Bread pudding is all grown up thanks to the addition of bourbon to our Bourbon Pumpkin Bread Budding. What better way to stave off the chill of a cool autumn evening?

8 cups cubed day-old French bread
1 cup chopped pecans
2 1/2 cups half-and-half
1/4 cup bourbon
3/4 cup canned pumpkin (not pumpkin pie mix)
3/4 cup packed brown sugar
1/4 cup granulated sugar
5 whole eggs
1 teapoon vanilla
2 teaspoons ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1/2 teaspoon ground allspice
1/2 cup whole milk
1/2 cup whipping cream
1 vanilla bean
3 egg yolks
3 tablespoons granulated sugar
1/4 cup bourbon

Steps:

  • Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In baking dish, mix bread cubes and pecans; set aside.
  • In large bowl, beat half-and-half, 1/4 cup bourbon, the pumpkin, brown sugar, 1/4 cup granulated sugar, the eggs, 1 teaspoon vanilla, the cinnamon, ginger, nutmeg and allspice with whisk. Pour custard into baking dish. With spoon, press bread cubes and pecans into custard. Let stand 30 minutes.
  • Heat oven to 350°F. Bake bread pudding 45 minutes or until top is golden brown.
  • Meanwhile, in 2-quart saucepan, stir together milk and whipping cream. Cut vanilla bean in half; scrape out seeds. Add seeds and bean to milk mixture. Heat to simmering over low heat. In medium bowl, beat egg yolks and 3 tablespoons granulated sugar with whisk. Slowly pour warm milk mixture into egg yolk mixture, stirring constantly. Return mixture to saucepan. Cook and stir over low heat until sauce begins to thicken. Strain sauce into small heatproof pitcher or bowl; discard vanilla bean. Stir 1/4 cup bourbon into sauce. Refrigerate until serving time.
  • Cut warm bread pudding into squares; serve with bourbon sauce.

1 cup raisins
2 cups milk
4 eggs
¼ cup butter, melted
¼ cup white sugar
½ teaspoon vanilla extract
¼ teaspoon ground nutmeg

Steps:

  • Place bread and raisins in a slow cooker.
  • Whisk milk, eggs, butter, sugar, vanilla extract, and nutmeg together in a bowl; pour over bread and raisins. Toss to evenly coat.

1 1/2 cups packed light brown sugar
1/4 cup softened unsalted butter
3 extra large eggs
1 teaspoon vanilla
1 teaspoon rum flavoring
1/4 teaspoon cinnamon
2 1/2 cups milk
1/2 cup raisins (optional)
6 slices white bread

Steps:

  • Grease crock pot.
  • If you decide to use raisins, plumb them in some water with 1 tsp rum.
  • Cut bread into 1 inch cubes.
  • Beat butter and sugar.
  • Add eggs, flavors and spices.
  • Add milk and mix well.
  • Drain raisins and sprinkle over bread cubes into pot.
  • Pour the milk mix slowly over all the bread, making sure to moisten all pieces.
  • Cook on high for 2 hours.
  • Do not lift the lid, while cooking!
  • Let cool until room temp, as it will set and become "spongy".
  • Best with thick vanilla sauce or a bourbon sauce.

I got this recipe from a tear out recipe magazine ages ago, and only make this one during Christmas parties as it is very rich and delictable. It's always fun to see the people attack it...I rarely have more than crumbs left, so I know it's a keeper. The bourbon is purely optional, but it seems to be everyones preference. Enjoy!

2 cups whole milk
2 tablespoons butter
3 large eggs
1 cup pumpkin puree
2 teaspoons vanilla
1/2 cup dark brown sugar, packed
1 tablespoon ground cinnamon
1/2 teaspoon ground nutmeg
16 slices cinnamon raisin bread, torn into small pieces (8 cups total)
1/2 cup butter
1/2 cup dark brown sugar, packed
1/2 cup heavy cream
2 tablespoons Bourbon (optional)

Steps:

  • Lightly coat slow cooker with nonstick cooking spray. Heat milk and butter in microwave on high for 2 1/2-3 minutes or until very hot.
  • Whisk together all remaining pudding ingredients except bread in large bowl. stir in hot milk. Add berad cubes; toss gently to coat completely. Transfer to crock pot, cover and cook on high for 2 hours or until knife inserted into center comes out clean.

3 cups vanilla-flavored soymilk (or milk for non-vegans)
1 (16 ounce) can solid-pack pumpkin
3/4 cup firmly packed light brown sugar (or a natural sweetener)
1/4 cup Bourbon
1 teaspoon pure vanilla extract
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground allspice

Steps:

  • Press half the bread cubes into the bottom of a lightly oiled 3 1/2- to 4-quart slow cooker.
