3 egg yolks
1 egg
1/4 cup spiced rum
2 tablespoons vanilla extract
1/2 teaspoon salt
1/4 cup confectioners' sugar
2 cups all-purpose flour
Oil for deep-fat frying
Additional confectioners' sugar

Steps:

  • In a large bowl, beat the egg yolks, egg, rum, vanilla and salt until blended. Gradually add confectioners' sugar; beat until smooth. Stir in flour until a stiff dough forms. Turn onto a lightly floured surface; knead seven times., Divide dough into three portions. Roll one portion into a 1/4-in.-thick rectangle, about 12 in. x 5-1/2 in. Cut in half lengthwise, then cut dough widthwise into 1-1/2-in.-wide strips. Cut a 3/4-in. lengthwise slit down the center of each strip; pull one of the ends through the slit, forming a bow. Repeat., In an electric skillet or deep-fat fryer, heat oil to 375°. Fry cookies, a few at a time, for 1-2 minutes on each side or until golden brown. Drain on paper towels. Dust with confectioners' sugar.

5 eggs
½ teaspoon vanilla extract
¾ cup vegetable oil
1 cup white sugar
2 ⅓ cups all-purpose flour
1 teaspoon salt

Steps:

  • Place the eggs, vanilla, vegetable oil, 1 teaspoon of the sugar, and the flour and salt in the bowl of an electric mixer fitted with the paddle and blend on low speed until incorporated. Then beat on high speed for 5 minutes.
  • Remove the paddle and scrape the batter down the sides of the bowl. Rest the dough in the bowl, covered, until soft and spongy outside, about 1 hour. Then remove it from the bowl, it will be sticky, and make a ball out of it.
  • Preheat oven to 350 degrees F (175 degrees C) and grease 2 baking sheets.
  • Sprinkle a work surface with the 1 cup sugar, about 1/8 inch deep. Place the dough in the center, flatten it slightly with a rolling pin and sprinkle the dough liberally with sugar.
  • Roll the dough to a thickness of 1/8 inch, a rectangle about 18 by 12 inches. Then, using a pastry cutter or a dull knife, cut out the dough into strips 3/4 inch wide and 2 inches long. Lift each strip, twist in the middle to make a bow tie and place on the cookie sheets, leaving 1/2 inch between each strip.
  • Bake the cookies for 25 to 30 minutes on the middle rack of the oven, until the cookies are hard to the touch on all corners and golden brown. (If using 1 oven, put the cookie sheets on the top and center racks, then switch them midway). To test for doneness, break a cookie in half. If it is doughy or too soft, it is not done yet. Return to the oven for a few minutes more.

9 egg yolks
3 tablespoons sour cream
1 tablespoon rum
1 teaspoon vanilla
1 cup confectioners' sugar
3 cups flour, sifted
1/2 teaspoon baking powder
1/2 teaspoon salt
3 tablespoons sugar
1 oil for deep frying

Steps:

  • Beat the egg yolks with the sugar until well combined. Add sour cream, rum and vanilla and mix until smooth. Sift the flour, baking powder and salt and add it to egg yolk mixture, a little at a time. On a heavily floured surface knead the dough vigorously, punching and squeezing as much flour into it as it will take until the dough is no longer sticky (1/2 hour). Separate dough into several portions and roll very thin. Turn the dough and loosen often when rolling. The dough should look like parchment paper that you can see through. Cut dough into strips approximately 1-1/2 inches wide, 4 inches long. Make slit closer to one end and bring the longer end through the slit. Heat oil to 375 degrees fahrenheit and fry quickly (only a few seconds) until golden not brown. Turn only once. Drain on paper towels. Dust with confectioners sugar.

2 tablespoons cornstarch
1/4 teaspoon salt
6 (1.5 oz) milk chocolate bars
2 cups whipping cream
1 egg yolk, beaten
1/2 teaspoon vanilla

Steps:

  • In saucepan stir together sugar, cornstarch and salt. Over medium heat add crumbled candy bars one at a time. Gradually stir in cream. Cook and stir over medium heat until chocolate melts. Temper egg yolk with 1/2 cup of hot chocolate sauce. Then add the egg yolk mixture back into the pot and cook. Stir until mixture comes to a boil. Remove from heat, add vanilla. Pour into serving bowl. **Any leftover can be poured into custard cups, refrigerated and served as a pudding.

1 cup confectioners' sugar
1 teaspoon baking powder
1/4 teaspoon salt
1 cup cold butter, cubed
1 egg, lightly beaten
1/2 cup heavy whipping cream
3 tablespoons butter, melted
Red and green colored sugar

Steps:

  • In a large bowl, combine the flour, sugar, baking powder and salt; cut in butter until crumbly. Combine egg and cream; gradually beat into crumb mixture until a ball forms. Cover and refrigerate for 30 minutes or until easy to handle., Divide dough into three portions. On a lightly floured surface, roll each portion into an 8-in. x 6-in. rectangle. Brush with melted butter; sprinkle with colored sugar. Cut into 8-in.-long x 1/4-in.-wide strips. Place 2 in. apart on ungreased baking sheets; form into bows., Bake at 350° for 10-12 minutes or until bottoms are lightly browned. Cool for 1 minute before carefully removing from pans to wire racks to cool completely.

1 tablespoon vanilla
3 cups flour

Steps:

  • Mix together all ingredients until well blended.
  • Taking a small part of the dough at a time, roll out very thin.
  • Cut into strips about 6" long and 1/2" wide.
  • Make a slit in center and pull one side of dough thru the slit.
  • Fry in hot oil until golden brown.
  • Drain on paper towels.
  • While still slightly warm sprinkle generously with confectioners sugar.

8 oz. cream cheese, softened
8 oz. (1 cup) unsalted butter, softened
11-1/4 oz. (2-1/2 cups) unbleached all-purpose flour, sifted; more for rolling
One 12-oz. jar good-quality apricot preserves (about 3/4 cup)
One large egg, beaten
Confectioners' sugar, for dusting

Steps:

  • In the bowl of a stand mixer fitted with the paddle attachment, beat the cream cheese and butter on medium-high speed until light and fluffy, about 3 minutes. Scrape down the bowl and paddle. With the mixer on low, gradually mix in the flour until a smooth dough forms.
  • Turn out onto a lightly floured work surface and knead the dough gently to form a ball. Divide the dough in thirds, wrap each in plastic or waxed paper, and flatten into squares. Refrigerate at least 4 hours or overnight.
  • Position a rack in the center of the oven and heat the oven to 400°F. Line 3 cookie sheets with parchment. Remove one piece of dough from the refrigerator and roll it out on a lightly floured surface into a 1/8-inch-thick rectangle. Using a sharp knife or a pizza cutter, trim the rough edges of the dough so the sides are straight, and then cut into 2-inch squares. Spoon about 1/2 tsp. of the preserves onto the center of each square. Fold one corner into the center, dab with the beaten egg, and then bring the opposite corner into the center and pinch firmly together to seal the corners. With a thin spatula, transfer the cookie to the cookie sheet. Repeat the process with the remaining dough.
  • Bake one sheet at a time until golden and very lightly browned and puffed, 10 to 12 minutes. Transfer to a rack to cool completely and then dust with confectioners' sugar.
  • You can freeze these cookies in freezer bags for up to 3 months.

8 oz butter (softened)
3/4 cup powdered sugar
1/2 teaspoon vanilla
2 1/2 cups flour
1/2 cup raspberry jam
1 egg white
1 Tablespoon water
powdered sugar for dusting cookies

Steps:

  • In a mixing bowl, mix cream cheese and butter together.
  • Mix in powdered sugar and vanilla.
  • Mix in flour. Beat until all flour is incorporated into dough.
  • Divide dough in half. Wrap each half in plastic wrap, flattening into a 4 inch disc.
  • Refrigerate for at least one hour or overnight.
  • When ready to bake, work with one disc of dough at a time.
  • Place on a lightly floured surface and roll into a rectangular shape until dough is approx. 1/8" thick.
  • Trim edges and cut into 2 inch squares.
  • Place 1/2 teaspoon of jam on each square. Spread jam on dough.
  • Mix egg white together with water.
  • Fold two corners together over your index finger. Place a dab of egg white mixture between overlapping corners of cookies. Press firmly together so the dough is fused.
  • Place on a baking sheet lined with parchment paper. Press folded sides down slightly so they are not rounded. This will help prevent cookies from coming apart while baking.
  • Bake for 10 minutes in a preheated 400 degree oven.
  • Cool on a baking rack. Sprinkle with powdered sugar when completely cooled.
