This is my mom's recipe. This squash casserole is filled with flavor and baked with a wonderful stuffing crust. If you like yellow summer squash, then you'll love this great recipe!

2 tablespoons butter
3 pounds yellow squash, chopped
2 onions, chopped
1 cup shredded sharp Cheddar cheese
1 cup mayonnaise
3 eggs, beaten
12 saltine crackers, crushed
1 (1 ounce) package dry Ranch-style dressing mix
1 teaspoon salt
2 cups dry bread stuffing mix
½ cup melted butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt 2 tablespoons butter in a large saucepan over medium-high heat. Cook squash and onions until tender. Remove from heat, and stir in Cheddar cheese, mayonnaise, eggs, and crackers. Season with Ranch dressing mix and salt.
  • Spread the squash mixture into a medium baking dish. Mix together stuffing and 1/2 cup melted butter, and sprinkle over the squash mixture.
  • Bake 20 to 30 minutes in the preheated oven, or until firm and lightly browned.

This easy and delicious fall side dish only requires a few minutes of hands-on time, leaving you free to work on the rest of the meal.

2 tablespoons butter, plus more for surface
2 medium acorn squash, (about 1 1/2 pounds each)
2 tablespoons light-brown sugar
Coarse salt and ground pepper

Steps:

  • Preheat oven to 425 degrees. Generously butter a rimmed baking sheet.
  • Halve squash crosswise. Scoop out seeds; discard. Slice a small piece off bottom of each squash half just enough to level.
  • Set squash halves, scooped sides down, on prepared sheet. Bake until golden, 20 to 25 minutes. Turn squash; prick insides all over with a fork. Divide 2 tablespoons butter and sugar among halves; season with salt and pepper. Continue to bake until flesh is easily pierced with the tip of a paring knife, 25 to 30 minutes. Serve warm.

This Bacon Ranch Spaghetti Squash is an easy and delicious side dish made with just 4 simple ingredients!

1 spaghetti squash
3 cups water
12 strips of bacon (cooked and crumbled)
1 ounces ranch dressing mix (1 packet)

Steps:

  • Preheat oven to 375 degrees F.
  • Place 3 cups of water into a 9x13-inch glass baking pan.
  • Place the whole spaghetti squash in the pan with water and cover with aluminum foil.
  • Bake for 1 hour.
  • Remove spaghetti squash from the oven and carefully cut in half.
  • Scoop seeds out of the center of the squash and shred with a fork.
  • Place the shredded spaghetti squash in a bowl with the bacon.
  • Add the ranch packet and mix until fully combined.
  • Serve warm.
