3/4 cup sugar
3/4 cup water
1 tablespoon fresh lemon juice
1 cup brandy
1 lb fresh dark sweet cherries, pitted
1 (1-quart) heatproof jar with tight-fitting lid

Steps:

  • In 2-quart saucepan, mix sugar, water and lemon juice. Heat to boiling. Reduce heat to low; simmer 8 to 10 minutes or until mixture slightly reduces and thickens. Remove from heat. Stir in brandy and pitted cherries.
  • Transfer cherries and liquid to jar (liquid should cover cherries completely). Cover with lid; seal tightly. Cool completely, about 3 hours.
  • Store in refrigerator 4 to 6 weeks before serving.

  • In a small saucepan, combine sugar and spices with a cup of water. Bring to a simmer, stirring until sugar dissolves. Let simmer for 5 minutes.

4 pounds large black (Bing) cherries
5 cups sugar
2 cups water
1 1/2 cups brandy

Steps:

  • Trim the stems of the cherries to within 1" of the fruit. Bring 1 cup sugar and 2 cups water to a boil in a saucepan over medium heat. Blanch the cherries, a cup at a time, for 2 minutes in the simmering syrup. Remove to a platter with a slotted spoon and cool. Add remaining sugar to the syrup and cook until the sugar is dissolved and the syrup is at the boiling point. Remove from heat and cool. Spoon the cherries into sterilized preserving jars . Add the brandy to the cooled syrup, pour over the cherries and seal. Keep in a cool dry place for 4 months before using.

3 tablespoons light corn syrup
1/4 teaspoon salt

  • Pour brandy over drained cherries; let set for two days.
  • Combine butter, corn syrup and salt; blend until smooth.
  • Add confectioners' sugar and mix well.
  • Knead until smooth and shiny; wrap in wax paper and chill for 30 minutes.

1 750-ml bottle brandy
1 1/2 cups dried tart cherries
1 cup water
1 cup sugar
Cake:
10 ounces bittersweet or semisweet chocolate, chopped
1 1/4 cups (2 1/2 sticks) unsalted butter, diced
10 large egg yolks
1/2 cup plus 6 tablespoons sugar
2 teaspoons vanilla extract
1/4 teaspoon salt
9 large egg whites
Ganache:
8 ounces bittersweet or semisweet chocolate, chopped
1 cup heavy whipping cream
1 1/2 cups hazelnuts, toasted, coarsely chopped

Steps:

  • For brandied cherries:
  • Combine brandy and dried cherries in 4-cup glass container with lid. Cover and let soak at room temperature 1 week.
  • Bring 1 cup water and sugar to boil in medium saucepan, stirring until sugar dissolves. Remove from heat and cool syrup. Drain brandy from cherries (reserve brandy for another use). Add sugar syrup to cherries and stir to blend. Let soak at room temperature at least 2 days. DO AHEAD Can be made 2 weeks ahead. Store covered at room temperature.
  • For cake:
  • Position rack in center of oven and preheat to 350°F. Butter 10-inch-diameter springform pan with 2 3/4-inch-high sides. Line bottom of pan with parchment paper round. Place chocolate and 1 1/4 cups butter in medium metal bowl. Set bowl over saucepan of simmering water; stir until mixture is melted and smooth. Remove bowl from over water; cool to lukewarm, about 10 minutes.
  • Using electric mixer, beat egg yolks and 1/2 cup sugar in large bowl until very thick and pale yellow in color, about 5 minutes. Beat in vanilla and salt. Gently fold chocolate mixture into yolk mixture. Using clean dry beaters, beat egg whites and remaining 6 tablespoons sugar in another large bowl until peaks form. Fold 1/3 of beaten whites into chocolate mixture. Fold in remaining whites in 2 additions. Transfer batter to prepared pan.
  • Bake cake until tester inserted into center comes out with moist crumbs attached, about 45 minutes (cake will be puffed and soufflé-like while baking). Cool cake in pan on rack 15 minutes (cake will fall in center). Run knife around cake sides to loosen; press edge of cake down to make level with center. Remove pan sides and cool cake completely. DO AHEAD Can be made 1 day ahead. Cover and store at room temperature.
  • For ganache:
  • Combine chocolate and cream in medium metal bowl. Set bowl over saucepan of simmering water and stir until chocolate is melted and mixture is smooth. Remove bowl from over water; let stand until ganache cools slightly but is still pourable, about 5 minutes.
  • Place cooled cake on rack set over rimmed baking sheet. Pour 1/2 cup ganache over top of cake. Using offset spatula, quickly spread ganache over top and sides of cake. Freeze cake 3 minutes. Pour remaining ganache over top of cake. Working quickly but gently and grasping pan bottom and rack together, slightly tilt rack with cake from side to side, allowing ganache to flow evenly over top and down sides of cake; smooth sides with offset spatula. Press hazelnuts onto sides of cake to adhere. Chill cake until ganache is set, about 1 hour. DO AHEAD Can be made 1 day ahead. Cover with cake dome and keep refrigerated. Let stand at room temperature 45 minutes before serving.
  • Cut cake into wedges. Garnish with whipped cream and spoon brandied cherries alongside.

5 ounces soy oil
4 ounces balsamic vinegar
2 ounces mirin
1 ounce black peppercorns
1/2 ounce sugar
1/2 teaspoon salt
8 cloves garlic, crushed
6 sprigs fresh thyme, leaves picked
4 sprigs fresh rosemary, leaves picked
Four 8-ounce hanger steaks, cleaned
1/2 cup chopped shallots
1/4 cup unsalted butter
3 tablespoons Dijon mustard
3/4 cup brandy
1 cup dried tart cherries, rehydrated in 1 cup hot water with 1/4 cup red wine vinegar and 3 tablespoons sugar
3 cups veal stock
1 tablespoon fresh tarragon leaves, finely chopped
Freshly cracked black pepper
Oil, for pan roasting
Kosher salt and freshly ground black pepper

Steps:

  • For the marinade: Combine the soy sauce, soy oil, balsamic vinegar, mirin, black peppercorns, sugar and salt in a blender and blend well. Mix with the garlic, thyme and rosemary.
  • Pour the marinade over the steaks and refrigerate for at least 6 hours.
  • For the cherry sauce: Gently saute the shallots in half the butter in a heavy-bottomed pot until soft and translucent. Add the mustard and cook for one minute. Hold the pan away from the flame, add the brandy, and then return to the flame to ignite and flambe the shallots. When the flame dies down, add the cherries with their rehydrating liquid and the veal stock. Bring to a boil and simmer for 10 minutes, and then stir in the remaining butter. Finish with the tarragon and lots of freshly cracked pepper.
  • Heat a cast-iron skillet over medium-high heat and add some oil. Pat the steaks dry with a paper towel and sprinkle with salt and pepper. Saute until nicely browned all around, about 7 minutes for medium rare. Remove and let rest for at least 2 minutes on a paper towel. Place the steaks on a large plate and ladle the sauce directly on top. Serve immediately.

6 ounces fine-quality bittersweet chocolate (not unsweetened), chopped
about 2 1/4 cups super-premium vanilla ice cream, softened
about 1/2 cup creamy caramel sauce
6 tablespoons ground pecan praline
Accompaniment: brandied dried cranberries and cherries
Garnish: 12 pecan praline shards (reserved from praline recipe )
*available at supermarkets under store brand name

Steps:

  • With scissors carefully cut through rims of cups and cut evenly around each cup to create a 2 3/4-inch-deep cup.
  • In a double boiler or a metal bowl set over a saucepan of barely simmering water melt chocolate, stirring until smooth, and remove double boiler or pan from heat. With a small pastry brush, lightly coat insides of cups with chocolate just to cover and on a tray freeze cups, right side up, until chocolate is firm, about 3 minutes. Add more coats of chocolate in same manner until an 1/8-inch-thick chocolate coating is formed inside each cup.
  • Spoon about 2 heaping tablespoons ice cream into bottom of each cup, smoothing surface with the back of a long-handled small metal spoon. Freeze cups until firm, about 30 minutes. Top ice cream in each cup evenly with 1 heaping tablespoon caramel sauce and sprinkle evenly with 1 tablespoon ground praline. Freeze cups 15 minutes. Top praline in each cup with a scant 1/4 cup ice cream, filling just to rim and smoothing with a spatula. Freeze cups until ice cream is frozen hard, about 1 hour. Ice-cream bombes may be prepared up to this point 5 days ahead and kept frozen, covered, in plastic cups.
  • To unmold bombes, carefully tear rim of each cup and continue tearing to remove cup. Ice-cream bombes may be unmolded 4 hours ahead and kept frozen, wrapped in plastic wrap.
  • Arrange bombes, ice-cream sides down, on each of 6 dessert plates. Spoon brandied dried fruit over and around bombes and garnish with praline shards.

  • - About the chocolate sponge cake: The recipe calls for an 2x 8" pan at 325 c for about 35-40 minutes. I used my 9" pan which would give me a much thicker sponge cake. Naturally I had to either increase the baking time or the oven temperature, I chose the later but kept the baking time at 35-40 minutes. 35 minutes was perfectly enough. - To create the layers I cut the 9" cake in half and trimmed off the top. - I used 5 cups of brandied cherries as opposed to the recipe's 3 cups. I would still increase it to 6 cups. - I would probably eliminate the sugar in the brandied cherry recipe. - I reduced the cherry liquid to half a cup and spooned it over the cake layers. - I used 5 times the amount of mousse that Dorie's recipe called for. Which was just enough. Next time I might use a different mousse recipe just to see the difference. This one had way too many eggs. - I used my medium round pastry tip to do the doodling for the chocolate collar. - The cake tastes noticeably better when left in the fridge for at least 24 hours. -Let the mousse set and then top the layers and crumb coat the cake with it. It is much easier and eliminates the need for a pastry ring or acetate. - I used about a cup of fresh cherries (stems attached) plus sliced (didn't have slivered) pistachios to top the cake.

  • Cut cherries in half and pit them, working over a bowl to catch the juices.
  • Set aside.
  • In a small heavy saucepan over medium high heat, bring the sugar and 1/4 cup of brandy to boil, stirring until the sugar is dissolved.

  • Buy some Maraschino cherries with stem (very important) Put them in a glass bowl and cover with cognac or brandy. Put in the freezer for 24 hours. After those 24 hours melt some very good quality chocolate (milk or dark chocolate, depends on your taste). Add some shortening just a little Take 2 or 3 cherries at a time out of the freezer (not more because they have to be very very cold) dip them in the melted chocolate with a swirl motion, let drip 2 or 3 seconds and put on waxed paper. Do this until you are done with all the cherries. When the chocolate is set, put them in a metal box with some wax paper between the layers. They must be served at room temperature.

1 medium-size ripe pineapple, cored and sliced into 1-inch rings, retain stem for garnish
4 ounces dark rum
2 ounces dark brown sugar
4 ounces cherry pie filling
2 ounces brandy or cognac
1 ounce shaved white chocolate

  • Preheat the grill on high heat.
  • Place the pineapple rings in a shallow baking dish and cover with brown sugar and rum ¿ gently stir sugar and rum coating each side of the pineapple rings with mixture. Pork and fruit is a classic combination, and for good reason: The sweetness and tang of the fruit softens the gamy richness of the meat. Here, a pan sauce of ripe summer cherries seasoned with a little brandy and fresh thyme adds verve and complexity to seared pork chops, while garam masala and allspice add heady, aromatic notes. You can use either sour or sweet cherries, as long as you balance the flavors at the end. Sweet ones will need a touch of vinegar for acidity, while sour cherries may need a drizzle of honey. Do take the time to get a good, dark sear on the meat before making the sauce. Those browned bits on the bottom of the pan are the flavor backbone of the sauce. The darker the color, the deeper the sauce.

1 3/4 teaspoons kosher salt, more to taste
1 1/2 teaspoon garam masala
1/2 teaspoon black pepper
1/4 teaspoon ground allspice
2 bone-in pork chops, 1 1/2 inches thick, about 1 pound each
1 tablespoon olive oil
1 garlic clove, smashed and peeled
2 tablespoons brandy
2 cups fresh sweet or sour cherries, pitted and halved
4 sprigs thyme, plus thyme leaves for garnish
1 tablespoon unsalted butter
1/2 teaspoon sherry vinegar or honey, or more to taste (use the vinegar with the sweet cherries, the honey with the sour cherries)

Steps:

  • Combine salt, garam masala, pepper and allspice in a small bowl. Rub mixture all over pork chops, covering their entire surface. Let chops rest for 15 to 30 minutes at room temperature, or up to 24 hours, covered, in the refrigerator.
  • Heat a 10-inch skillet at medium-high. Add oil. Sear pork chops until brown, about 2 to 3 minutes per side. Add garlic to pan, then sear the fatty edges of the chops, using tongs to hold them up, for about 30 seconds to 1 minute each. (Flip the garlic after it browns on one side.) If the pan starts to smoke at any point, lower the heat. Transfer the pork to a plate, and spoon off all but a thin layer of fat from pan. (Leave garlic in the pan.)
  • Add brandy to pan, let it simmer until the alcohol burns off (about 30 seconds), then add cherries, thyme and 2 tablespoons water. Let simmer for 1 minute.
  • Move cherries to the sides of the pan and return pork chops to the center so they can make contact with the metal. Cover pan and cook over low heat for about 7 minutes, until meat reaches 130 to 135 degrees on an instant-read thermometer. (Its temperature will rise as it rests.) Transfer the pork to a cutting board and let rest for 5 minutes.
  • Meanwhile, add butter and vinegar or honey to the pan, stirring until butter melts and coats the cherries. Taste and add more honey or vinegar, and salt as needed. Serve pork with cherries and more thyme on top.

48 maraschino cherries with stems, well-drained
1/2 cup brandy
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
36 vanilla creme-filled chocolate sandwich cookies, finely crushed
24 oz. BAKER'S White Chocolate, melted

Steps:

  • Soak cherries in brandy overnight. Drain well on paper towels.
  • Mix cream cheese and cookie crumbs until blended. Shape into 48 (1-inch) balls. Gently mold cream cheese mixture around each cherry.
  • Dip in melted chocolate; place on waxed paper-covered rimmed baking sheet. Refrigerate 1 hour or until firm.

Flourless Chocolate Cake with Toasted Hazelnuts and Brandied Cherries image

This over-the-top cake has impressive looks and moistness. Start the cherries ahead: They soak in brandy for a week and then in syrup for at least two days.

1 750-ml bottle brandy
1 1/2 cups dried tart cherries
1 cup water
1 cup sugar
10 ounces bittersweet or semisweet chocolate, chopped
1 1/4 cups (2 1/2 sticks) unsalted butter, diced
10 large egg yolks
1/2 cup plus 6 tablespoons sugar
2 teaspoons vanilla extract
1/4 teaspoon salt
9 large egg whites
8 ounces bittersweet or semisweet chocolate, chopped
1 cup heavy whipping cream
1 1/2 cups hazelnuts, toasted, coarsely chopped

Steps:

  • For brandied cherries:
  • Combine brandy and dried cherries in 4-cup glass container with lid. Cover and let soak at room temperature 1 week.
  • Bring 1 cup water and sugar to boil in medium saucepan, stirring until sugar dissolves. Remove from heat and cool syrup. Drain brandy from cherries (reserve brandy for another use). Add sugar syrup to cherries and stir to blend. Let soak at room temperature at least 2 days. DO AHEAD Can be made 2 weeks ahead. Store covered at room temperature.
  • For cake:
  • Position rack in center of oven and preheat to 350°F. Butter 10-inch-diameter springform pan with 2 3/4-inch-high sides. Line bottom of pan with parchment paper round. Place chocolate and 1 1/4 cups butter in medium metal bowl. Set bowl over saucepan of simmering water; stir until mixture is melted and smooth. Remove bowl from over water; cool to lukewarm, about 10 minutes.
  • Using electric mixer, beat egg yolks and 1/2 cup sugar in large bowl until very thick and pale yellow in color, about 5 minutes. Beat in vanilla and salt. Gently fold chocolate mixture into yolk mixture. Using clean dry beaters, beat egg whites and remaining 6 tablespoons sugar in another large bowl until peaks form. Fold 1/3 of beaten whites into chocolate mixture. Fold in remaining whites in 2 additions. Transfer batter to prepared pan.
  • Bake cake until tester inserted into center comes out with moist crumbs attached, about 45 minutes (cake will be puffed and soufflé-like while baking). Cool cake in pan on rack 15 minutes (cake will fall in center). Run knife around cake sides to loosen; press edge of cake down to make level with center. Remove pan sides and cool cake completely. DO AHEAD Can be made 1 day ahead. Cover and store at room temperature.
  • For ganache:
  • Combine chocolate and cream in medium metal bowl. Set bowl over saucepan of simmering water and stir until chocolate is melted and mixture is smooth. Remove bowl from over water; let stand until ganache cools slightly but is still pourable, about 5 minutes.
  • Place cooled cake on rack set over rimmed baking sheet. Pour 1/2 cup ganache over top of cake. Using offset spatula, quickly spread ganache over top and sides of cake. Freeze cake 3 minutes. Pour remaining ganache over top of cake. Working quickly but gently and grasping pan bottom and rack together, slightly tilt rack with cake from side to side, allowing ganache to flow evenly over top and down sides of cake; smooth sides with offset spatula. Press hazelnuts onto sides of cake to adhere. Chill cake until ganache is set, about 1 hour. DO AHEAD Can be made 1 day ahead. Cover with cake dome and keep refrigerated. Let stand at room temperature 45 minutes before serving.
  • Cut cake into wedges. Garnish with whipped cream and spoon brandied cherries alongside.

How to make Hanger Steak with Brandied Cherries

HANGER STEAK MARINADE:
7 ounces soy sauce
5 ounces soy oil
4 ounces balsamic vinegar
2 ounces mirin
1 ounce black peppercorns
1/2 ounce sugar
1/2 teaspoon salt
8 cloves garlic, crushed
6 sprigs fresh thyme, leaves picked
4 sprigs fresh rosemary, leaves picked
Four 8 ounce hanger steaks, cleaned

Steps:

  • For the marinade:
  • Combine the soy sauce, soy oil, balsamic vinegar, mirin, black peppercorns, sugar and salt in a blender and blend well. Mix with the garlic, thyme and rosemary.
  • Pour the marinade over the steaks and refrigerate for at least 6 hours.
  • For the cherry sauce:
  • Gently saute the shallots in half the butter in a heavy-bottomed pot until soft and translucent. Add the mustard and cook for one minute. Hold the pan away from the flame, add the brandy, and then return to the flame to ignite and flambe the shallots. When the flame dies down, add the cherries with their rehydrating liquid and the veal stock. Bring to a boil and simmer for 10 minutes, and then stir in the remaining butter. Finish with the tarragon and lots of freshly cracked pepper.
  • Heat a cast-iron skillet over medium-high heat and add some oil. Pat the steaks dry with a paper towel and sprinkle with salt and pepper. Saute until nicely browned all around, about 7 minutes for medium rare. Remove and let rest for at least 2 minutes on a paper towel. Place the steaks on a large plate and ladle the sauce directly on top. Serve immediately.

1 cup sugar
1 cup water
1/4 cup lemon juice
1 1/4 cups brandy

Steps:

  • Wash & pit cherries.
  • Combine sugar, water & lemon juice in a large saucepot.
  • Bring to a boil; reduce heat to a simmer. Add cherries & simmer until hot throughout. Remove from heat; stir in brandy.
  • Pack hot cherries into hot jars, leaving 1/2" headspace.
  • Ladle hot syrup over cherries, leaving 1/4" headspace.
  • Remove air bubbles.
  • Adjust two-piece caps.
  • Process 10 minutes in a boiling-water canner.
