MALIBU BANANAS FLAMBE

Malibu Bananas Flambe image

A wonderful dessert with a Carribean flare that can be served by itself or over vanilla ice cream. A great way to use up those ripe bananas too! SUPER simple for a dinner party. Original recipe from Betty Crocker, but I switched it up a bit.

Time 30m

Yield 4 serving(s)

Number Of Ingredients 8

1/4 cup butter (margarine may be used instead)
4 large ripe bananas (not mushy ripe though)
1/3 cup packed brown sugar
1 tablespoon lemon juice
1/2 teaspoon cinnamon
1 dash nutmeg
1/2 cup walnuts (coarsely chopped, large chunks)
1/4 cup Malibu rum

Steps:

  • Preheat oven to 350 degrees.
  • In a small saucepan, melt butter and then add in the brown sugar, lemon juice, cinnamon and nutmeg. Take off heat as soon as it all combines and melts together; it will take a minute or less.
  • Spray Pam on the bottom of a glass/ceramic 9x9 baking dish.
  • Cut bananas in half and then in half again (so in quarters) and place them cut side down in the dish.
  • Sprinkle the nuts over and around the bananas.
  • Drizzle the butter/sugar mixture over the bananas and nuts.
  • Bake uncovered approximately 10 minutes, or until sauce is warm and bubbly. Remove from oven.
  • Heat rum until warm, remove from the stove/flame. With the saucepan out in front of you (don't look down into the pan while you do this or you might loose some eyebrows), ignite the rum and pour over top the bananas. Wait for the flames to go out, then serve them up by themselves or on top of vanilla ice cream.

MEXICAN BANANAS FLAMBE WITH ICE CREAM (PLATANOS FLAMEADOS)

Mexican Bananas Flambe With Ice Cream (Platanos Flameados) image

For best effect use a chafing dish and flambe at the table. Otherwise be quick from the stove to the table (don't trip) dim the lights and voila, ooohs and ahhs from everyone. Very luscious dessert and wonderful with the cold ice cream and the hot sauce. Romantic too!

2 tablespoons unsalted butter
3 tablespoons packed light brown sugar
1 vanilla bean, split lengthwise
1/4 cup orange liqueur or brandy
Kosher salt
3 ripe bananas, peeled, halved lengthwise and crosswise
1/2 cup dark rum
Whipped cream, for serving

  • Return the skillet to medium heat, add the bananas, cut-side down, and cook until glazed and golden, 1 to 2 minutes. Remove from the heat and divide among bowls.
  • Add the rum to the pan and return to medium heat. Warm for a few seconds without stirring, then carefully tilt the pan so the rum ignites (if using an electric stove, hold a lit match near the sauce to ignite it). Spoon the flaming sauce over the bananas. Garnish with whipped cream and the glazed orange zest.

Time 25m

Yield 2 servings

Number Of Ingredients 10

4 teaspoons brown sugar
2 teaspoons butter
2 whole peeled and sliced bananas
2 tablespoons banana liqueur
2 tablespoons brandy
2 glasses filled half way with vanilla ice cream
2 tablespoons chocolate syrup
4 tablespoons whipped cream
2 whole strawberries (remove the stem and make a small hole for the cubed sugar)
2 sugar cubes

Steps:

  • In a large saucepan over medium heat, melt the sugar until it becomes liquid. Add the butter and the sliced banana. Cook for about 6 minutes. Remove the pan from the heat and then add the banana liqueur.
  • Continue to cook for about 2 minutes. Remove from the heat once again, then add the brandy. Once you put the pan back in the heat, it should flambe. Remove the pan from the heat and start spooning the flambeed banana into the ice cream glass. Add the chocolate syrup and the whipped cream. On top of the whipped cream, right in the center, place the cleaned strawberry, then place the sugar cube in the center of the strawberry. Pour a little bit of the brandy on top of the sugar and carefully ignite it with a match.
