x9 pan to come halfway up the sides of the ramekins.
  • Bake the custards until center moves only slighty when the pan is shaken gently (about 35 minutes).
  • Remove the ramekins from the pan; cool slightly and then place in refrigerator (uncovered) for 3 hours.
  • Remove from fridge, cover with plastic wrap, and continue to chill overnight.
  • The following day: Preheat the broiler.
  • Arrange the ramekins on a small sheet.
  • Shake about 2-3 teaspoons brown sugar through a small strainer onto the top of each custard forming a layer.
  • Broil about 6 inches from heat until the sugar melts, bubbles and carmalizes (watch closely and rotate the sheet for even browning (about 3-4 minutes).
  • Refrigerate custards until sugar topping gets hard, at least 1 hour or up to 4 hours before serving.

2 tablespoons honey
1 tablespoon water
3/4 cup slivered almonds, toasted
3 cups vanilla ice cream, slightly softened
4 tablespoons brandy
1 tablespoon grated orange peel
1 cup chopped butter cookies
3 cups coffee ice cream, slightly softened
1 tablespoon freshly ground coffee beans
Honey-Brandy Oranges

Steps:

  • Butter large piece of foil. Stir sugar, honey, and 1 tablespoon water in heavy small saucepan over low heat until sugar dissolves. Increase heat to high; boil without stirring until syrup turns deep amber color, occasionally brushing down sides of pan with wet pastry brush and swirling pan, about 4 minutes. Remove from heat. Immediately stir in almonds. Pour mixture onto prepared foil. Cool completely. Chop praline into 1/2-inch pieces.
  • Line 9x5x23/4-inch metal loaf pan with plastic. Stir vanilla ice cream, 2 tablespoons brandy, and orange peel in bowl. Fold in cookies. Spoon half of ice cream mixture into prepared pan. Cover and freeze pan and remaining vanilla ice cream mixture separately until almost firm.
  • Stir coffee ice cream, 2 tablespoons brandy, and ground coffee in another bowl. Fold in chopped praline. Spoon half of coffee ice cream mixture atop vanilla ice cream in loaf pan. Top with remaining vanilla ice cream mixture, then coffee ice cream mixture. Cover with plastic and freeze until firm, about 4 hours. (Can be made 2 days ahead. Keep frozen.)
  • Remove torte from loaf pan. Cut into 1-inch-thick slices and serve with oranges.

I got this recipe from a friend of mine and it comes out better than before. The brandy gives it a very nice aroma, and sometimes my hand goes a little heavy when i add it! It's a very simple recipe with amazing flavor. I prefer using honeycrisp apples for this recipe, fuji apples are fine too. And I usually have the apple and nuts soaking in the brandy while I am putting the rest of the ingredients together. Ingredients where you can adjust the amounts: brandy, apples, nuts.

1 1/2 cups canola oil
2 cups sugar
3 eggs
2 1/2 cups all-purpose flour
1/8 teaspoon ground cloves
1 1/4 teaspoons cinnamon
1/2 teaspoon nutmeg
1 teaspoon baking soda
3/4 teaspoon salt
1 1/4 cups walnuts or 1 1/4 cups pecans, coarsely chopped
3 1/4 cups apples, peeled (optional)
1/4 cup brandy
1 cup powdered sugar
1 teaspoon vanilla extract

Steps:

  • Heat oven to 325 degrees Fahrenheit. Coat a 10 inch bundt cake pan with cooking spray and flour.
  • In a large bowl and electric mixer, beat the oil and sugar until thick and SMOOTH. Beat in the eggs. Mix in the cloves, cinnamon, nutmeg, baking soda, and salt. Then mix in the flour.
  • Fold in nuts, apples, and brandy. Let it sit for about 5 minutes. Pour into pan. Bake for 1 hour and 15 minutes, or until knife comes out clean.
  • Let it cool for about 10 minutes.
  • In a small bowl, mix in the ingredients for the glaze.
  • Remove cake from pan (it helps to separate the outer edges with a plastic cake spatula before doing so). Pour glaze over it.
