ALL BRAN LOAF CAKE



All Bran Loaf Cake image

This is a fruit loaf cake, using All Bran as the main ingredient.

Number Of Ingredients 5

1 cup All Bran
1 cup Milk
1 cup Self raising flour
1/2 cup or 1 cup Soft brown sugar (depending on desired sweetness)
A standard loaf tin

Steps:

  • Grease and line your loaf tin, and preheat the oven to 170C/fan 150C/gas 5.
  • Use a cup to measure the ingredients (I use my small measuring jug featured in the photograph.)
  • Pour the All bran and milk into a bowl. Leave the All Bran to soak up the milk (about 5-10 mins.)
  • Add the self raising flour and sugar to your mixture and stir.
  • Cut up your dried fruit (if using prunes and apricots) and dust with some of the self raising flour. Add the fruit to your mixture and stir.
  • The mixture should be thick and gloopy, if it isn't you may wish to add a bit more milk. Transfer the mixture to your loaf tin and put in the oven for 1 hr -1 hr 30 mins. Check on the loaf after 1 hr by putting a knife through the middle, if it comes out clean the loaf is cooked, if not leave it in a little longer.

1 ½ cups boiling water
½ cup rolled oats
½ cup whole bran cereal
1 cup white sugar
1 cup packed light brown sugar
½ cup shortening
2 eggs
1 teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon salt
1 ½ cups all-purpose flour

Steps:

  • Pour boiling water over oats and bran cereal, and let stand 10 minutes.
  • Combine the remaining ingredients, and add oat mixture to them. Pour into two 8 or 9 inch pans.
  • Bake at 350 degrees F ( 175 degrees C) for 30 to 40 minutes. To make muffins bake about 15 minutes, or until toothpick comes out clean.

1/2 cup whole wheat flour
2 teaspoons baking soda
1/2 teaspoon salt

1 cup sugar
2 eggs
4 cups apples (peeled and chopped)
1 cup Kellogg's all-bran cereal

Steps:

  • Stir together flour, soda, salt, cinnamon and nutmeg. Set aside.
  • In medium mixing bowl, beat together the 1/2 cup margarine and the 1 cup sugar until light and fluffy.
  • Add eggs. Beat well.
  • Stir in apples,All-Bran Buds cereal and flour mixture. Stir until thoroughly combined.
  • Spread evenly in greased 9 x 9 x 2-inch baking pan.
  • Bake at 350° F about 1 hour or until cake begins to pull away from sides of pan. Cool completely.
  • Frost or dust with powdered sugar.

1 cup 100% bran (fiber one, Bran buds or All bran)
1 cup water
1 medium egg
3 tablespoons dark molasses
1/3 cup vegetable oil
1 cup all-purpose flour
3 tablespoons packed brown sugar
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1/3 cup finely chopped dates

Steps:

  • Place bran, water, egg, molasses and veggie oil in a small bowl. Mix lightly and let stand at room temperature for 30 to 45 minutes. (This timing is very important.)
  • Place flour, brown sugar, salt, baking powder, soda and dates in a mixer bowl and mix at low speed for about 1/2 minute to blend well.
  • Add the bran mixture and mix at medium speed to blend well. Do not overmix.
  • Spread evenly in a well greased 8 inch square pan and bake at 375 degrees F for 20 to 25 minutes or until the cake is firm in the centre and draws away from the sides of the pan.

  • Measure out the all-bran, milk and sugar then mix together in a large mixing bowl - leave to soak for 25 minutes
  • Measure out the flour and sultanas then add to the mixture - stir in well
  • Add the honey and mashed/pureed bananas
  • Pour into a greased loaf tin at then place into a pre-heated oven a 180C
  • Bake for approximately 30-40minutes our until a knife comes out clean
  • Leave to stand for at least 1 hour before serving - the cake will seem quite mushy at first but will soon set

1 1/2 cups sugar
4 eggs
1 (14 ounce) can crushed pineapple, well drained, reserve some juice
1/4 cup pineapple juice, reserved from the pineapple
2 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon baking soda
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground nutmeg
2 cups finely grated raw carrots
1 cup all-bran cereal
1/2 cup chopped nuts

Steps:

  • Blend together the oil and sugar. Add eggs, one at a time, beating well after each addition. Stir in pineapple juice.
  • Combine flour, baking powder, salt, soda and spices. Gradually add to the first mixture, beating until well blended.
  • Stir in carrots, cereal, crushed pineapple and nuts.

1 cup low-fat milk
1 cup all-bran cereal
3/4 cup wholemeal self-rising flour

Oat bran or wheatabix - 1 cup
Whole wheat pastry flour - 1/2 cup
All purpose flour - 1/2 cup
Brown sugar - 1/4 cup
Baking Powder - 2 tsp
Organic Fat-free milk - 1 cup
Egg whites - 2
Honey - 1/4 cup
Vegetable oil - 2 tbsp
Cinnamon -1 tsp
vanilla extract - 1 tsp
Blueberries or Saltanas (according to your taste) 1 cup
A combination of your choice of nuts - almonds, pecans, walnuts, cashews. (optional)

Steps:

  • Preheat oven to 400F.
  • Mix the dry ingredients (oat bran, whole wheat pastry flour, all purpose flour, baking powder, cinnamon) and set aside.
  • Mix the wet ingredients (egg whites, honey, vanilla extract, milk, oil)
  • Add wet ingredients to the dry ingredients and mix. Do not overmix.
  • Gently fold in the blueberries and nuts.
  • Spray a small cake tin or loaf tin with cooking spray (or grease with butter & flour) and pour the mixture into the dish and slide it into the oven.
  • Let it bake for 30-35 minutes. (I had to bake mine for 40 minutes. So, please adjust according to your oven)
  • Check its fully cooked through with a toothpick or a fork.
  • This cake made for a wonderful combination with coffee. Ive paired it with fresh fruits for a filling and healthy breakfast. This cake is not very sweet. You can increase the amount of brown sugar or honey to suit your taste. Or drizzle some maple syrup on top for your breakfast. We have sliced it warm and spread lightly with butter like a malt loaf, very tasty.
