2 peaches, peeled, pitted and sliced
2 cups peach juice
2 cups sparkling apple cider
½ cup fresh raspberries
Ice
Mint for garnish

Steps:

  • Place the fresh peach slices and peach juice in a blender and puree until very smooth.
  • Add the sparkling apple cider to the blender and pulse once or twice to just combine the juice and cider. You don't' want to over mix or the cider will loose its effervescence.
  • Pour the peach bellini into glasses filled with ice.
  • Garnish with a raspberry and mint leaf. Enjoy cold!

2 ounces peach nectar
4 to 5 ounces sparkling cider
Optional garnish: peach slice

  • Gather the ingredients.
  • Pour the peach nectar into a Champagne flute .
  • Slowly add the sparkling cider.
  • Garnish with a peach slice. Serve and enjoy. Refrigerate any leftover peach puree or juice in the refrigerator for up to one week or freeze it to use for up to three months. Peach nectar will add the most peach flavor. Look for peach nectar in the juice section of the grocery store. Nectar will be more concentrated than peach juice, but you can use peach juice if that is what is available. If you have fresh peaches available during the peach season, you can make your own peach juice or peach puree for the freshest Bellinis. Peaches are ripe during the summer months of June through August in most areas. Using a mixed selection of peach varieties , they will create even more flavor for your juice or puree as each will be a little different. It is easy to make peach juice using an electric juicer. You'll need to wash the peaches well and remove the pit, but you can leave the skin on as it is edible. Strain the juice to remove any chunks. To make a peach puree, wash and pit the peaches, slice them to fit into your food processor or blender, and blend them until the puree is smooth. You can add a teaspoon of sugar and a teaspoon of lemon juice to boost the flavor. Strain out any lumps that remain after processing. If you're using fresh peaches, save one to make a slice for a garnish, either on the rim of the glass or floated in the drink. You can freeze slices sprinkled with a little lemon juice to use to cool the drink as well as add a tasty treat when the drink is finished.

3 oz nonalcoholic champagne
3 oz peach nectar
1 oz sprite or club soda
1 tsp sugar

The fruity cocktail owes its name and color to Cipriani's fascination with Giovanni Bellini, a 15th-century Venetian artist. Originally prepared with Prosecco and white peach puree, it's perfectly acceptable to use yellow peach puree or prepared peach nectar and/or peach schnapps. Sip and feel sophisticated!

1 cup ice
1 1/2 cups simple syrup, recipe follows
1 1/4 cups unsweetened pomegranate juice, chilled
1 cup unsweetened cranberry juice, chilled
1 (25.3 fluid ounces) bottle sparkling water, chilled
2 limes, thinly sliced
1 bunch fresh mint, for garnish
Optional garnish: 1/2 cup (2 1/2 ounces) pomegranate seeds
1 cup water
1 cup sugar

Steps:

  • Place the ice in a punch bowl. Add the simple syrup, pomegranate juice, and cranberry juice. Stir well. Slowly pour in the sparkling water. Garnish with lime slices, mint sprigs and pomegranate seeds, if using, and serve.
  • Serving Suggestion: As an alternative to serving from a punch bowl, make the bellini mixture in a 6 to 8 cup capacity pitcher. Divide the pomegranate seeds between 12 champagne flutes. Add 1 slice of lime and 1 sprig of mint to each glass. Pour the bellini mixture into the prepared glasses and serve.
  • In a saucepan, combine water and sugar over medium heat. Bring to a boil, reduce heat and simmer for 5 minutes, stirring occasionally, until the sugar has dissolved. Take the pan off the heat and allow the syrup to cool.
