CHOCOLATE CROISSANT BREAD PUDDING WITH BOURBON ICE CREAM SAUCE



Chocolate Croissant Bread Pudding with Bourbon Ice Cream Sauce image

1 stick unsalted butter
1 cup sugar
1 1/2 teaspoons ground cinnamon
1 teaspoon vanilla extract
5 large eggs, lightly beaten
2 1/2 cups heavy cream
12 croissants
1/2 cup raisins
3/4 cup bittersweet chocolate, roughly chopped small
Preheat oven to 350 degrees F.

Steps:

  • In a food processor, combine butter and sugar process until well blended. Add cinnamon, and vanilla, and pulse to combine.
  • While the processor is running crack 5 eggs into the mixture. Turn off the mixer and scrape down the sides. Add the heavy cream and pulse to combine.
  • Lightly butter a 9 by 13-inch baking dish. Break up the croissants into 1-inch pieces and layer in the pan. Scatter the raisins and shaved bittersweet chocolate over the top, and gently mix to incorporate. Pour the egg mixture over the croissants; soak for 8 to 10 minutes. You will need to push croissants pieces down during this time to ensure even coverage by egg mixture.
  • Cover with foil and bake for 35minutes. Remove foil and bake for additional 10 minutes to brown the top. The croissant bread pudding is done when the custard is set, but still soft. Allow to cool. Serve with the Bourbon Ice Cream Sauce.

2 cups 2% milk
3/4 cup packed brown sugar
1/8 teaspoon salt
6 large egg yolks

Steps:

  • In a large heavy saucepan, combine cream, milk, sugar and salt. Heat over medium heat until bubbles form around sides of pan, stirring to dissolve sugar. , In a small bowl, whisk a small amount of the hot mixture into the egg yolks; return all to the pan, whisking constantly. Cook over low heat until mixture is just thick enough to coat a metal spoon and temperature reaches 180°, stirring constantly. Do not allow to boil. Immediately transfer to a bowl. , Place bowl in a pan of ice water. Stir gently and occasionally for 2 minutes. Stir in bourbon and vanilla. Press waxed paper onto surface of mixture. Refrigerate several hours or overnight., Fill cylinder of ice cream maker two-thirds full; freeze according to the manufacturer's directions. (Refrigerate remaining mixture until ready to freeze.) Transfer ice cream to a freezer container; freeze until firm, 4-6 hours. Repeat with remaining mixture.

1/2 cup light brown sugar
2 tablespoons corn syrup
1/2 cup heavy cream
1 tablespoon bourbon
Big pinch of salt
Good quality vanilla ice cream, for serving

Steps:

  • Add the butter, sugar, corn syrup and heavy cream to a medium-size saucepan and cook while stirring over medium heat for 5 to 7 minutes.
  • Once the butterscotch appears syrupy and thick, remove the saucepan from the heat and carefully stir in the bourbon. (It will sputter and boil when you do this.) Stir in a big pinch of salt and let cool slightly before serving.
  • Serve the butterscotch over good vanilla ice cream.

Steps:

  • Bring first 3 ingredients to simmer in heavy large saucepan over medium-high heat, stirring until milk powder dissolves completely. Remove from heat.
  • Combine egg yolks, sugar, brown sugar, and coarse salt in large bowl; whisk until thick and blended. Gradually whisk hot cream mixture into yolk mixture. Return mixture to same saucepan. Stir over medium-low heat until custard thickens enough to leave path on back of spoon when finger is drawn across and temperature registers 175°F to 178°F, about 3 minutes. Remove from heat. Mix in bourbon and vanilla extract. Refrigerate custard uncovered until cold, stirring occasionally, at least 3 hours. DO AHEAD: Custard can be made 1 day ahead. Cover and keep refrigerated.

10g / 2 teaspoons butter
290g / 1½ cups cream
150g / ¾ cup dark brown sugar, tightly packed
20g / 2 Tablespoons bourbon
3g / ½ teaspoons kosher or sea salt
380g / 2 cups milk
50g / ¼ cup glucose syrup
100g / about 5 large egg yolks
texture agent of your choice (see below)

Steps:

  • Prepare the bourbon butterscotch. Place the butter in a medium heavy-bottomed saucepan over medium heat. Cook until the butter melts, sizzles, and begins to take on a brown, nutty color. When it's richly browned but not burnt, add the cream, brown sugar, bourbon, and salt. Cook the sauce, stirring occasionally to help dissolve the sugar, over medium-high heat until it comes to a boil. Transfer the sauce to a bowl and put it in the refrigerator to cool below 100°F, or body temperature.
  • Prepare an ice bath. Fill a large bowl two-thirds of the way with very icy ice water and place it in the refrigerator. Boil the milk and glucose. Put the milk and glucose in a medium heavy-bottomed saucepan, and place it over medium high heat. Cook, whisking occasionally to discourage the milk from scorching, until the mixture comes to a full rolling boil, then remove the pot from heat.
  • Temper the yolks and cook the custard. In a medium bowl, whisk the yolks. Add ½ cup of the hot dairy mixture to the yolks while whisking so the hot milk doesn't scramble the yolks. Pour the tempered yolks back into the pot of hot milk while whisking. Place the pot over medium-low heat and cook, stirring and scraping the bottom of the pot constantly with a rubber spatula to avoid curdling.
  • Chill. When you notice the custard thickening, or the temperature reaches 180°F on a kitchen thermometer, immediately pour the custard into a shallow metal or glass bowl. Nest the hot bowl into the ice bath, stirring occasionally until it cools down.
  • Mix the butterscotch into the custard and strain. When the custard is cool to the touch (50°F or below), remove the bowl from the ice bath and add the chilled butterscotch sauce, whisking until evenly combined. Strain it through a fine-mesh sieve to remove any bits of egg yolk. (Straining is optional, but will help ensure the smoothest ice cream possible.)
  • Cure. Transfer the cooled base to the refrigerator to cure for 4 hours, or preferably overnight. (This step is also optional, but the texture will be much improved with it.)
  • Churn. Place the custard base into the bowl of an ice cream maker and churn according to the manufacturer's instructions. The ice cream is ready when it thickens into the texture of soft-serve ice cream and holds its shape, typically 20 to 30 minutes.
  • Harden. To freeze your custard ice cream in the American hard-pack style, immediately transfer it to a container with an airtight lid. Press plastic wrap directly on the surface of the ice cream to prevent ice crystals from forming, cover, and store it in your freezer until it hardens completely, between 4 and 12 hours. Or, feel free to enjoy your ice cream immediately; the texture will be similar to soft-serve.

BACON BOURBON ICE CREAM

2 pounds smoked slab bacon, diced
1/2 bottle good quality bourbon
3 cups heavy cream
2 cups whole milk
1 cup sugar
1 tablespoon vanilla paste or 2 vanilla beans, split and scraped (preferably bourbon vanilla beans)
Salt
1/4 cup brown sugar
5 eggs

Steps:

  • Render the bacon in a heavy-bottomed pot over medium-high heat until crispy. Transfer the grease to the refrigerator, chilling until the fat solidifies. Leave half the bacon the pot, and reserve the other half.
  • Add the bourbon to the pot with the bacon and simmer until reduced by two-thirds. Stir in the cream, milk, 1/2 cup sugar, the vanilla and a pinch of salt and remove from the heat. Cover with plastic and cool for 1 hour. Strain and set aside.
  • Preheat the oven to 350 degrees F.
  • Toss the reserved bacon with 1/4 cup sugar and the brown sugar. Spread the sugared bacon on a baking sheet and bake until the sugar melts and caramelizes. Set aside to cool.
  • Whip the eggs until the volume has doubled in a stand mixer set on high speed. Add the remaining 1/4 cup sugar, a pinch of salt and 1 to 2 tablespoons of the cooled and rendered fat. Beat on high for 1 minute. Reduce the speed to low and slowly incorporate the cooled bourbon and milk mixture, mixing just to combine.
  • Pour into an ice-cream maker and churn according to manufacturer's instructions. Freeze until firm, 1 to 2 hours. Scoop and garnish with the bacon sweets. Ah yum. Then sit down with a spoon and EAT IT. Do not share.

WHITE PEACH AND BOURBON VANILLA ICE-CREAM

1 1/2 cups (330g) caster (superfine) sugar
8 medium white peaches (1.2kg)
2 cups (500ml) milk
1 cup (250ml) half-and-half
1 teaspoon vanilla bean paste or vanilla extract
8 egg yolks
2/3 cup (150g) caster (superfine) sugar, extra
1/4 cup (60ml) bourbon
18 store-bought amaretti cookies (65g), crushed to serve

Steps:

  • Place the water and sugar in a large saucepan over high heat, bring to the boil and stir until the sugar is dissolved. Add the peaches, cover with a round of non-stick baking paper and weigh down with a small plate to submerge. Reduce the heat to medium and cook for 15-20 minutes or until soft. Drain the peaches, reserving the syrup. Allow to cool slightly before peeling. Refrigerate half the peaches for 1-2 hours or until cold. Cut the remaining peaches in half, discarding the stones, and place in a food processor. Process until smooth and refrigerate until cold.
  • Place the milk, cream and vanilla in a medium saucepan over high heat and stir until just boiling. Remove from the heat and set aside. Place the egg yolks and extra sugar in a large bowl and whisk until well combined. Gradually pour the milk mixture into the egg mixture, whisking to combine. Return the mixture to the saucepan over low heat and cook, stirring, for 8 minutes or until the custard is thick and coats the back of a spoon. Transfer to a large bowl, cover with plastic wrap and refrigerate for 1-2 hours or until cold.
  • Add the bourbon and the peach puree to the custard and whisk to combine. Pour into a metal (not glass) brownie pan. Freeze for 8 hours or overnight until set.
  • Cut the ice-cream into squares. In batches, place the squares in the cleaned food processor and process until smooth. Return the mixture to the tin and freeze for 1 hour or until firm.
  • Scoop the ice-cream into serving bowls. Drizzle with the reserved peach syrup and sprinkle with the amaretti. Serve with the whole poached peaches.

2 cups Bourbon
1 cup real maple syrup
1/4 cup corn starch
1/2 cup water

Steps:

  • In a large stockpot, heat the cream to 160°, being careful not to boil. While cream heats, in a large bowl whisk your egg yolks and sugar together until smooth. Add a 1/2 cup of the heated cream, while constantly whisking. Continue adding the cream in small increments while whisking until the mixture is smooth and tempered. Run through a fine mesh strainer or chinois to catch any shells or cooked egg pieces. Cool down mixture quickly in an ice bath, and refrigerate for up to 4 days. Ice cream turns out better if this is refrigerated overnight. Over a double boiler, combine the dulce de leche and nutmeg, whisking until the caramel has liquified and is very smooth and without lumps. Slowly whisk in the ice cream base until the mixture is even in color with no caramel chunks. Run the mixture through a strainer and chill before preparing according to your ice cream maker. While ice cream mixes, combine the bourbon and maple syrup in a small saucepan, and bring to a slow boil. Simmer for 2 minutes. In a small bowl, combine the corn starch and water, and mix with a spatula to make a slurry. While bourbon and syrup continue to simmer, slowly drizzle the slurry into the saucepan, while constantly whisking. Turn heat back up and allow mixture to slowly boil until it will coat the back of a spoon. Cool in an ice bath before refrigerating. If mixture ends up runny, make more corn starch/water mixture and boil it into the sauce again. Lightly drizzle sauce over the caramel ice cream for a perfectly spicy and balanced dessert.

2 QUARTs vanilla ice cream
chopped toasted pecans

Steps:

  • Combine brown sugar, cream, butter, and honey in heavy large saucepan. Scrape in vanilla seeds; add beans. Stir mixture over medium heat until sugar dissolves. Increase heat and bring to boil. Reduce heat to medium-low and boil gently until sauce coats spoon thickly and is reduced to 3 2/3 cups, stirring occasionally, about 25 minutes. Mix in bourbon. Prepare barbecue (medium-high heat). Cut unpeeled bananas in half lengthwise. Arrange, cut side up, on baking sheet. Brush cut sides with caramel sauce. Place bananas, still cut side up, on grill rack. Close barbecue; grill until peels are slightly charred and fruit is tender and beginning to come away from peel, about 4 minutes. Place 1 banana half, cut side up, on each plate.   • 1. Melt butter in a medium skillet over medium heat. Cook, stirring frequently, 2 to 3 minutes or until butter turns light brown and golden. Add pecans, and sauté to 2 minutes or until lightly browned and toasted. Remove pecans with a slotted spoon, reserving browned butter and pecans separately. 2. Bring milk, cream, and sugar to a boil in a medium saucepan over medium heat, stirring occasionally. Remove from heat, and stir in browned butter. 3. Beat egg yolks at medium-high speed with electric stand mixer until thick and pale (about 2 to 3 minutes). Gradually stir one-fourth of hot cream mixture into eggs. Add yolk mixture to remaining hot cream mixture, stirring constantly. Cook over medium-low heat, stirring constantly, 5 minutes or until a candy thermometer registers 170º and mixture lightly coats back of a spoon. 4. Pour mixture through a fine wire-mesh strainer into a bowl. Stir in bourbon, vanilla, and pecans. Cover and chill 1 hour. 5. Attach ice cream maker attachment to mixer according to manufacturer's instructions. Prepare ice cream according to manufacturer's instructions, using stir speed 1, for 15 to 20 minutes or until mixture reaches desired consistency. A delicious concoction I came up with to use up some extra eggnog. You can use any eggnog, including the dairy alternative ones, with excellent results. This is surprisingly good.

1/2 cup sugar
1 teaspoon cornstarch
1/4 teaspoon cinnamon

  • Mix it all together from cold ingredients. If the eggnog and egg beaters aren't fridge cold when you put this together then let the mixture sit in the fridge an extra hour.

1 cup granulated sugar
2 cups heavy cream
1 cup whole milk
1/8 teaspoon fine sea salt
6 large egg yolks
1 tablespoon bourbon
1/4 teaspoon flaky sea salt (such as Maldon)

Steps:

  • In a medium pot over medium heat, melt 1/2 cup sugar with 3 tablespoons water, swirling skillet frequently, until sugar turns reddish brown.
  • Add heavy cream, milk, remaining 1/2 cup sugar and the salt; simmer mixture until caramel melts and cream mixture is completely smooth. Remove pot from heat. In a separate bowl, whisk yolks. Whisking constantly, slowly whisk about a third of the hot cream into the yolks, then whisk the yolk mixture back into the pot with the cream.
  • Return pot to medium-low heat and gently cook until mixture is thick enough to coat the back of a spoon (about 170 degrees on an instant-read thermometer).
  • Strain through a fine-mesh sieve into a bowl. Stir in bourbon and cool mixture to room temperature. Cover and chill at least 4 hours or overnight.
  • Churn in an ice cream machine according to manufacturer's instructions. Sprinkle flaky sea salt into base during the last 2 minutes of churning. Serve directly from the machine for soft serve, or store in freezer until needed.

Fritter coating:
1 cup sugar
2 teaspoons ground cinnamon
Apple filling:
2 tablespoons (1/4 stick) unsalted butter
1 pound Pink Lady apples (about 3), peeled, cored, cut into 1/3- to 1/2-inch cubes (about 3 cups)
2 tablespoons sugar
1/4 teaspoon ground cinnamon
1/2 cup sparkling apple cider
1 tablespoon apple cider vinegar
Fritter base:
1 3/4 cups all purpose flour
1/2 cup sugar
1 teaspoon finely grated lemon peel
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2/3 cup buttermilk
2 large eggs, separated
2 1/2 tablespoons unsalted butter, melted
1/4 teaspoon coarse kosher salt
Safflower oil (for deep-frying)

Steps:

  • For fritter coating:
  • Blend sugar and cinnamon in small bowl. DO AHEAD: Coating can be made 3 days ahead. Cover; store at room temperature.
  • For apple filling:
  • Melt butter in heavy large skillet over medium-high heat. Add apples. Sprinkle with sugar and cinnamon; toss to coat. Sauté until apples are browned in spots and tender, stirring often, about 10 minutes. Add cider and vinegar. Cook until all liquid evaporates, stirring often, about 4 minutes. Set filling aside in skillet to cool.
  • For fritter base:
  • Place double layer of paper towels on work surface. Whisk flour, sugar, lemon peel, baking powder, and spices in large bowl to blend. Whisk buttermilk, egg yolks, and melted butter in medium bowl to blend. Gradually stir buttermilk mixture into dry ingredients. Beat egg whites and coarse salt in another medium bowl until peaks form. Gently fold egg whites into fritter base, then fold in cooled apple filling.
  • Pour enough oil into heavy large saucepan to reach depth of 1 1/2 inches (5 to 6 cups). Attach deep-fry thermometer to side of pan. Heat oil to 320°F to 330°F over medium heat. Working in batches of 5 or 6, drop batter into oil by tablespoonfuls. Fry fritters until deep golden brown and cooked through, turning fritters occasionally and adjusting heat to maintain oil temperature, about 4 minutes per batch. Using slotted spoon, transfer fritters to paper towels. Drain briefly, then toss warm fritters in cinnamon-sugar coating. Transfer to large rimmed baking sheet. Do ahead Can be made 2 hours ahead. Let stand at room temperature. Rewarm in 350°F oven 5 minutes, if desired.
  • Mound fritters on platter. Serve with Bourbon Ice Cream .

VANILLA ICE CREAM WITH MAKER'S MARK (BOURBON)

Another wonderful Michael Ruhlman ("Ratio") recipe, this one for frozen custard laced with the good stuff. Use any add-ins you like, such as toasted nuts, cherries, ginger, or orange zest. Use any milk or cream you like, but whole milk and heavier creams will taste the best, as this is not a low-fat dessert!

1 1/2 cups milk
1 1/2 cups cream
1 vanilla bean, split lengthwise
3/4 cup sugar
6 ounces egg yolks (9 large egg yolks)
2 -4 tablespoons Bourbon, to taste (Maker's Mark)

Steps:

  • Combine the milk, cream, and vanilla bean in a saucepan and bring to a simmer. Remove the pan from the heat and let the bean steep for 15 minutes, then remove it and use a paring knife to scrap the seeds from the inside of the pod into the milk and cream mixture. Discard the pod.
  • Combine the sugar and yolks and whisk vigorously for 30 seconds or so.
  • Fill a large bowl with a 50/50 mixture of ice and water, then place a second bowl into the ice bath. Set a fine-mesh strainer into the inner bowl.
  • Over medium heat, bring the milk and cream mixture just to a simmer, then pour it slowly into the yolks while whisking continuously.
  • Pour the mixture back into the pan and continue whisking over medium heat until the mixture is slightly thick, or nappe (it should be pourable, but it should be thick enough on a spoon dipped into it that you can draw a line through the mixture that clings to the spoon). This will take 2 to 4 minutes.
  • Pour the mixture through the strainer into the bowl that is resting in the ice water bath. Stir the custard sauce with a rubber spatula until it is cold. Add the bourbon to taste. Cover and refrigerate it until it is thoroughly chilled, preferably overnight (the colder, the better).
  • Freeze according to your machine's instructions.

BOURBON ICE CREAM

Yes, yet another booze recipe from me. This one is a tribute to the bourbon ice cream that St. Joe's serves at their ice cream social every year. My friend Alan used to say you know a good Catholic from Beer, Bingo and Brats...I guess so. I'm Baptist, so I wouldn't know. However, every summer St. Joe's ice cream social is one of the biggest events in Glasgow (the town over from us) and it is the best stuff! Their peach ice cream is wonderful also. This stuff is definitely worth a try even in the winter.

1 (14 ounce) can sweetened condensed milk

Steps:

  • Beat eggs on medium speed, gradually add sugar. Add bourbon and condensed milk, mixing well. Add half & half.
  • Pour into 1 gallon freezer, freeze according to manufacturer's directions.
  • Garnish each serving with mint.

1 cup whole milk
3/4 cup heavy cream
1/2 cup (packed) dark brown sugar
6 large egg yolks
2 tablespoons sugar
1/8 teaspoon kosher salt
1 tablespoon (or more) bourbon
1/2 teaspoon vanilla extract

Steps:

  • Stir milk, cream, and brown sugar in a medium saucepan over medium-high heat until mixture comes to a rolling boil (it may look curdled, but this is normal). Meanwhile, whisk yolks, sugar, and salt in a medium bowl until mixture is pale yellow and sugar dissolves. Place a medium metal bowl in a large bowl of ice water; set a fine-mesh sieve over metal bowl. Whisking yolk mixture constantly, gradually add hot cream mixture (to prevent the eggs in the yolk mixture from scrambling). Return to pan. Stir custard over low heat until thick enough to coat the back of a spoon, about 2 minutes. Immediately strain custard into metal bowl. Let custard cool completely, stirring often. Stir 1 Tbsp. bourbon and vanilla into custard. Add more bourbon to taste by teaspoonfuls, if desired. DO AHEAD Custard can be made 1 day ahead. Cover and chill. Process custard in an ice cream maker according to manufacturer's instructions. Transfer ice cream to an airtight container, cover, and freeze. DO AHEAD Ice cream can be made 3 days ahead.
