CARAMELIZED BANANAS
Steps:
- chocolate-Melt 2 tablespoons butter in a skillet. Add 2 sliced bananas and 2 tablespoons brown sugar. Cook until golden and syrupy, about 5 minutes. Sprinkle the bananas with cinnamon and spoon over rum raisin ice cream.

CARAMELISED OVEN BAKED BANANAS
These caramelized oven baked bananas are warm, soft and absolutely delicious. This healthy and easy dessert is the perfect way to use up any overripe bananas, and one of my go-to everyday desserts.

- Cut the bananas in half lengthwise. Keep the banana peels attached.
- Pre-heat your oven to 180°C / 175°C fan oven / 350°F / gas mark 4. Add the bananas to a baking tray, peel sides down.
- Sprinkle cinnamon and honey or agave syrup on top, and bake the bananas for about 15 minutes, or until they are warm.
- The banana skins will have turned completely black, and the bananas will have gone completely soft. Eat the banana by scooping out the soft fruit mash with a spoon.

BOOZY BAKED CARAMELISED BANANAS
Use up your bananas and transform them into our boozy baked caramelised dessert with the help of rum, maple syrup and pecans

Steps:
- Heat the oven to 220C/200C fan/gas 8. Toss the banana halves in an ovenproof dish with the sugar, maple syrup and rum or whisky. Sprinkle with a small pinch of salt, if you like.
- Bake for 15 mins, then remove from the oven. Heat the grill to high and grill the bananas for 3-5 mins, or until bubbling and caramelised. Spoon the bananas into bowls and scatter over the pecans. Serve with ice cream, and any of the caramelised syrup from the dish drizzled over the top.

CARAMELISED BANANAS
This is a delicious and impressive dessert however, a little care must be taken when making this dish as you are working with very hot sugar, but the results are well worth the effort.

- In a large frying pan, heat the sugar over a moderate heat, after about 1-2 minutes the sugar will start to caramelise around the edges of the pan. Stir the sugar with a wooden spoon until the sugar has changed to a golden amber colour, continue cooking but be careful not to burn.
- Remove from the heat and stir in the Kerrygold butter, vanilla seeds and 2 tbsp of cold water, to stop it cooking any further.
- Add the bananas cut side down and return to the heat; cook for 1-2 minutes and then turn over, the bananas should have taken on the caramel colour.
- Place the slices of vanilla sponge in the middle of the plates, pile 2 halves of bananas on top of the sponge and pour over the caramel sauce so it soaks into the sponge and add a scoop the Greek yoghurt
- Quick Tip: To melt the butter faster use Kerrygold Softer Butter which is soft straight from the fridge and without the addition of vegetable oil.
