This hearty version of our chile was developed to feed a patrol of eight hungry Boy Scouts. The recipe uses every ounce of every can and uses packaged measurements so there is no room for error in cooking and no leftovers. Accompany this excellent pinto bean chile con carne with dutch oven corn bread or camp-made deep fried sopapillas and honey-butter. Top off the meal with a cranberry-orange juice cooler.

1 lb ground beef
1/2 lb pork or 1/2 lb chicken
1 cup onion
1 teaspoon salt
1 cup chili powder
15 ounces pinto beans, in chili gravy
15 ounces crushed tomatoes
8 ounces diced tomatoes
8 ounces yellow hominy, drained
1/3 ounce chopped green chili
12 ounces spicy hot V8 (vegetable juice)

Steps:

  • Sauté ground beef over medium heat.
  • Add diced meat, and continue heating.
  • Add onions and cook with meats until tender.
  • Add seasonings and canned ingredients.
  • Stir until well blended.
  • Adjust thickness with tomato juice and water as needed.
  • Simmer over low heat for 30 minutes, stirring occasionally.

I have an enormous family and all of the men go trail riding several times a year and these beans are one of the things they look forward to. My aunts and I put together their favorite combination several years ago, and have it ready at their camp, and they are some happy cowboys! You can mix different beans to your liking (lima, kidney, etc.), but the boys in our family like this mixture the best.

1 pound bacon
2 pounds ground beef
1 large onion, chopped
1 cup ketchup
⅓ cup brown sugar
1 (55 ounce) can baked beans (such as Bush's®)
2 (15 ounce) cans Great Northern beans
1 (15 ounce) can pinto beans
1 (15 ounce) can pork and beans

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned and crispy, 10 to 12 minutes. Drain bacon slices on paper towels and crumble when cool enough to handle.
  • At the same time, heat another large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
  • Place bacon, ground beef, onion, ketchup, and brown sugar in a slow cooker; mix well. Add baked beans, Great Northern beans, pinto beans, and pork and beans.
  • Cook on Low, stirring often, about 4 hours.

1/2 lbs Hot sausage
2 cups sweet onions, diced
1 1/2 t. garlic cloves, minced
1/2 cup barbecue sauce
1/2 cup brown sugar, packed
1 (15 ounce) can chili beans, do not drain
1 (15 1/2 ounce) can dark red chili beans, do not drain
1 (15 1/2 ounce) can dark red kidney beans, do not drain
1 (15 ounce) can black-eyed peas, do not drain
1 (15 ounce) can pinto beans, do not drain
1 (16 ounce) can great northern beans, do not drain
to taste salt
to taste pepper
1 pod jalapeno pepper, seeded, minced (optional)
to taste sweet pepper, chopped green chilies (optional)

Steps:

  • Mix. Cook in Crock Pot for 3 to 4 hrs. on low.
