It is delicately aromatic and believed to have powerful curative properties. 2 garlic heads (about 10 cloves/head)4-6 fresh sage leaves2 bay leaves1 tbsp (15ml) Extra Virgin Olive Oil2 egg whites (or whole eggs)1/2 tbsp salt1/2 tbsp freshly ground black pepper2 slices of rustic bread (ie. Pain de Campagne)1/4 cup (25g) grated Gruyère cheese

Steps:

  • Step 1 - Peel the garlic cloves. In a pot, bring 1 liter of water to a boil. Dump in the whole garlic cloves, sage and bay leaves. Simmer for about 15 minutes (lid off), until the garlic has softened.
  • Step 2 - With a slotted spoon, remove the garlic cloves from the water and place them in a bowl. Mash them using the back of a fork until you reach a paste consistency. Mix in 1 tablespoon (15ml) of Extra Virgin Olive Oil.
  • Return the garlic to the broth, and reduce for 15 more minutes. Pass the broth through a fine-meshed strainer and return it to the pot. Bring to a low simmer again.
  • Step 3 - Place egg whites in a small bowl and whisk with a fork to loosen (if using whole eggs, whisk them until blended). Slowly pour the beaten egg whites (or eggs) into the simmering broth, whisking them with a fork as you pour. Do not stop whisking until the eggs are cooked and appear as stringy egg drops. Taste and adjust seasoning if needed. Turn off the heat.
  • Step 4 - Divide the cheese evenly onto the 2 slices of bread and pass them under the broiler for 1-2 minutes until the cheese is melted.
  • For serving, pour the Aïgo Boulido into each bowl and top with a slice of bread.

1 broiler/fryer chicken (3 to 4 pounds)
1 can (14-1/2 ounces) chicken broth
1-3/4 teaspoons kosher salt, divided
1 pound carrots, coarsely chopped
6 celery ribs, coarsely chopped
1/2 cup coarsely chopped sweet onion
2 garlic cloves, minced
1/4 teaspoon white pepper
1/4 cup minced fresh parsley
MATZO BALLS:
2 eggs
2 tablespoons canola oil
1 package (5 ounces) matzo ball mix
1/4 cup finely chopped onion

Steps:

  • Place chicken in a large soup kettle; add the broth, 1 teaspoon kosher salt and enough water to cover the chicken. Bring to a boil. Reduce heat; simmer for 55-65 minutes or until meat is tender, skimming the surface as foam rises., Remove chicken and set aside until cool enough to handle. Strain broth and skim fat. Return broth to the kettle; add the carrots, celery, onion, garlic, pepper and remaining salt. Bring to a boil. Reduce heat; simmer for 15 minutes or until carrots are tender., Meanwhile, in a small bowl, whisk eggs and oil. Add matzo ball mix and onion; toss with a fork until combined. Cover and refrigerate for 15 minutes., Remove and discard skin and bones from chicken; chop chicken and add to soup. Stir in parsley. Bring to a boil. Drop 12 rounded teaspoonfuls of matzo ball dough into boiling soup. Reduce heat; cover and simmer for 20-25 minutes or until a toothpick inserted into a matzo ball comes out clean (do not lift cover while simmering)., With a slotted spoon, carefully remove matzo balls and place one in each soup bowl. Ladle soup over top.

Do not be intimidated by the amount of garlic in this fragrant, creamy soup. The bulk of the garlic is slow cooked first in oil and then with broth to bring out the sweetness and downplay the sharpness of raw garlic. A touch of bread and sour cream adds body and richness and lightly fried sliced garlic, as a garnish, adds a final crisp touch of garlic flavor.

1/4 cup extra-virgin olive oil
2 small heads garlic, smashed and peeled, plus 3 cloves, thinly sliced
1 small onion, chopped
1 cup dry white wine
2 sprigs thyme
1 bay leaf
Kosher salt and freshly ground pepper
1 piece Parmesan cheese rind, plus 1/2 cup grated Parmesan
2 cups cubed day-old crusty bread
1/3 cup sour cream
Fresh dill, for topping

Steps:

  • Heat 1 tablespoon olive oil in a medium saucepan over medium heat. Add the smashed garlic and onion and cook, stirring, until soft and lightly golden, about 8 minutes. Add the wine, thyme, bay leaf, 1/2 teaspoon salt, pepper to taste and the cheese rind. Bring to a simmer and cook until reduced by half, about 5 minutes. Add 5 cups water, reduce the heat to low and bring to a gentle simmer; cook until the garlic is very soft, about 30 minutes. Remove from the heat, add the bread and let soak, 10 minutes.
  • Remove the thyme, bay leaf and cheese rind from the saucepan; stir in the grated cheese, sour cream and 1/2 teaspoon salt. Transfer the soup to a blender in batches and puree until smooth. Season with salt and pepper.
  • Combine the remaining 3 tablespoons olive oil, the sliced garlic and a pinch of salt in a skillet over low heat; cook until the garlic is golden and crisp, 12 to 15 minutes.
  • Divide the soup among bowls. Top with the fried garlic, some of the garlic oil, and dill.

1 large head garlic
5 cups water
1 Turkish bay leaf or 1/2 California bay leaf
2 fresh thyme sprigs
5 large egg yolks
3/4 cup freshly grated Parmesan (about 1 1/2 ounces)
3 tablespoons extra-virgin olive oil
1/4 loaf country-style bread

Steps:

  • Separate garlic head into cloves. Smash cloves with flat side of a heavy knife and peel them. In a 2-quart saucepan bring water, garlic, bay leaf, and thyme to a boil and simmer, covered, 45 minutes.
  • Discard bay leaf and thyme sprigs and force mixture through a sieve into another saucepan. In a large bowl whisk together yolks, Parmesan, and 2 tablespoons oil until combined well. Add 1/2 cup hot garlic broth to yolk mixture in a slow stream, whisking, and whisk yolk mixture into remaining hot garlic broth. Cook soup over moderately low heat, whisking constantly, until slightly thickened and a thermometer registers 170°F. (do not let boil), about 10 minutes.
  • Tear bread into pieces and divide among 4 soup bowls. Ladle soup over bread and drizzle with remaining tablespoon oil.

Just had to post this wonderful recipe. My brother always told me his wife couldn't boil water if her life depended on it. We came from a family where every female loved to cook. My poor baby brother married someone who had never cooked. Boy did he enjoy family dinners, lol...... Anyways, I wrote this recipe on a piece of paper for my SIL as a joke and recently her and my dearly departed brother's daughter, my niece, gave me the little piece of paper I wrote it on. In memory of my baby brother, here is my recipe for boiled water :)

Steps:

  • Place water in large enough pot to hold 3 cups without boiling over.
  • Add ice cubes.
  • Turn burner on high.
  • Do not watch pot or it will take forever.
  • Do not leave unatended or you will burn the house down.
  • Bring to a boil.
  • Remove pot from burner.
  • Turn burner off.
  • Use immediately or you will have to repeat recipe.

It's very soft, and the fragrances of the herbed broth and fruity olive oil help the tender bread sop and cheese slip right down to comfort a tight stomach.

4 -12 slices French bread, thin slices of day-old (1 to 3 per person, depending on size they should fill the bottom surface of the soup plate you are u)
4 tablespoons olive oil
4 cups water
salt
24 garlic cloves, sliced lengthwise
2 bay leaves
1 sprig sage (if you use dried sage, tie 1 teaspoon of it in a cheesecloth bag so you can easily remove it from th)
gruyere cheese, grated for garnish

Steps:

  • Brush the bread slices with olive oil and toast in a 350 degree oven until dry, about 10 minutes. Set aside.
  • In a large saucepan, combine the water, salt, garlic, bay leaves, and sage.
  • Bring to a boil over high heat, reduce the heat to medium low, cover, and cook for 20 minutes or until the garlic is very soft.
  • Remove the bay leaves and sage sprig, and puree the soup in a blender.
  • Pour it back into the pan, cover, and let steep until you are ready to serve it, at least 10 minutes.
  • Heat your soup plates in the oven for a few minutes, then layer their bottoms with the toasted bread slices.
  • Sprinkle the toast with the cheese, then with any remaining olive oil.
  • Reheat the soup to a boil, ladle it over the toast, and serve immediately.
