I love the Boca "ground beef," so when I found this recipe I just had to post it. It's nothing fancy; just a quick fix for when you need to put something on the table fast! Since the original recipe only stated "1 small can kidney beans" and didn't even specify the amount of spices, I am going to try it soon, and make any changes if needed. I hope it all turns out!

2 (12 ounce) packets frozen boca vegetarian ground beef
2 (14 1/2 ounce) cans Mexican-style tomatoes
1 small onion, chopped
1 (14 ounce) can kidney beans
1/2 teaspoon cumin
1/2 teaspoon chili powder
salt and pepper, to taste

Steps:

  • Spray frying pan with nonstick cooking spray.
  • Heat pan, saute onion, and add ground Boca when onions start to brown.
  • Saute Boca and onions.
  • Season to taste with cumin, onion powder, salt, pepper, chili powder.
  • Add stewed tomatoes and continue to cook over a medium flame for about 8 minutes.
  • Add the kidney beans for the last three minutes or until heated through.

These are an easy throw together comfort food for me. You can add shredded cheddar to the top if you want It is a low-fat. delicious dinner and could easily please a "meat eater"!

3 bell peppers (red or green)
1 small onion, chopped
1 teaspoon chopped garlic
1/8 tablespoon olive oil
1 (14 1/2 ounce) can stewed tomatoes
1 1/2 cups frozen soy crumbles (I use Boca Brand)
1 cup cooked brown rice (I use Uncle Bens ready made)
3 -4 tablespoons ketchup
1 -2 tablespoon mustard

Steps:

  • Sauté onions and garlic in oil until soft.
  • Meanwhile, cut peppers lengthwise and clean out seeds & membrane.
  • Add undrained tomatoes, boca crumbles and rice to softened onion mixture. Simmer until well combined. Add ketchup and mustard **NOTE** Add more or less depending on how thick/thin sauce is. It should be just thick enough to remain in peppers. Play with it and add it to taste!
  • Put pepper shells in a 13x9 and spoon mixture into peppers and cook covered with foil for 1 to 1 1/2 hours at 350°F or until peppers are soft.

This is one of my own recipes, and one that I'm particularly proud of. It's not very spicy, so you can alter the spices as you like. This is great served with corn bread, and the leftovers make great nachos! I'm the only vegetarian in the family, but everyone else loves it!

1 (12 ounce) bag Morningstar Farms Meal Starters Grillers recipe crumbles
1 (15 ounce) can black beans (do not drain)
1 (15 ounce) can red kidney beans, drained and rinsed
1 (15 ounce) can white kidney beans, drained and rinsed
1 (15 ounce) can pinto beans, drained and rinsed
1 (16 ounce) can vegetarian baked beans
1 (11 ounce) can tomato puree
1 (4 ounce) can diced green chilies
1 cup frozen corn
1 yellow sweet onion, chopped
2 garlic cloves, minced
4 teaspoons chili powder
1 tablespoon cumin
1 tablespoon dried oregano
1 tablespoon dried basil

Steps:

  • In the crock pot, stir garlic, chili powder, cumin, oregano, and basil into the tomato puree; this ensures the even distribution of spices.
  • Add the beans, corn, chilies, crumbles, and the onion to the crock pot; stir to combine.
  • Cook for 6 hours on low.

I made this tonight, it was pretty good. This is how I made it. It turned out a little sweet so just add the syrup or the sugar unless you like it sweet. I think it was still good. Try it and tell me what you think.

4 vegan burgers (boca burgers)
1 onion (quartered and sliced)
3 garlic cloves (sliced)
1 tablespoon olive oil
1 (15 ounce) can chicken broth or 1 (15 ounce) can vegetable stock
2 (15 7/8 ounce) cans black-eyed peas
1 (15 ounce) can corn
1 (28 ounce) can diced tomatoes
1 1/2 cups tomato juice (11.5oz can)
1/2 teaspoon cumin
2 teaspoons chili powder
1/4 teaspoon coriander
1/4 teaspoon paprika (I use smoked)
1 teaspoon hot sauce
1/2 tablespoon sugar
1/4 teaspoon thyme
1 teaspoon maple syrup

Steps:

  • Add oil to the pan, then add the burgers, cook till you can break them apart with a spatula.
  • Then add the garlic and onion, cook till soft adding more if needed.
  • Add the rest of the ingredients.
  • Cook for 20-30 minutes, or until thickened.

BOCA CHILLI CRUMBLE RECIPE

Number Of Ingredients 7

12 oz. bag Boca Crumbles. (3 cups)
3 cups spaghetti sauce -
1/2 cup water
1 can black beans, drained and rinced
Handful chopped cilantro
2 TBS chili powder
Red paper flakes to taste

Steps:

  • Place frozen crumbles in medium size pot. Stir in spaghetti sauce and heat until crumbles have thawed, about 5-10 minutes. Add water if mixture is too thick and stir. Heat until mixture starts to boil, lower heat, cover and simmer for 10 minutes. Add cilantro, chili powder and pepper flakes. Stir, cover and simmer another 10 minutes. Add the drained black beans. Stir, cover and simmer 5 minutes. Serve over rice or pasta. For a real low carb and calorie count serve with Sharitake noodles.
