Time 2h45m

Yield Ten servings

Number Of Ingredients 17

1 6-pound lean boneless shoulder of beef
3/4 pound carrots, scraped and cut into 2-inch lengths
12 or more small white onions, about 3/4 pound, peeled
3/4 pound white turnips, peeled and quartered (or cut into 1/8's, depending on size)
4 whole cloves garlic, peeled
1 sprig fresh rosemary or 1 teaspoon dried
2 sprigs fresh thyme or 1 teaspoon dried
2 bay leaves
6 sprigs fresh parsley
1/4 teaspoon grated nutmeg
1 bottle red Burgundy wine (or a hearty Cotes du Rhone)
Salt and freshly ground pepper to taste
1/2 pound lean salt pork, cut into thin slices
4 tablespoons vegetable oil
1/3 cup flour
1 tablespoon butter
3/4 pound mushrooms, thinly sliced

Steps:

  • Cut the meat into one-and-one-half-inch cubes.
  • Place the meat in a deep bowl and add the carrots, onions, turnips, garlic, rosemary, thyme, bay leaves, parsley, nutmeg, wine, salt and pepper. Cover and let stand overnight in the refrigerator, stirring occasionally.
  • Preheat the oven to 375 degrees.
  • Drain the meat, vegetables and herbs, but reserve the marinating liquid. Separate the meat and vegetables. Tie the herbs in cheesecloth.
  • Drop the salt pork slices into cold water and bring to a boil. Blanch for three minutes and drain.
  • In a heavy, wide and deep casserole or Dutch oven, heat the vegetable oil and add the meat, pork slices, onions and garlic. Stir and cook over high heat for about 15 minutes.
  • Sprinkle the meat with flour and stir thoroughly so that the flour coats the meat and other ingredients. Add the marinating liquid and stir. Add the herbs in cheesecloth, then the carrots. Cover and bring to a boil on top of the stove. Place the casserole in the preheated oven.
  • Heat the butter in a saucepan and add the sliced mushrooms. Cook until lightly browned. Add them to the stew. Cook about 45 minutes and add the turnips. Continue baking about one hour longer. The total baking time once the kettle is placed in the oven is two hours.
  • Remove the casserole and uncover. Carefully spoon off and discard all the fat from the top of the stew. Serve hot with the potato puree (see recipe).

BOEUF A LA BOURGUIGNONNE

Boeuf a La Bourguignonne image

Beef Stew with Pearl Onions, Bacon and Mushrooms. Once familiar with French food, you become aware how simple it really is and this dish is a prime example of a simple, but sensational dish. The technique for cooking this stew is braising. The cooking liquid will impart a good bit of flavor to the sauce. The traditional liquid for this dish is red wine, but other regions of France may use white wine, tomatoes, cider or even water, along with vegetables more plentifully grown in that region. We love to make this dish for company because the leftovers are even better, reheated. This dish is excellent made 1 day in advance, covered, and refrigerated. Reheat over low heat. Prep time does not include marinating time. Adapted from the Take-Out Menu cookbook, posted for ZWT5.

Time 3h

Yield 6 serving(s)

Number Of Ingredients 15

3 1/2 lbs beef chuck roast, cut into 1 1/2-inch chunks
2 1/4 cups dry red wine
2 medium onions, chopped
2 carrots, peeled and cut into 1-inch sections
1 stalk celery, cut into 1-inch sections
3 garlic cloves, smashed
bouquet garni (1 bay leaf and 3 sprigs flat leaf parsley, tied together with a piece of string)
salt & freshly ground black pepper
8 slices thick-cut bacon, diced
1 cup beef stock
5 tablespoons unsalted butter
2 cups white pearl onions, blanched & peeled (or frozen pearl onions)
1/2 lb cremini mushroom, quartered (or button)
1 tablespoon all-purpose flour
1/4 cup fresh flat-leaf parsley, chopped

Steps:

  • In a large bowl, combine the beef, 2 cups of wine, the chopped onions, carrots, celery, garlic and bouquet garni. Marinate at room temperature for at least 2 hours, or up to 12 hours in the refrigerator.
  • Strain the meat and vegetables from the wine, reserving the wine. Separate the meat from the vegetables. Pat the meat dry and season with salt and pepper.
  • Heat a large heavy pot over medium heat and add the bacon. Cook until crispy and brown, then transfer the bacon to paper towels to drain.
  • Slowly add the marinated beef to the hot bacon fat. Don't crowd the pan or the meat won't brown. Depending on the size of the pan, you may want to brown the meat in two or three batches. Let the meat brown on one side before turning it.
  • Once all the meat is browned, return it to the pan, add the marinated vegetables, reserved wine marinade, and beef stock. Bring the mixture to a simmer, cover, and turn the heat to low. Check the pot after about 5 minutes to make sure that it isn't simmering too high. You want a little bubble every few seconds, but not a boil. Cook for about 2 hours, or until the meat is very tender when pierced with the point of a knife.
  • Meanwhile, heat a saute pan over medium heat. Add 3 tablespoons of the butter, the pearl onions, and a pinch of salt and pepper. Brown the onions, giving them a toss every now and then to keep them from burning.
  • After 5 minutes, add the mushrooms and continue to cook until they are soft, about 5 minutes more. Add the remaining 1/4 cup wine and cook until no liquid remains in the pan, about 1 minute. Set aside.
  • When the stew is done, strain the meat and vegetables, being sure to reserve the liquid. Cool the meat and vegetables, cover with plastic wrap and set aside. Pick out the bouquet garni and discard. Return the liquid to the pan and heat over medium heat until it boils, then cook down until about 1 1/2 cups of liquid remains, about 10 minutes. Season with salt and pepper.
  • Mix the flour and remaining 2 tablespoons of butter together with a fork, then whisk into the simmering sauce. The sauce will thicken and become velvety. Return the meat and vegetables to the pot and add the mushroom-onion mixture along with the bacon. Heat the stew to a simmer to reheat all the ingredients.
  • Sprinkle the parsley over the stew and serve hot directly from the pot.
  • Note: In this recipe, use a wine that you might be drinking with this dish. Typically the French would use a Burgundy wine (pinot noir) in this recipe but feel free to use a merlot, zinfandel, Syrah, or Shiraz. They all work just fine.

STOVETOP BEEF BURGUNDY (BOEUF À LA BOURGUIGNONNE )

STOVETOP BEEF BURGUNDY (BOEUF À LA BOURGUIGNONNE ) image

Categories     Soup/Stew     Beef     Stew     Quick & Easy     Wheat/Gluten-Free     Dinner

Yield 8 servings

Number Of Ingredients 11

1 pound stew meat, pre-cubed.
1 bottle of cabernet, merlot, or burgundy red wine. (I usually employ the "if I were a rich man" variety, meaning that "if I were a rich man" I would never drink something that cheap. I don't drink wine with this stew, because the wine I use is so low quality.)
Two to three parsnips (giant, white carrots).
One tiny can of tomato paste (of which you will use about a tablespoon).
One potato.
1 medium onion.
1 green pepper.
1/4 teaspoon of garlic powder, or a teaspoon of chopped garlic cloves.
Two cans of pre-cooked mushroom bits and pieces (or use your preferred variety and quantity. This stew cooks long and slow on the stovetop, so there's time for the mushrooms to cook.)
Olive Oil.
Salt to taste.

Steps:

  • Clean and chop onion, parsnips, and green pepper. Put parsnips in a little water in a microwave safe dish, and cook until they begin to become tender in your microwave. (This speeds preparation.) Bake one, medium potato in microwave, let it cool, and remove the skin, then chop into small cubes, mash, and set aside. (You will eventually want this to break up entirely in the stew to thicken it when you add it at end, so mashing the cubes with a fork is a good idea before adding it to stew.) Introduce olive oil and stew beef into a large stew pot on stovetop on medium heat and begin to brown beef on the outside. Add onion and green pepper strips and cook until onion begins to soften. Add mushrooms, and wait until mushrooms begins to soften (if you aren't using pre-cooked mushrooms from a can), then add entire bottle of wine to stew pot. Turn the heat down to medium low. Add partially cooked parsnips, and put a lid on this. Let it slow cook until beef becomes tender, stirring occassionally. This may take up to an hour or so. (Stew meat will remain tough unless slow cooked over a low heat for a long time. If slow cooked long enough, it will become very tende.) When you are near the end, add garlic and salt to taste. When beef is done, Add your mashed potato and stir it into stew until it disappears. This should thicken the stew via the potato starch. At the very end, add about a tablespoon of tomato paste. (Use more or less to your taste. If you add more tomato paste, you can add "Italien" to the end of the French name). Bon Appe'tit!
