MASHED SWEET POTATOES AND PEARS
This busy diva does not have time for a complicated side dish -- so out of my kitchen came these mashed sweet potatoes and pears. I may never make sweet potatoes any other way ever again.

Steps:
- Place the pears, wine, and water in a small saucepan and bring to a boil over high heat. Turn heat to medium-low and simmer until pears are soft, about 5-10 minutes. Remove pears from wine and reserve.
- Place the sweet potatoes into a large pot and cover with water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to potatoes to steam dry for a minute or two.
- Stir the reserved pears, evaporated milk, vanilla, brown sugar, butter, cinnamon, and nutmeg into the sweet potatoes and mash until smooth. Transfer to a serving dish and serve hot.

SWEET POTATO AND PEAR CASSEROLE
The original recipe called for 1/4 cup of butter, 3 T brown sugar, and 2 T honey. I thought that would be way too sweet and cut it down. I also used pears in their own juice instead of heavy syrup.

Steps:
- In a greased 1 1/2 quart baking dish, combine the potatoes, 2 T butter, brown sugar, salt, and cinnamon.
- In a small saucepan, blend the honey, 1 T butter, orange peel, and 3 T of reserved pear juice; bring to a boil.
- Arrange the pear halves over the potato mixture, then pour the honey mixture over the top.
- Bake at 350 degrees 30-35 minutes.
BONNIE'S ROASTED PEARS AND RED ONIONS
We had this dish of Roasted Pears and Red Onions for our evening meal, and we both really liked this humble recipe. Salt, pepper and oil is all that is needed for seasoning, and roasting brings a whole new level of flavor to the onions and the pears. We couldn't stop eating it! - 1. Preheat the oven to 425 degrees. Bake 40 minutes.
- 2. Core and quarter the pears.
- 3. Peel two red onions
- 4. Cut them into 6 wedges each.
- 5. Place sliced pears and onions on a greased rimmed baking pan in a single layer.
- 6. Drizzle with oil. Season with salt and pepper. Toss gently.
- 7. Roast until golden brown. Turn halfway through the cooking time.
- 8. Serve immediately. Enjoy!

This is a unique side dish. I got the idea from another similar recipe by Martha Stewart. I adapted it to my taste and found something everyone who tries it raves over.

- Preheat oven to 400 degrees. Wash, dry and cut the sweet potatoes and pears into bite sized chunks. Toss with olive oil. Add seasoning, cinnamon and toss again. Pour onto jelly roll pan lined with aluminum foil. Bake for 20-25 minutes or until lightly brown and done in the center.

BONNIE'S ROASTED SWEET POTATOES AND PEARS
We had this side dish of sweet potatoes and pears with peppered pork chops for dinner last night, and it was delicious. Just another way to make use of the abundance of pears in my backyard. The spices smell wonderful while it is roasting!

- 1. Preheat the oven to 400 degrees. Scrub but don't peel the potatoes. Cut the potatoes into quarters lengthwise. Slice each quarter into pieces about two inches long. Put the slices in a Ziploc bag with the seasonings. Add the sweet potatoes and the oil. "Knead" the bag until the oil and seasonings coat the potatoes, then place them on a greased baking pan with a rim. Roast the potatoes at 400 degrees for 25 minutes, turning halfway through.
- 2. About ten minutes before the end of the baking time, core the pears and quarter them and slice them in half. Drizzle pears with 1 tablespoon oil, and add them to the potatoes and toss. Cook 10 minutes more and serve.
