DIY Popeyes Buttermilk Fried Chicken Sandwich image

2 boneless (skinless chicken breasts)
1 cup buttermilk
1 teaspoon EACH paprika (garlic powder, black pepper, salt)
1 cup flour
½ cup corn starch
1 tablespoon EACH paprika (garlic powder, onion powder, cayenne pepper (for spicy))
1 teaspoon EACH salt & pepper
½ cup mayo
1 teaspoon hot sauce
1 teaspoon paprika (or cajun or taco seasoning)
1/2 tsp garlic powder
4 medium-sized brioche buns
Mayonnaise
Sliced pickles
3-4 cups canola oil (for frying)

Steps:

  • Pound chicken breasts in between two pieces of parchment paper or plastic wrap. Cut each chicken breast in half crosswise to make 2 small pieces of chicken about the same size as the bun (see video below).
  • In a large bowl, buttermilk, paprika, garlic powder, salt & black pepper. Add the chicken to the mix and place in the fridge to marinate up to 24 hours or use right away.
  • Heat oil in a large heavy-duty skillet or pot on medium temperature or until the temperature reaches 350F.
  • In a medium shallow bowl, whisk the flour, cornstarch, and spices. Drizzle 2-3 tablespoons of the buttermilk batter into the flour mixture and mix it through with a fork.Working with 1 piece at a time, dredge chicken the flour mixture and press flour on the top chicken to form a thick crust. Transfer chicken to hot oil and fry for 3-5 minutes per side or until the outside is crispy and golden and the internal temperature reaches 165F.
  • Melt 1 tablespoon butter in a large saucepan and toast buns face down until golden and crisp. Whisk all the ingredients for the mayo in a small bowl and spread a generous layer of mayo on each bun. Top with pickles and chicken. Enjoy hot!

8 pieces fresh frying chicken
1 (6 ounce) bottle louisiana hot sauce (Louisiana brand)
2 teaspoons fine sea salt
1 1/2 teaspoons cayenne pepper
1 teaspoon dry buttermilk (SACO)
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon white pepper
1/2 teaspoon Accent seasoning
1/2 teaspoon ground mustard
1/2 teaspoon superfine sugar
1/4 teaspoon ground cumin
1/4 teaspoon ground dill seed (not dill weed)
1/4 teaspoon sweet paprika
1/4 teaspoon dried chipotle powder
6 large eggs, beaten
1 tablespoon white pepper
1 teaspoon fine salt
1 teaspoon fine sugar
1/2 teaspoon Accent seasoning
3 cups all-purpose flour
beef tallow shortening

Steps:

  • RINSE chicken pieces and blot; PLACE chicken into a 9 x 13 baking dish; COAT chicken well with contents of one 6-ounce bottle original Louisiana Hot Sauce, rubbing sauce well into skin of chicken.
  • MEASURE the all of the SEASONING ingredients into a resealable plastic container; SEAL container and shake well to blend; FUNNEL mixture into an empty, clean salt shaker; SPRINKLE the SEASONING evenly and generously on every side of marinated chicken; RUB mixture well into chicken; ALLOW chicken to marinate in seasoning for at least 2 hours, refrigerated and sealed.
  • BEAT 6 large eggs in a large bowl with 1 tablespoon white pepper, 1 teaspoon fine salt, 1 teaspoon fine sugar, and 1/2 teaspoon Accent seasoning; WHISK mixture in bowl vigorously until smooth.
  • ADD 3 cups all-purpose flour into a medium bowl for the DREDGING.
  • PLACE a cooling rack over a baking sheet and set aside.
  • REMOVE chicken from the marinating dish using tong; (1) DIP chicken into the BATTER until evenly coated; (2) COAT the chicken well in the DREDGING flour; PLACE chicken onto the rack over baking sheet.

  • CAREFULLY lower each piece breaded chicken one at a time, into the deep-fryer basket without crowding (if a standard size home fryer is used, add no more than 2-3 pieces at a time); (if stovetop frying, gently place breaded chicken pieces into hot oil using tongs, turning once halfway through frying duration); FRY for 10 minutes; RAISE frying temperature to 375°F ; CONTINUE frying at the higher temperature for 5 minutes (return frying oil temperature to 315°F for each new batch).

6 lbs chicken pieces
1 teaspoon salt
1/4 teaspoon curry powder (I always add more)
2 teaspoons black pepper
1/2 cup flour
1/4 cup whole wheat flour
1 tablespoon cornmeal
1 teaspoon dry mustard
oil (for frying)

Steps:

  • Soak chicken in cold salted water for an hour.
  • Remove and pat dry.
  • Combine all ingredients in a bowl or bag.
  • Toss in chicken and coat well.
  • Put about an inch of oil in heavy pan .
  • fry chicken for about 10 minutes on each side to brown.
  • Place on a foil lined baking sheet.
  • Bake at 350 F approximatly 25 minutes or until juices run clear.
