1 medium onion, chopped (1/2 cup)
1/3 cup grated Parmesan cheese
1/2 cup Original Bisquick™ mix
1 cup milk
2 eggs
1 can (8 ounces) pizza sauce
1/2 package (3 1/2-ounce size) sliced pepperoni
1/4 cup chopped green bell pepper
3/4 cup shredded mozzarella cheese

Steps:

  • Heat oven to 400°F. Grease 9-inch pie plate. Sprinkle onion and Parmesan cheese in pie plate.
  • Stir Bisquick, milk and eggs until blended. Pour into pie plate. Bake 20 minutes. Spread with pizza sauce; top with remaining ingredients.
  • Bake 10 to 15 minutes or until cheese is light brown. Cool 5 minutes.

Crust:
4 C flour
1 T sugar
1 1/2 t salt
1 1/2 C butter, soft
1 egg, beaten
1 T white vinegar
1/2 C water
Apple Pie:
6 C pared, cored and sliced apples
1 t cinnamon
2 C sugar
4 T butter
3 T flour
3 T milk

Steps:

  • In a lg bowl, sift together flour, sugar and salt. With a pastry blender or two knives, cut in the butter til mixture resembles coarse crumbs. Mix egg, water and vinegar. Add to flour mixture. Mix til dough is moist enough to hold together. Divide dough into 4 egual parts and form disks. Wrap in plastic wrap and refrig til ready to use. (freeze if not using w/in 4 days) Roll out each piece to fit pie plates and fill w/ apple mix and top w/ other rolled out dough. For filling: Preheat oven to 350. Mix apples,flour, sugar and cinnamon. Stir and divide into two pie crusts. Dab each pie filling w/ 2 T butter and 3 T milk before fitting w/ top crust. Bake 40-45 mins

2 thin crust prepared pizza crust
12 ounces pizza sauce
1/2 lb pepperoni
4 ounces Provel cheese (use PROVEL cheese, see Provel Cheese (St. Louis)

Steps:

  • Preheat oven to 460 degrees.
  • Put one of the crusts on the pizza stone in the oven for 4 minutes then remove.
  • On pizza crust, apply 4 oz. of sauce (or how much you want) then add desired amount of pepperoni, and then top with the desired amount of cheese which I add about 4oz or so.
  • Return to pizza to the oven on the stone and bake about 10 minutes or until cheese is all melted.
  • Cut into squares and serve.

Ridiculously Easy Chicago-Style Pizza Pie image

Chicago-style pizza is great, but it can be a pain to make and way too expensive to buy from a restaurant... so I came up with this easy-to-make recipe. The best Chicago pizzas usually feature cornbread crusts, but the pie crusts make a surprisingly tasty substitute! I use this recipe by Dan-Amer #1 for the sausage (http://www.food.com/recipe/homemade-bulk-italian-sausage-chicago-style-329000), but store-bought sausage should work just as well.

1 (9 inch) frozen pie crusts, thawed
1 lb Italian sausage, sliced or crumbled
1 small onion, sliced
4 ounces mushrooms, sliced
1 cup mozzarella cheese, shredded
1/4 cup parmesan cheese, shredded
1 (15 ounce) can pizza sauce
1/2 teaspoon italian seasoning (optional)
2 teaspoons parmesan cheese, grated (optional)

Steps:

  • Preheat oven to 400°F.
  • Bake the pie crust according to your package's directions. I usually prick the bottom and sides of the crust all over with a fork and bake it for 10 minutes, or until it becomes slightly golden. Remove, and set aside.
  • Brown the sausage for about 5 minutes in a large pan over medium-high heat. Add the onion and mushrooms and cook for a further 5 minutes, or until the sausage is cooked and the onions are soft and translucent. Drain of any excess fat. (You can add salt & pepper at this point depending on how salty/spicy your sausage is- I usually don't).
  • Sprinkle the mozzarella and parmesan on the bottom of your pie crust. Top the cheese with the sausage mixture, and spread it out evenly. Next, spread the pizza sauce over the top, making sure the filling is completely covered. Finally, you can sprinkle the Italian seasoning and grated cheese on top, if you wish.
  • Bake for 30 minutes. Let cool for at least 5 minutes before serving.
