2 cups uncooked bow-tie (farfalle) pasta (5 oz)
1/2 cup reduced-fat chives-and-onion cream cheese (from 8-oz container)
3/4 cup half-and-half
1 cup ready-to-eat baby-cut carrots, cut lengthwise in half if large
8 oz fresh asparagus spears, cut into 1 1/2-inch pieces
1 1/2 cups cooked ham strips (1x1/4-inch)
1/4 teaspoon dried marjoram leaves

Steps:

  • Cook and drain pasta as directed on package.
  • Meanwhile, in 12-inch nonstick skillet, mix cream cheese and half-and-half. Cook over medium heat 2 to 3 minutes, stirring constantly, until melted and smooth.
  • Stir in carrots. Cook 4 minutes, stirring occasionally. Stir in asparagus. Cover; cook 4 to 5 minutes, stirring occasionally, until vegetables are crisp-tender.
  • Stir in pasta, ham and marjoram. Cook, stirring occasionally, just until thoroughly heated.

1 pound ground beef
1 cup chopped onion
1 can (14-1/2 ounces) beef broth
1-1/2 cups uncooked bow tie pasta
1/2 cup water
1 teaspoon Italian seasoning
1 teaspoon chili powder
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/4 teaspoon pepper
1 cup chopped sweet yellow pepper
1 cup chopped zucchini
2 cups chopped tomatoes
1 cup shredded cheddar cheese

Steps:

  • In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the broth, pasta, water and seasonings. Bring to a boil. Reduce heat; cover and simmer for 15 minutes., Add yellow pepper and zucchini; cover and cook 2-4 minutes longer or until pasta and vegetables are tender, stirring occasionally. Stir in tomatoes; sprinkle with cheese.

1 tablespoon vegetable oil
1 small onion, chopped (1/4 cup)
1 clove garlic, finely chopped
1 medium zucchini or yellow summer squash, sliced (2 cups)
1 can (14 1/2 ounces) Italian-style stewed tomatoes, undrained
2 tablespoons chopped fresh or 1 teaspoon dried basil leaves
1/3 cup plus 2 tablespoons finely shredded Parmesan cheese

Steps:

  • Cook and drain pasta as directed on package.
  • While pasta is cooking, heat oil in 12-inch skillet over high heat. Add onion and garlic; stir-fry 1 minute. Add zucchini; stir-fry 1 minute.
  • Stir in tomatoes and basil. Heat to boiling; reduce heat to medium. Cook about 2 minutes, stirring occasionally, until vegetables are crisp-tender.

1/2 cup water
4 ounces green beans, cut into 2-inch pieces (2 cups)
1 tablespoon olive or vegetable oil
6 ounces whole mushrooms, cut into fourths (2 cups)
1 medium zucchini, cut lengthwise into eighths, then into 1-inch pieces
1 medium yellow onion, cut into 1/4-inch wedges
2 cloves garlic, finely chopped
2 tablespoons chopped fresh or 2 teaspoons dried oregano leaves
3/4 teaspoon salt
4 ounces cherry tomatoes, cut in half
1/2 cup shredded Asiago or Parmesan cheese (2 ounces)

Steps:

  • Cook and drain pasta as directed on package.
  • Meanwhile, in 10-inch nonstick skillet, heat water to boiling. Add beans; boil uncovered 5 minutes. Cover and boil 2 to 4 minutes or until crisp-tender. Drain; set aside.

3 tablespoons flour
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup skim milk
1 cup chicken broth
1/2 cup parmesan cheese, grated
3 cups bow tie pasta
2 garlic cloves, minced
2 chicken breasts, cut into 3/4 inch pieces
2 cups uncooked vegetables (broccoli, carrots, sweet peppers etc)
salt, to taste
pepper, to taste

Steps:

  • In a 2 quart saucepan stir together flour, salt, pepper, milk and chicken broth. Cook on medium heat, stirring often, until mixture is thick and bubbly. Add 1/4 cup parmesan cheese; cook and stir 2 minutes more.
  • Cook pasta according to package directions. After approximately 6 minutes, add vegetables and allow to cook for 3 minutes longer. Drain.
  • While sauce and pasta are cooking, cook garlic and seasoned chicken in skillet on medium heat for 5-6 minutes.
  • Combine chicken and sauce with pasta and veggies. Garnish with remaining parmesan cheese.

This is real comfort food and a bit healthy!! A Wolfgang Puck recipe and it is a complete meal or side dish to fee more people. This is about three or four different recipes if done "The Chef Way" or my version. Wine Pairing: Look for the freshness of a Sauvignon Blanc from Sancere or New Zealand to accompany this pasta. Goldwater's Dog Point or Villa Maria are both excellent and affordable wines that are perfect accompaniments. :)

2 tablespoons oven dried tomatoes flavored oil
1 tablespoon roasted garlic (you can buy already roasted)
4 tablespoons unsalted butter, cut into small pieces
2 tablespoons sun-dried tomatoes
2 cups chicken stock or 2 cups organic low sodium chicken broth
2 teaspoons chopped fresh oregano
2 teaspoons thyme leaves
4 tablespoons chopped fresh Italian parsley
1/2 teaspoon kosher salt
fresh ground white pepper
2 ounces French haricots vert or 2 ounces green beans, trimmed
1 carrot, trimmed and cut into thin slices
12 asparagus, cut into 2-inch slices
1 cup broccoli floret
1/2 cup fresh peas
12 ounces bow tie pasta
1/2 cup freshly grated parmesan cheese, & some for serving

Steps:

  • Bring a large stockpot of water to a boil.
  • In a large skillet or saute pan, heat the flavored oil.
  • Add the roasted garlic, butter, tomatoes, and stock.
  • Season with the oregano, thyme, 2 tablespoons of the parsley, salt, and pepper, and reduce until slightly thickened.
  • Meanwhile, blanch all the vegetables, each type individually, in simmering salted water, about 1 minute.
  • Refresh in cold water, drain well, and set aside.
  • When the sauce has been reduced, add the vegetables and stir to heat through.
  • Add salt to the pot of boiling water and cook the bow ties until they are al dente, following the directions on the package.
  • Drain the pasta and stir it into the sauce, coating well.
  • Remove the skillet from the heat and stir in the grated cheese.
  • To serve, divide the pasta and vegetables among 4 large warm plates or bowls.
  • Sprinkle each serving with some of the remaining chopped parsley and serve immediately.
  • Additional Parmesan cheese can be grated onto the dish after serving.
