For the crust:
3/4 cup graham cracker crumbs
1/2 cup finely chopped pecans
1/4 cup firmly packed light brown sugar
1/4 cup granulated sugar
4 tablespoons unsalted butter, melted and cooled
For the filling:
1 1/2 cups solid pack pumpkin
3 large eggs
1 1/2 teaspoons cinnamon
1/2 teaspoon freshly grated nutmeg
1/2 teaspoon ground ginger
1/2 teaspoon salt
1/2 cup firmly packed light brown sugar
3 (8-ounce) packages cream cheese, cut into bits and softened
1/2 cup granulated sugar
2 tablespoons heavy cream
1 tablespoon cornstarch
1 teaspoon vanilla
1 tablespoon bourbon liqueur or bourbon if desired
For the topping:
2 cups sour cream
2 tablespoons granulated sugar
1 tablespoon bourbon liqueur or bourbon, or to taste
16 pecan halves for garnish

Steps:

  • Make the crust:
  • In a bowl combine the cracker crumbs, the pecans, and the sugars, stir in the butter, and press the mixture into the bottom and 1/2 inch up the side of a buttered 9-inch springform pan. Chill the crust for 1 hour.
  • Make the filling:
  • In a bowl whisk together the pumpkin, the egg, the cinnamon, the nutmeg, the ginger, the salt, and the brown sugar. In a large bowl with an electric mixer cream together the cream cheese and the granulated sugar, beat in the cream, the cornstarch, the vanilla, the bourbon liqueur, and the pumpkin mixture, and beat the filling until it is smooth.
  • Pour the filling into the crust, bake the cheesecake in the middle of a preheated 350°F. oven for 50 to 55 minutes, or until the center is just set, and let it cool in the pan on a rack for 5 minutes.
  • Make the topping:
  • In a bowl whisk together the sour cream, the sugar, and the bourbon liqueur.
  • Spread the sour cream mixture over the top of the cheesecake and bake the cheesecake for 5 minutes more. Let the cheesecake cool in the pan on a rack and chill it, covered, overnight. Remove the side of the pan and garnish the top of the cheesecake with the pecans.

1/2 cup raw sugar
Juice of 1 lemon
2 tablespoons quick cooking tapioca
1 tablespoon bourbon
1 teaspoon pure almond extract
1 teaspoon orange bitters
1 store-bought pie dough (about 1 pound)
All-purpose flour, for dusting
2 tablespoons cream
Raw sugar
Softly whipped cream or vanilla ice cream, for serving

Steps:

  • For the cherry filling: Combine the cherries, sugar and lemon juice in a saucepan, combine the cherries with sugar and lemon juice. Sprinkle with the tapioca and simmer for 5 minutes. Pour into a large bowl and stir in the bourbon, almond extract and orange bitters. Let cool and refrigerate for about 1 hour. Preheat the oven to 350 degrees F and place the oven rack in the lower third of the oven. Divide the dough into 2 equal pieces. Roll each dough piece on a lightly-floured surface into a 12-inch disk. Gently place one disk into a 9-inch pie pan, bringing it up the sides. Make a few incisions in the middle of the remaining crust. Pour the cherry filling into the prepared pie shell. Lightly brush the border of the pie shell with water, and top with the second piecrust. Tightly seal the dough by pressing the edge with a fork or your fingers. Create some decorative touches with the scrap dough if desired to decorate the pie. Lightly brush the pastry shell with the cream and sprinkle with a little sugar. Place the pie on a larger baking sheet lined with parchment paper to catch any spills. Bake the pie until the crust is a deep golden brown color and the cherry juices are starting to bubble, 35 to 45 minutes. Let cool, and then serve with softly whipped cream or vanilla ice cream.

1/3 cup sugar
1/3 cup water
8 maraschino cherries
8 slices orange
6 ounces bourbon
Juice of 3 lemons

Steps:

  • Combine the sugar and water in a small saucepan and bring to a boil, stirring until the sugar is dissolved. Lower the heat and simmer for 5 minutes. Turn off the heat and let the simple syrup cool to room temperature.
  • Muddle half of the maraschino cherries and orange slices with the simple syrup in a cocktail shaker. Add the bourbon and lemon juice. Fill the shaker halfway with ice and shake well. Strain into four rocks glasses filled with ice. Garnish each glass with a maraschino and an orange slice.

1 c (2 sticks) unsalted butter, softened
1 c sour cream
4 c dark or bitersweet chocolate chips, melted and cooled slightly. i use ghiradelli 60% cacao bittersweet chips
2-3 c confectioners' sugar
1/4 c bourbon
1/4 c heavy cream

Steps:

  • 1. Melt chocolate baking chips in microwave or double boiler until just melted. Set aside to cool.
  • 2. In the bowl of a stand mixer beat the softened butter on high until creamy, about 3 minutes. Now continue to beat on high until light and fluffy, about 5 minutes.
  • 3. Add sour cream, mix well until fully incorporated.
  • 4. Slowly pour melted chocolate into the mixer, beating well until incorporated into butter.
  • 5. Add the confectioner's sugar and slowly building up speed, beat on high until well combined. Add more sugar if more sweetness is desired and repeat as above.
  • 6. A few tablespoons at a time add the bourbon and the cream, allowing to fully incorporate before adding more. May need to add small amount of additional cream if additional sugar was added. Adjust accordingly to desired consistency. Scrape the bottom of the bowl to make sure all ingredients are well incorporated.
