My family's secret homemade spaghetti sauce is easy to make using a few staple ingredients you may already have on hand! Perfectly thick and packed with flavor, you'll be ditching that store bought pasta sauce!

1/4 cup extra virgin olive oil (I used Private Reserve Greek extra virgin olive oil)
1 medium yellow onion, grated
3 garlic cloves, finely minced
2 carrots, finely grated (use a food processor or a grater)
28 oz canned crushed tomatoes
1/2 cup water (pasta cooking water, preferred)
Kosher salt and black pepper
1 tbsp dried oregano
1 tsp sweet Spanish paprika
Pinch red pepper flakes, optional
Handful fresh basil, about ½ cup packed, torn
Handful fresh parsley, about ½ cup packed, chopped
3/4 lb to 1 lb of cooked pasta of your choice

Steps:

  • In a large pan heat the extra virgin olive oil over medium heat until just shimmering. Add the onions, garlic, and finely grated carrots. Cook for about 5 minutes, stirring regularly until softened.
  • Add the crushed tomatoes and about 1/2 cup water. Add a generous pinch of salt and pepper. Stir in oregano, paprika, crushed pepper flakes, if using. Finally, stir in the fresh basil and parsley.
  • Bring the sauce to a boil, then turn heat to low. Cover and let simmer for about 15 to 20 minutes. Check partway through, and if you feel the sauce is too thick, you can add a bit more water (preferably some of your pasta cooking water). When sauce is ready, throw in more fresh basil, if you like.
  • If serving for dinner, add cooked pasta of your choice to the sauce. Mix to combine and let the pasta cook in the sauce over low heat for about 5 minutes.

2 tablespoons butter
1 tablespoon extra-virgin olive oil
1 (8 ounce) package sliced fresh mushrooms
1 cup red wine, divided
1 pound ground beef
1 cup diced yellow onion
1 cup diced tomatoes
½ cup chopped red bell pepper
½ cup chopped green bell pepper
¼ cup minced garlic
2 tablespoons oregano
2 tablespoons basil
1 tablespoon rosemary
1 (6 ounce) can tomato paste
1 (28 ounce) jar spaghetti sauce

Steps:

  • Melt butter with olive oil in a small skillet over medium-high heat. Cook and stir mushrooms in butter mixture until softened, 2 to 3 minutes. Add 1/4 cup red wine; bring to a simmer, reduce heat to medium-low, and cook until the mushrooms are very dark and shrunken in size, about 20 minutes.
  • Heat a large pot over medium heat. Cook and stir ground beef, yellow onion, diced tomatoes, red bell pepper, green bell pepper, and garlic together until the beef is completely browned, about 10 minutes; season with oregano, basil, and rosemary. Stir 3/4 cup red wine and tomato paste into the beef mixture. Pour spaghetti sauce into the pot; stir. Return mixture to a simmer and continue cooking until the flavors blend, 10 to 30 minutes.

2 tablespoons olive oil
2 pounds ground beef ((or a mixture of beef and turkey))
1 small yellow onion ((diced))
1 small green bell pepper ((diced))
1 teaspoon salt
4 garlic cloves ((minced))
1 teaspoon garlic powder
1 teaspoon italian seasoning
24 ounce jar of store-bought pasta sauce
14.5 ounce can of petite diced tomatoes (drained)
2 tablespoons tomato paste
1/4 cup parmesan cheese ((plus more for serving))

Steps:

  • Prepare the veggies by dicing the onion and pepper and mincing the garlic cloves.
  • Heat a skillet over medium heat and add the olive oil, ground beef, and veggies, and 1 teaspoon of salt.
  • Sauté until the meat is fully browned and the veggies are soft. (about 7-10 min)
  • Drain the grease from the meat/veggie mixture and return everything to the pan.
  • Add in the spaghetti sauce, drained diced tomatoes, tomato paste, and another 1/2 teaspoon of salt, garlic powder, and Italian seasoning.
  • Stir everything together, cover, and simmer for 20 minutes.
  • After the 20 minutes add in the parmesan cheese. Stir until melted.
  • Serve over pasta or let cool and refrigerate until ready to use.

25 pounds tomatoes (about 80 medium)
4 large green peppers, seeded
4 large onions, cut into wedges
2 cans (12 ounces each) tomato paste
1/4 cup canola oil
2/3 cup sugar
1/4 cup salt
8 garlic cloves, minced
4 teaspoons dried oregano
2 teaspoons dried parsley flakes
2 teaspoons dried basil
2 teaspoons crushed red pepper flakes
2 teaspoons Worcestershire sauce
2 bay leaves
1 cup plus 2 tablespoons bottled lemon juice

Steps:

  • In a Dutch oven, bring 2 quarts water to a boil. Using a slotted spoon, place tomatoes, one at a time, in boiling water for 30-60 seconds. Remove each tomato and immediately plunge into ice water. Peel and quarter tomatoes; place in a stockpot., Pulse green peppers and onions in batches in a food processor until finely chopped; transfer to stockpot. Stir in next 11 ingredients. Add water to cover; bring to a boil. Reduce heat; simmer, uncovered, 4-5 hours, stirring occasionally., Discard bay leaves. Add 2 tablespoons lemon juice to each of 9 hot 1-qt. jars. Ladle hot mixture into jars, leaving 1/2-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight., Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 40 minutes. Remove jars and cool.

10 lbs fresh tomatoes
3 tablespoons oil
4 1/2 cups onions, chopped
3 cloves garlic, minced
1 1/2 teaspoons oregano, crushed
2 bay leaves, crushed
1 tablespoon plain non-iodized salt
1 tablespoon granulated sugar
1 teaspoon black pepper
1/2 teaspoon red pepper, crushed
1 tablespoon dried parsley
1 tablespoon celery leaves, minced

Steps:

  • Peel, core and chop tomatoes.
  • Combine with remaining ingredients in heavy saucepan.
  • Simmer 2 hours stirring often until desired consistency.
  • Pour into hot jars to 1/2 inch from top.
  • Wipe jar top and threads carefully with damp cloth making sure they are thoroughly clean.
  • Put on lids and bands.
  • Place in water canner with at least 2 inches of hot water over tops of jars.
  • Bring canner to gentle boil and process 30 minutes.
  • At end of processing time, remove jars to draft free area to cool at least 12 hours.
  • Inspect each jar to make sure it is sealed, remove bands and wipe with damp cloth.
  • Label with date and store.
