EASY TACO SOUP
Dinner ready in under 30 minutes! This easy taco soup recipe is packed full of beef and veggies. The best Mexican soup you can serve your family!

Steps:
- In a large saucepan or dutch oven, cook the beef, onion and garlic until meat is completely browned. Then drain off any fat.
- Add the stock, tomatoes, beans, corn, picante sauce, pasta, green pepper, and seasonings.
- Bring to a boil and stir occasionally.
- Reduce heat; cover and simmer for 10-15 minutes or until pasta is tender. Garnish with cheese and tortilla chips.
- After the mix comes to a boil, reduce the heat to low, cover and simmer for about 10 minutes. The soup is done when the pasta is tender.
- Top with sour cream, cheese or tortilla chips.

EASY TACO SOUP WITH GROUND BEEF
A few pantry canned ingredients add big flavor to this weeknight taco soup. Tomato sauce adds body, but jarred salsa will do in a pinch.

Steps:
- Add beef, onion, and garlic to a 4- to 6-quart Dutch oven. Cook over medium heat, stirring and breaking up lumps, until meat is browned and onion is tender, 5 to 7 minutes.
- Stir in diced tomatoes, corn, beans, tomato sauce, beef broth, green chiles, chili powder, and cumin. Bring to a boil; reduce heat to low. Simmer, covered, about 20 minutes.
- Serve soup topped with Cheddar cheese, sour cream, crushed chips, jalapeño slices, and/or black pepper.

Steps:
- 1. Brown the ground beef then add the onion and Jalapeno. Cook until softened. Add the tomatoes, kidney beans, chilies, Ranch Dressing, Stir until heated through.
- 2. Cook the pasta and stir into the soup.
- 3. Serve with a dollop of Sour Cream.
