HEALTHY BLUEBERRY SAUCE

This simple blueberry sauce recipe is low in added sugar and made without cornstarch. Very easy to make. Ready in 10 minutes.

3 cups blueberries (fresh or frozen)
1/2 cup + 2 Tbsp water
1 Tbsp maple syrup
1/8 tsp cinnamon
1 Tbsp lemon juice
1/2 tsp vanilla extract
pinch of salt
2 1/2 tsp arrowroot powder

Steps:

  • Place 1 1/2 cup blueberries into a small saucepan. Add 1/2 cup of water, maple syrup, cinnamon, lemon juice, vanilla extract, and a pinch of salt. Mix and start heating the blueberries over medium heat.
  • In the meantime, dissolve the arrowroot powder in 2 tablespoons of water.
  • When the blueberries start to simmer, cook them for 1 minute stirring occasionally.
  • To add the dissolved arrowroot powder, pour it slowly into the saucepan making sure to constantly stir the blueberries.
  • Add the rest of the blueberries (1 1/2 cup). Mix and bring the sauce to a simmer. Cook for 10 more seconds and take off the heat.

Delicious, warm blueberry sauce which is fabulous on pancakes, waffles, cheesecake or ice cream! Fresh or frozen blueberries work equally well.

2 cups fresh or frozen blueberries
¼ cup water
1 cup orange juice
¾ cup white sugar
¼ cup cold water
3 tablespoons cornstarch
½ teaspoon almond extract
⅛ teaspoon ground cinnamon

Steps:

  • In a saucepan over medium heat, combine the blueberries, 1/4 cup of water, orange juice, and sugar. Stir gently, and bring to a boil.
  • In a cup or small bowl, mix together the cornstarch and 1/4 cup cold water. Gently stir the cornstarch mixture into the blueberries so as not to mash the berries. Simmer gently until thick enough to coat the back of a metal spoon, 3 to 4 minutes. Remove from heat and stir in the almond extract and cinnamon. Thin sauce with water if it is too thick for your liking.

1 teaspoon cornstarch
Dash salt
1/4 cup water
1 cup fresh or frozen blueberries
1/2 teaspoon grated lemon zest
1-1/2 teaspoons lemon juice
Vanilla ice cream

Steps:

  • In a small saucepan, combine sugar, cornstarch and salt. Gradually whisk in water until smooth. Add blueberries, lemon zest and juice; bring to a boil over medium heat, stirring constantly. Cook and stir until thickened, 2-3 minutes (some berries will remain whole). Serve warm or chilled over ice cream.

1 1/2 pints fresh blueberries, rinsed
1 cup vanilla sugar
1 tablespoon fresh lemon juice

Steps:

  • Combine the blueberries and vanilla sugar in a large heavy saucepan. Add 1 cup water and the lemon juice and bring to a boil over high heat, stirring occasionally. Reduce the heat and simmer for 15 minutes, or until the mixture begins to thicken.
  • Remove from the heat and strain through a fine sieve. Cool to room temperature, cover and refrigerate.

This fruity sauce brings together baking spices like cinnamon and pectin for a jammy and spicy sauce that'd be great on desserts.

Number Of Ingredients 8

3 tablespoons lemon juice
3 tablespoons grated orange rind
1 1/2 cups fresh orange juice
4 1/2 cups sugar
3 quarts blueberries
1 1/2 teaspoons cinnamon
1/2 teaspoon powdered cloves
1/4 cup liquid pectin

Steps:

  • Stir the lemon juice, orange rind, orange juice and sugar in a large pot. Bring to a rolling boil. Add berries and bring to a full boil again. Add cinnamon, cloves and pectin and boil hard, stirring constantly, for 1 minute. Remove from heat, pour into hot, sterilized jars, cover and seal.
