This is another recipe from Paula Deen's show on Food Network. I've tried both and both recipes are delicious and just a little bit different. It calls for her "House Seasoning" which I added to the recipe.

1 (3 ounce) package cream cheese, room temperature
1 cup sharp cheddar cheese, grated
1 cup monterey jack cheese, grated
1/2 cup mayonnaise
1 teaspoon onion, grated (optional)
1 (4 ounce) jar pimiento, chopped
salt, to taste
cracked pepper

Steps:

  • Using an electric mixer, beat cream cheese until smooth and fluffy.
  • Add all of the remaining ingredients and beat until well blended.
  • It can be used as a dip or for a sandwich filling.

1 (3 ounce) package cream cheese, softened
1 cup grated sharp cheddar cheese
1 cup grated monterey jack cheese
1/2 cup mayonnaise
2 -3 tablespoons pimientos, minced
1 teaspoon grated onions or 1 teaspoon equivalent dried onion
cracked black pepper
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder

Steps:

  • Beat cream cheese until smooth and fluffy.
  • Add rest of the ingredientss and mix well.

This Southern classic is adapted from a recipe by Paula Deen, the television chef, cookbook author and restaurateur, but pimento cheese has long been indispensable for parties, gatherings and afternoon feasts. The heat from the garlic powder and grated onion cuts through the creaminess of the cheese and mayonnaise, and the pimentos give it an unforgettable punch. Serve it with celery, or spread on your favorite crackers or sandwich bread. It's a creamy, cheesy crowd-pleaser.

3 ounces cream cheese, at room temperature
1 cup packed, coarsely grated extra-sharp Cheddar cheese
1 cup packed, coarsely grated Monterey Jack cheese
1/2 cup mayonnaise, or more to taste
1/8 teaspoon garlic powder
3 tablespoons minced pimentos (sweet pickled red or cherry peppers)
1 teaspoon grated onion
Salt and freshly ground black pepper.

Steps:

  • Using an electric mixer, beat cream cheese until smooth and fluffy. Add remaining ingredients and beat until well blended. Add more mayonnaise as needed to make mixture hold together. Add salt and pepper to taste (it should be quite peppery) and use as a sandwich spread or a filling for celery sticks. Can be refrigerated up to 3 days.

PIMIENTO CHEESE-BACON BURGER



Pimiento Cheese-Bacon Burger image

1 cup mayonnaise
1/2 teaspoon cayenne powder
Kosher salt and freshly ground black pepper
1 cup drained and finely diced roasted red peppers
12 ounces extra-sharp white Cheddar, coarsely grated
12 ounces extra-sharp yellow Cheddar, coarsely grated
1 1/2 pounds ground chuck (80/20 percent)
2 tablespoons canola oil
4 hamburger buns, split and toasted
8 slices double-smoked bacon, cooked until crisp
4 slices Vidalia or other sweet onion, grilled
4 thin slices ripe beefsteak tomato
1 large dill pickle, thinly sliced
Romaine lettuce leaves, optional

Steps:

  • Whisk the mayonnaise, cayenne, 1/2 teaspoon salt and 1/2 teaspoon black pepper in a large bowl. Add the red peppers, white Cheddar and yellow Cheddar and gently fold until combined. Cover the bowl and refrigerate for at least 30 minutes before using.
  • Meanwhile, preheat the grill to high for direct grilling. Divide the ground chuck into four equal portions, 6 ounces each. Form each portion into a 3/4-inch burger and make a deep depression in the center with your thumb. Brush both sides of the burgers with the oil and sprinkle liberally with salt and pepper. Grill the burgers until golden brown and slightly charred on both sides and cooked to desired doneness, about 4 minutes each side for medium doneness. During the last minute of cooking, place a dollop of the cheese mixture on top of each burger and close the grill lid. Cook until the cheese has just melted, about 1 minute.
  • Place the burgers on the buns and top with the bacon, onions, tomatoes, pickles and lettuce if desired.
