About 1/2 cup walnut halves
1 pound twisted pasta such as campanelle, caserecci, or cavetelle
2 sticks unsalted butter
1 small bunch sage leaves, about 10 or 12 leaves, large stems plucked

Steps:

  • Preheat oven to 350 degrees F.
  • Lay walnuts on a baking sheet and bake 7 to 10 minutes, until toasted and fragrant. Cook the pasta in a large pot of boiling salted water until al dente.
  • In a skillet, melt the butter over medium heat. Continue to heat and stir the butter until it turns light brown, about 4 minutes. Remove from the heat and add the sage leaves. Cook until crisped and the butter has turned a dark shade of brown.
  • Toss the butter and sage gently with the pasta, being careful not to break the sage leaves up too much. Divide pasta among serving bowls and top with the crushed toasted walnuts.

1 cup walnuts, coarsely chopped
3/4 lb bow tie pasta
5 tablespoons unsalted butter
12 fresh sage leaves, coarsely chopped
2 tablespoons lemon juice
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup romano cheese, shredded

Steps:

  • Place walnuts in large, dry nonstick skillet over medium heat.
  • Cook 4-5 minutes, until toasted, shaking pan constantly.
  • Remove walnuts, set aside.
  • Cook pasta in boiling salted water according to package directions, about 10 minutes.
  • When pasta is almost done, melt butter in large nonstick skillet over medium heat.
  • Add sage, lemon juice, salt and pepper.
  • Cook a minute or two to blend flavors.
  • Remove from heat.
  • Drain pasta, reserving 1/2 cup pasta cooking water, then add pasta to butter in skillet.
  • Gradually add pasta water.
  • Stir in cheese and toss to combine.
  • Garnish with toasted nuts and serve.

1 package (16 ounces) bow tie pasta
1 package (16 ounces) bulk pork sausage
2 tablespoons butter
2 tablespoons all-purpose flour
1-1/2 cups half-and-half cream
3/4 cup crumbled Gorgonzola cheese
3/4 teaspoon salt
1/2 teaspoon lemon-pepper seasoning
4 cups fresh spinach, lightly packed
3 tablespoons minced fresh basil

Steps:

  • Cook pasta according to package directions. Drain; return to pan. Meanwhile, in a large skillet, cook sausage over medium heat until no longer pink, 4-6 minutes, breaking into crumbles; drain., In a small saucepan, melt butter over medium heat. Stir in flour until smooth; gradually whisk in cream. Bring to a boil, stirring constantly; cook and stir until thickened, 1-2 minutes. Remove from heat. Stir in cheese, salt and lemon pepper. 2 sticks (16 tablespoons) unsalted butter
1/2 teaspoon kosher salt, plus more for pasta water
1 pound farfalle (bowtie pasta)
1 cup panko breadcrumbs
1/4 cup finely chopped fresh parsley
1 tablespoon lemon zest
Freshly ground black pepper
1/4 cup finely grated Parmesan, plus more for serving

Steps:

  • Place the butter in a Dutch oven or large, high-sided saucepan over medium-high heat. Cook until the butter becomes golden brown and fragrant, 3 to 4 minutes. Remove from heat, cover and set aside.
  • Bring a pot of generously salted water to bowl. Cook the farfalle until it is al dente, 8 to 10 minutes. Meanwhile, place the breadcrumbs in a dry pan and toast over medium heat until lightly golden, 2 to 3 minutes. Remove from the heat and transfer to a small bowl. Add the parsley, lemon zest, salt, pepper and 2 tablespoons of the brown butter and stir to combine. Set aside.
  • Put the brown butter back on medium heat. Drain the farfalle and add it to the butter, tossing to coat. Sprinkle with the breadcrumbs and Parmesan and serve with more Parmesan.

2 medium butternut squash, peeled, seeds and fibers scooped out, cut into 1/2-inch cubes
1 pound bow-tie pasta
4 teaspoons melted unsalted butter
1/2 cup chicken broth, homemade or low-sodium canned
2 tablespoons, plus 2 teaspoons, chopped fresh sage
2 1/2 teaspoons salt
1 teaspoon freshly ground pepper, plus more to taste
3 tablespoons freshly grated Parmesan cheese
1/2 cup dry bread crumbs

Steps:

  • Preheat the oven to 375 degrees. Place the squash on a baking sheet and roast until tender, about 25 minutes. Meanwhile, bring a large ovenproof pot of lightly salted water to the boil. Add the pasta and cook until al dente, about 11 minutes. Drain, rinse and drain again.
  • Lower the oven to 350 degrees. Place the pasta back in the pot and add the squash, butter, chicken broth, 2 tablespoons of the sage, 2 teaspoons of the salt, 1/2 teaspoon pepper and 2 tablespoons Parmesan. Toss to mix well. In a small bowl, combine the bread crumbs, remaining 2 teaspoons sage, 1/2 teaspoon salt, 1 tablespoon Parmesan and pepper to taste. Sprinkle the mixture over the top of the pasta. Bake for 15 minutes. Divide among 4 plates and serve immediately.
